Easy Corn Pudding

eggs ((room temperature))

butter

white sugar

half and half

cornstarch

vanilla extract

nutmeg

white shoepeg whole kernel corn, drained ((1 can))

cream-style corn ((2 cans))

Preheat oven to 400 Degrees fahrenheit.

Spray a flat 9x13 baking pan with cooking spray.

In a large bowl, lightly beat eggs. Add melted butter and sugar.

In a small bowl, whisk together the milk and cornstarch until smooth.

Stir the cornstarch/milk mixture into the egg mixture.

Add the vanilla extract and dash of nutmeg.

Stir in the drained corn and creamed corn. Blend well.

Pour mixture into prepared baking pan.

Bake for 40-50 minutes or until the top is browned and the center is set.

White Cheddar Baked Corn

tbsp. all-purpose flour

c. milk (preferably whole)

(8-oz.) block cream cheese,

c. shredded white cheddar, divided

As the recipe stands it is tasty, but not over the top. I have made it a few times now with a couple of my own tweaks. The first is I use 6 cups of frozen corn kernels (no fresh cob corn available at the time) as the sauce to corn ratio was too much for me. Second, I let the mixture simmer for 10 minutes after adding the milk and before the cheese. I think this allows the flour to bloom more, reduces the liquid, and improves the thickening. I have also used smoked white cheddar and added some chopped poblano peppers which adds a nice dimension.

While the flavor was good with all that white cheddar, the final result was nothing like your video -- it was more like soup, with far too much liquid. I might try it again with less milk.

After heading the warnings below I put light cream in (only 3/4 cup) and not milk. I didn’t follow the recipe steps perfectly but it seems to have set nicely. Thanksgiving potluck side so TBD if it’s a fan favorite. Overall, tastes good, but yes the recipe above is a bit deceiving on size and consistency.

I tried it this weekend and it was a hit! The bacon adds a savory flavor to it that makes it stand out from other corn casseroles. Everyone wanted the recipe so keep copies on hand.

Followed recipe except used chili powder instead of paprika. I made two batches hopeful to use the next day at a get together. We were not super impressed, just  not creamy like the video made it seem. With that being said I did not  want  to waste the second batch so we added the other half of cream cheese. (making it 8 oz.) This made a huge difference. Will be making again with the added cream cheese. We might try jalapeños or green chilies next time as stated in other reviews.

My whole family loved it. I used half white corn and half yellow and my family loved it even more. So yummy and so easy to make!

This Cowboy Corn Casserole Is The Ultimate Summer Side

Creamy corn casserole is a comforting side dish that is creamy, savory, slightly sweet, and filling — a classic and traditional Thanksgiving holiday side.

Corn Casserole

cup all-purpose flour

yellow cornmeal

sugar

baking powder

salt

(15 oz.) can whole corn kernels, drained

(15 oz.) can creamed corn (or 2 cups thawed frozen corn)

eggs, beaten

cup heavy cream

cup sour cream

tablespoons avocado oil (or melted butter)

In a large mixing bowl, make the corn muffin mix by combining flour, cornmeal, sugar, baking powder, and salt. Whisk together until evenly distributed and set aside.

In a medium mixing bowl, whisk well to combine the wet ingredients including canned corn kernels, creamed corn, eggs, heavy cream, sour cream, and oil.

Pour the wet mixture into the corn muffin mix and mix well using a rubber spatula until smooth and no dry ingredients are visible.

Pour the batter into a 9x13-inch casserole dish and bake for 55-60 minutes until golden brown and fully set. A toothpick inserted into the center should come out clean. Optionally, sprinkle the corn casserole with cheddar cheese and bake for another 10-15 minutes until the melted cheese is bubbly.

Let cool for 10 minutes and serve warm or at room temperature.

water

lime Jello ((6 ounces))

cream cheese ((softened))

7up soda

Dream Whip ((prepared according to package directions))

crushed pineapple, drained ((1 small can))

Heat the water to boiling in the microwave or on the stovetop.

Dissolve the jello in the boiling water. Stir well.

Add the softened cream cheese to the hot Jello. Use a hand mixer to mix until the cream cheese has melted in.

Add the 7up and stir.

Chill for 60-90 minutes or until partially set.

Prepare Dream Whip according to the package directions.

Mix the Dream Whip into the Jello.

Stir in the drained pineapple.

Pour into a 3 quart baking dish and chill until firm (at least 3 hours, depending on pan size and depth).

Top with whipped cream and a cherry when serving.

7UP LIME JELLO SALAD RECIPE

Here's a classic combo of corn, bell peppers, and tomatoes, Creole style. Make it when there's a bumper crop of fresh corn; and it's also a great choice for a Thanksgiving side dish.

Creole Corn Maque Choux

olive oil

onion

celery (finely diced)

red bell pepper (finely diced)

green bell pepper (diced)

white flour

corn kernels

tomatoes

unsweetened nondairy milk

parsley

basil

fresh thyme leaves (or 1/4 teaspoon dried)

Salt and cayenne pepper

Heat the oil  in a large skillet. Add the onion and sauté over medium-low heat until golden.

Add the celery and bell peppers and continue to sauté until all the vegetables are just tender, stirring occasionally. Sprinkle in the flour, stirring it in until it disappears.

Add the corn kernels, tomatoes, and nondairy milk to the skillet. Cook uncovered for 5 to 7 minutes, or until everything is well heated through and the tomatoes have softened a bit.

Dissolve the flour in just enough water to make it smooth and flowing. Stir it into the skillet and stir until the liquid in the skillet thickens.

Season with salt and cayenne pepper. Remove from the heat and serve straight from the skillet, or transfer to a serving dish for the table.

(12 ounces frozen corn)

green bell pepper (chopped)

In a large skillet heat oil over medium heat, add oil, onions and bell peppers.&nbsp;

Cook until onion is clear. Stir in garlic and cook for about 1 minute.&nbsp;

Add in corn. Season to taste with salt and pepper, and cayenne, if desired. Cook 1 to 2 minutes.&nbsp;

Pour in cream or half and half, bring to a boil, reduce heat and simmer until cream reduces and slightly thickens, about 5 minutes.

Add your butter into the Instant Pot and select saute. Let the butter melt then dump in your 3 cups of frozen corn and let them cook for around 3 minutes, stirring to prevent burning.

Now toss in your diced onion and jalapeno and cook for another minute or until the onion is fragrant. 

Next, you want to add in the canned cream corn, water, garlic, paprika, chili powder, garlic powder, cumin, salt, and pepper. Stir the mixture. Turn on the pressure cooker place the lid to seal and cook for 2 minutes on high pressure. Quick-release the pressure cooker when done. 

Stir in your cream cheese until it is all melted.

Spoon the mixture into a serving bowl and top with lime juice, Cotija cheese, cilantro or parsley for added color. Give it a quick toss and serve!

Add diced onion along with a couple large pinches of salt and pepper. Cook, stirring frequently for 5 minutes. Reduce heat to medium low if the butter is sputtering too much or if the onions start to turn brown.

Add garlic and cook, stirring frequently for 1 minute.

Add flour and cook, stirring frequently for 1 minute.

Slowly stir in whole milk along with a couple large pinches of salt and pepper until mixture becomes smooth and creamy. Cook over medium to medium low heat for about 3 minutes, stirring frequently, until the milk is warmed through a bit.

Add about 2/3 of the shredded cheese, reduce heat to low stirring until melted and the sauce begins to thicken.

Stir in frozen corn along with a few large pinches of salt and pepper.

Transfer the mixture to a small greased baking dish and cover with remaining cheese.

Bake uncovered at 400 degrees for 10 minutes.

Then add crushed crackers and bake for another 5 minute.

Broil for 1-2 minutes until the crackers get dark golden brown. 

Let cool just a few minutes, garnish with chives, and then dig in and enjoy!
