Out-of-this-World Corn Dip

corn

(7 oz) can chopped green chiles

(6 oz)can chopped jalapeno peppers

onion

mayonnaise

sour cream

pepper

garlic powder

(16 ounce) package shredded sharp cheddar cheese

corn chips

In a large bowl, mix all ingredients except chips.

Chill two hours to overnight. Serve with Frito Scoops corn chips.

Out-Of-This-World Corn Dip

A quick and easy Mexican Corn Dip Recipe made with cream cheese, jalapeños, red bell pepper, and more! Serve it alongside Fritos, tortilla chips, or even vegetables!

Mexican Corn Dip Recipe With Cream Cheese and Jalapeños

cream cheese, room temperature ((equals 4-ounces))

lime

Kosher salt

white or black pepper

whole-kernel sweet corn, drained

Cheddar cheese

green onions

red bell pepper

cilantro

In a medium-sized mixing bowl, combine the cream cheese, mayonnaise, sour cream, lime juice, salt, garlic powder, and pepper. Use a handheld mixer on medium-high speed to blend until the mixture comes completely together and is smooth in texture.

Add the remaining ingredients and stir until evenly coated in the sauce. Serve right away or refrigerate until ready to serve.

Mexican Corn Dip For One

butter

corn ((use frozen and thawed corn corn

jalapeños

cotija cheese

Melt butter in a 10-inch skillet over medium-high heat. Add the corn and chopped jalapeños and cook, stirring occasionally until slightly charred, about 8 to 10 minutes.

Transfer the corn to a medium-sized bowl and add minced garlic, lime juice, mayonnaise, chili powder, crumbled cotija cheese, and cilantro. Stir to combine.

Transfer the corn dip to a small bowl and enjoy with tortilla chips.

The flavor of this corn salsa recipe are INCREDIBLE: it's a mix of sweet, salty, sour (just a little from the lime) and a spicy (just a hint from the jalapeno).
You can make this recipe with canned corn or fresh corn and serve it as a dip for chips, stand-alone side dish, or topping for chicken, fish, or salads.

Combine all ingredients in a large bowl and stir to mix. 

Taste and make adjustments as preferred (add more salt, pepper or lime juice to taste). 

For best flavors, cover and refrigerate for at least 20 minutes before serving (this allows the salsa to marinate). Stir once more before serving.

Preheat

Blend

In a high powered blender or mixer, combine cream cheese, sour cream, garlic, hot sauce, lime juice, and 1 cup of the shredded cheese. Blend until fully combined.

Stir

Scoop the cream cheese mixture into a large bowl and add the remaining one cup cheese, the corn, feta, pepper, onion, and cilantro. Stir to combine.

Pour

Pour mixture into a prepared baking dish. Sprinkle with more cheese if desired.

Bake

Bake for 15-20 minutes or until cheese is hot and bubbly. Garnish with more cilantro, feta, and hot sauce.

Slow Cooker Corn Dip

pepper Jack cheese (shredded)

Colby Jack cheese (shredded)

hot sauce (optional)

To your slow cooker add all the ingredients and mix thoroughly. Cook on HIGH for 2 Hours or LOW for 4 hours, or until the dip is hot and bubbling. Stir occasionally.

Add toppings if desired and serve with tortilla chips, enjoy!

Preheat oven to 350 degrees F. Coat an 8x8 casserole dish with non-stick cooking spray; set aside.

In a medium bowl, whisk together the sour cream, mayonnaise, garlic powder, and black pepper until combined. Add in the Jalapeño peppers, diced chiles, sweet corn, and cheese; stir to combine until incorporated. Transfer to the prepared dish.

Place in the oven and cook for 20-25 minutes until warm throughout and cheese is nice and bubbly.

Serve right away with tortilla chips and enjoy!

Cheesy Hot Corn Dip

250 g (½lb) cream cheese (room temperature)

mozzarella (grated)

cheddar cheese (grated)

Parmesan cheese (grated)

garlic

½ tsp chilli flakes

jalapeno (finely chopped)

tbsp chives (finely chopped)

oregano

½ tsp pepper

salt (to taste)

Preheat the oven to 180°C/350°F.

Start by combining the corn, room temperature cream cheese, grated cheeses, jalapeño, garlic, chilli and herbs.

Season to taste with salt and pepper in a large bowl. Stir until mixed.

Transfer the dip mixture to a baking dish or skillet then top with a little extra grated mozzarella. 

Place the dip in the oven and allow to bake for 15 minutes until golden brown and bubbling.

Remove from the oven and allow to cool for 10 minutes. Garnish with fresh cilantro/coriander and sliced jalapenos.

Serve the hot corn dip with corn chips, tortilla chips or slices of baguette.

Corn Dip With Cream Cheese Recipe

corn (frozen)

bacon

oz green chilies ((Two 4-oz cans))

pepperjack cheese (shredded)

cheddar cheese (shredded)

oz cream cheese (cubed)

parmesan cheese

tbsp cilantro (finely chopped, for topping)

In a 6-quart slow cooker, combine the corn, bacon, chiles, sour cream, pepperjack, cheddar, cream and Parmesan cheese. Stir, cover and cook on low heat for 2 hours, stirring once or twice throughout.

Cook on high heat for an additional 30 minutes and transfer to a serving dish. Sprinkle with cilantro. Serve warm as a side dish or serve with chips or crackers as an appetizer!

¾ cup greek yogurt (plain)

Lightly grease one pie plate or baking dish.

Mix together all ingredients and add to your dish. 1 can diced green chiles, 1 can jalapenos, 1 can fiesta corn, 1  cup mexican cheese, ¾ cup cottage cheese, ¾ cup greek yogurt

Bake at 350 degrees for 20 minutes.

Brown the top of the dip for 2 minutes on the broil setting. Watch the oven, though–it goes from brown to burned quickly!

Serve with tortilla chips or veggies.

We make this every holiday season and people always ask for the recipe!

So this was a good recipe but not great. I too found it more liquidity then I was supposed to be according to the recipe . I used full fat everything and correct measurements. I thoroughly drained the corn and used a paper towel to soak up anything extra. I think strained chunky salsa and Fage plain yogurt and an even thicker cottage cheese would have been better. Additionally , roasting the corn would add depth. I would also add black olives and thinly sliced scallions. I find the key to great recipes are depth of flavor.
