This Keto Egg Roll in a Bowl or AKA “Crack Slaw” is a quick and healthy dinner made in about 20 minutes! This delicious one-pot meal has the flavors of a classic Chinese Eggroll without the added carbs. 

Easy Keto Egg Roll in a Bowl "Crack Slaw"

lb pork

coleslaw mix

tbsp sesame oil

ginger

tsp garlic

tbsp coconut aminos

scallions

Start by chopping your scallions, and mince the garlic. Set aside. 

Measure out 1 tablespoon of ginger paste. Or if you are using a fresh ginger root, then using a box grater grate the ginger. 

In a large frying pan add the ground pork and the minced garlic and saute on medium high heat. It should only take a few minutes to cook. 

Once the meat is cooked add the ginger and stir. Then add the coleslaw mix and combine. Cook for a couple of minutes, then turn the heat off. 

Pour the coconut aminos and sesame oil and stir. Top with the chopped scallions. 

I love this recipe, it super easy and very tasty!   Next time I make it I will use more cabbage and ginger, and toasted sesame oil instead of regular.

Spam Egg Roll Bowl

Spam (I use 25% low sodium)

oz Shredded Cabbage

tbsp Butter

tbsp Gluten Free Soy Sauce (or Coconut Aminos)

tbsp Sesame Oil

tsp Dry Minced Onions

tsp Dry Minced Garlic

Sliced Scallions

tbsp Sriracha

Sunny Side Up Egg

tsp Sesame Seeds

slice Spam into 1/4 inch strips and crisp on all sides in a pan with butter ( about 4-5 Minutes) Remove spam from the pan leaving as much of the rendered fat as possible, set spam aside

add Shredded cabbage to the pan, saute for about 2 minutes then add garlic, onion, sesame oil and gluten free soy sauce. Contine to cook for about 2 more minutes then fold the spam back into the pan.

Garnish with, a sunny side up egg, sriracha, sesame seeds and scallions. (optional)

beef

(16-ounce package) coleslaw mix

carrots

Tablespoon oil

onion (, chopped)

garlic (, minced)

Tablespoons soy sauce ((or Coconut Aminos))

Tablespoon rice vinegar ((or apple cider vinegar))

Sriracha ((or to taste))

green onions

sesame seeds

Place a large wok or skillet on the stove over medium heat.

Add oil. Add onions and saute for about 3 - 5 minutes.

Add minced garlic and minced fresh ginger and cook for about one minute, stirring the whole time.

Add the ground beef to the onions, garlic, and ginger.

Cook the ground beef until brown and no longer pink and juices run clear.

Empty the bag of coleslaw mix (shredded cabbage) and shredded carrots to the ground beef.

Cook the coleslaw (shredded cabbage and carrots) with the ground beef until the cabbage is wilted and carrots are softened.

Pour in the soy sauce, vinegar, and sriracha and stir.

Garnish the dish with chopped green onions, more sriracha, and sesame seeds. Serve hot!

white vinegar

white sugar OR splenda

salt

In a large skillet, fry the ground beef until cooked and no longer pink. Drain and return to the stove.

Push the ground beef to the side and add the sesame seed oil in the space. Add in the garlic and fry for 2-3 minutes, then mix into the ground beef.

Add in the coleslaw mix. Drizzle with sriracha, vinegar, soy sauce and sprinkle with the sugar, salt and pepper. Fry for another 5 minutes until the cabbage is wilted to your liking.

Plate, then sprinkle with the toasted sesame seed and green onions.
