Charro Beans is an authentic Mexican recipe that is mainly consumed in the northern part of Mexico and is commonly served alongside carne asada.

Charro Beans - Authentic Mexican Recipe

oz pinto beans

bacon

beef

chorizo

tomatoes (diced)

cilantro (chopped)

onion (diced)

jalapeño (if desired)

peppers

garlic (chopped)

pepper (oregano, paprika, cumin, and salt to taste.)

Add the rinsed beans to a large pot with plenty of water, salt, and a small piece of onion.

Let boil for about 1.5 hours, checking often to make sure that there is still enough water.

To Cook the Pinto Beans - Stove top

Add the rinsed beans to a slow cooker with plenty of water, salt, and a small piece of onion.

Turn the slow cooker on to high and heat for 3 hours.

To Cook the Pinto Beans - Slow Cooker

Add the bacon to a large pot and cook for about 5 minutes.

Add the chorizo and continue cooking until cooked through.

After about 5 minutes, add the ham, the beef franks, and the seasonings (including the garlic).

Next, add the tomatoes, the cilantro, the onion, the jalapeno, and the chipotle pepper and cook for 5 additional minutes.

Finally, add the cooked pinto beans and the water that they were cooked in and let boil for about 15 minutes so that all of the flavors can combine.

If you want to thicken your charro beans, you can combine 2 tablespoons of corn starch with 1/4 cup of cold water and mix well before adding it to the pot.

Serve hot as a side dish or on its own.

To Make The Charro Beans

Hearty and full of flavor, these Cowboy Beans are the perfect potluck or BBQ dish!

Cowboy Beans

bacon (divided)

onion

kidney beans (16 ounces each, drained and rinsed)

pinto beans (16 ounces, drained and rinsed)

great northern beans (16 ounces, drained and rinsed)

pork and beans (16 ounces)

tomato sauce

brown sugar

barbecue sauce (plus 2 tablespoons for topping)

ketchup

cider vinegar

yellow mustard

chili powder

salt & pepper (or to taste)

Preheat oven to 350°F.

Set half of the uncooked bacon aside for topping. Cook the remaining half of the bacon over medium heat until crisp. Remove with a slotted spoon and set aside. Drain all fat except 1 tablespoon. Crumble bacon.

Add ground beef and onion to the same pan and cook over medium heat until no pink remains, drain any fat.

Combine all ingredients in a 9x13 pan and mix well. Top with remaining uncooked bacon and brush bacon with remaining bbq sauce.

Bake uncovered 45-50 minutes or until bacon is crisp.

Prepare recipe as above except cook all bacon until crisp. Set half of the crisp bacon aside for topping.

Combine all remaining ingredients and place in a 6qt slow cooker.

Cover and cook on high 2-3 hours or on low 4-5 hours.

Top with reserved bacon before serving.

Preheat oven.

In a heavy bottom, oven safe pot with a lid, add ground beef, onion, bell pepper, garlic salt, and onion powder. Cook until the hamburger is no longer pink.

In a 4 quart, heavy bottom, oven-safe pot (like a Dutch oven) over medium heat, add ground beef, onion, bell pepper, garlic salt, and onion powder. Cook until the hamburger is no longer pink. Drain the excess liquid.

Add cooked bacon, brown sugar, baked beans, barbecue sauce, and mustard. Stir.

Add cooked bacon crumbles, brown sugar, baked beans, barbecue sauce, and dijon mustard. Stir to incorporate all ingredients.

Cover pot and bake for an hour.

Cover and bake for 1 hour. (When done, the beans should be hot and bubbly and thickened.) Serve warm.

Cowboy Baked Beans (aka Calico Beans) are loaded with ground beef and applewood smoked bacon. A great party food recipe for large groups.

Cowboy Baked Beans Recipe (Oven or Slow Cooker)

lb bacon (applewood smoked)

garlic (minced)

beans ((don't drain))

kidney beans ((drain))

cannellini beans ((drain))

black beans ((drain))

apple cider vinegar

Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.

Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!

Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don&#39;t remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.

Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.

Next, add 3 cans of baked beans (don&#39;t drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).

Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.

Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn&#39;t all fit in one standard 9 x 13, you need a deeper dish.

Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

In a large skillet, cook the ground beef and onions until the meat is no longer pink; drain.

Cook for 4 hours on high or 8 hours on low.

In a large cast iron skillet, fry bacon until crisp. Drain and crumble.

In the same cast iron skillet, cook the ground beef and onions until the meat is no longer pink, drain off excess liquid.

Drain off all the beans except for one can of pork and beans, Combine the beans, cooked beef, bacon, and onions and remaining ingredients.

Cook on grill until hot and beans are tender.  Optional: Cook in oven on 350 until beans are cooked well if grill not available.

lb/454 grams dried pinto beans

yellow onion, diced

water

better than bouillon no chicken vegetarian soup base (vegan)

10 oz can chopped tomatoes

cilantro, chopped

cumin, ground

Ancho Chili powder

oregano

salt and pepper to taste (if needed)

Add pinto beans to a large heat proof bowl and cover with boilng water from the kettle. Set aside for at least 15 minutes while you prep other ingredients. Drain and rinse WELL with cold water.

Set the saute function of your instant pot for 5 minutes and add in the onions, oil and a pinch of salt and pepper. Saute.

Once done stir in garlic and add water, bouillon, drained beans and rest of ingredients. Close lid and set valve to 'sealing' position. Push bean/chili button and set for 60 minutes or use pressure cooker button and set for same time on high pressure.

When time is up let pressure naturally release for 10 minutes then turn valve to venting. Once pin has dropped remove lid. Stir &amp; taste for seasons add salt/pepper if needed. Enjoy! Looks very authentic (and we lived in AZ for decades). I like to soak beans overnight as I find they are easier for us to digest. How long would you recommend cooking the fully soaked beans? Thanks!

So good! I’ve made this twice already this week! I didn’t have ancho chili powder so threw a couple of chipotle peppers in sauce in with the beans. Yum!

These beans came out so good! I soaked them 8 hours and then followed the recipe but cut the cooking time in the instant pot back to 45 minutes. The only other change I made was to use Imagine brand vegetable broth because I couldn’t find the no chicken version of Better than Bouillon.

What do you recommend doing differently if using canned pinto beans? I was thinking of just simmering on the stove with the other ingredients so they don’t get too soft in the instapot.

Preheat oven to 350 degrees.  In a large dutch oven or heavy bottom pot add the bacon and cook until crisp.  Remove with a slotted spoon.

Leave some bacon grease in the bottom and add the onion.  Cook until almost tender.

Add in the garlic and ground beef and cook and crumble ground beef until no longer pink.  Drain excess grease.

Add in cooked bacon, chili powder, salt, pepper, pork and beans, cannellini beans, kidney beans, barbecue sauce, ketchup, brown sugar, yellow mustard, Worcestershire, apple cider vinegar, and stir just until incorporated.

Bake in the oven for 45 minutes.

Holy cow - these are good!  But the recipe makes way more than 4 servings.  I mean, after all, 5 cans of beans and a pound of hamburger, etc will feed a large group and then some.  Luckily it freezes well.

Used this as my main dish and it was delicious can’t wait to make again but am I able to freeze leftovers? Made a good amount so I have plenty of leftovers.

Preheat the oven to 350 degrees F.

Heat a large dutch oven over medium high heat on the stove top.

Add the bacon to the pan and cook until crispy.

Remove the bacon from the pan and drain off most of the bacon grease.  Leave a small amount in the pan to brown the onion in. Roughly chop the bacon.

Add in the diced onion and cook over medium heat until tender.

Add in the ground beef and minced garlic.  Cook for 5-7 minutes, breaking up the beef as it cooks, until the beef is no longer pink and cooked through.

Drain off any excess grease.  Turn off the heat.

Stir in the chopped bacon, chili powder, salt, pepper, all the beans, barbecue sauce, ketchup, brown sugar, dijon mustard and worcestershire sauce until combined.

Transfer the dutch oven to the oven and bake, uncovered, for 45 minutes.

Remove from heat, serve warm and enjoy!
