When I celebrate Easter or Mother's Day I like to make a special dessert recipe for the family. On Mother's Day I always try to make something extra special for all the Mamma's in the family.

Cheesecake Lemon Curd Berry Crescent Bars

oz cream cheese (room temp)

butter (room temp)

vanilla extract

sugar

lemon curd

Cans roll package of Original Pillsbury Crescent Rolls (Refrigerated Crescent Rolls)

Preheat

Beat

In a large bowl beat the cream cheese until smooth.

Cream

Add the butter and beat until combined with the cream cheese.

Add the vanilla extract and egg to the bowl. Beat on high for 1 minute.

Scrape the bowl and add half of the powdered sugar. Beat on low until the sugar is mostly combined, scrape the bowl then add the remaining powdered sugar. Again begin beating on low until the powdered sugar has been mixed in with the other ingredients.

Increase

Increase the speed to high and beat until the cheese cake filling is light and fluffy, about 2 minutes.

Line

Set filling aside while preparing the baking pan by lining it with parchment paper.

Remove

Remove one roll of the Pillsbury Crescent rolls from the refrigerator.

Open

Open the package and carefully begin to unroll the sheet of crescent rolls keeping it intact as you lay it into the bottom of a baking pan or on a cookie sheet that has been lined with parchment paper.

Press

Press the center seam together and arrange it so it forms a rectangle.

Spread

Spread the cheese cake filling to within a 1/4 inch of the edges.

Fill

Gently spread the lemon curd over the cheesecake filling.

Arrange

Cover

Remove the remaining crescent roll from the fridge, open and carefully unroll it over the top of the pan covering the filling. Pull and tuck it over the bottom crescent roll pressing down on the edges.

Bake

Bake 22-25 minutes in the preheated oven, turning the pan once.

Chill

Remove from the oven and allow to come to room temperature. Chill in the refrigerator at least one hour.

Dust

Before cutting sift powdered sugar over the top then cut into bars.

Garnish

For each serving place a dollop of lemon curd in the center and top with fresh berries.

Preheat oven to 350°. Line a large baking sheet with parchment paper.

Separate crescent dough into triangles. Top each triangle with an even layer of pepperoni then place a halved mozzarella stick on the wider end of the triangle and roll it up. Transfer crescents to the prepared baking sheet.

Brush each crescent with olive oil then sprinkle with oregano and Parmesan. Bake until the crescents are golden and the cheese has melted, about 15 minutes.

Turkey Cranberry Crescent Ring

oz tube crescent rolls

oz chive and onion cream cheese (softened)

Dijon mustard

tsp finely chopped fresh rosemary or thyme (divided)

Gruyere cheese (May use Swiss or Monterey Jack) (divided)

14 oz can whole berry cranberry sauce

poppy seeds

Preheat oven to 375°F. Line a large baking sheet with parchment or a silicone baking mat.

Separate the crescent rolls. Arrange on parchment paper in a circle with widest portion on the inside, edges overlapping.

In a small bowl, whisk together cream cheese, Dijon and 1 tsp rosemary. Mix well then spread on widest portion of crescent rolls. Sprinkle with 1 cup shredded cheese.

Arrange turkey over cheese, overlapping. Spread with 1/2 cranberry sauce. Reserve the remainder for serving. Top with remaining cheese.

Bring narrow end of crescent dough over filling and tuck into place. In a small bowl. mix together melted butter, poppy seeds, garlic and salt. Brush on top and sides of crescent dough, turkey and cheese.

Bake for 22-24 minutes until golden. Rest on pan for 5 minutes.

Sprinkle with reserved 1 1/2 tsp rosemary. slice and serve with remaining cranberry sauce on the side.

Chicken Bacon Ranch Crescent Bombs

8 oz tubes crescent rolls

oz cream cheese (softened)

mayonnaise

oz package dry Ranch salad dressing mix

chicken

cheddar cheese

bacon (cooked and finely chopped or crumbled)

green onion (finely chopped)

Tbsp Parmesan cheese

Preheat oven to 350°F. Spray 16 wells of two 12 cup muffin pans with cooking spray.

Unroll crescent rolls and separate at perforations into 16 triangles. Press one piece into each cup of prepared muffins pans leaving 3 pointed edges free. 16 total.

In a mixing bowl using an electric mixer, whip together cream cheese, mayonnaise and dry ranch dressing mix for 2 minutes until fully combined.

Mix in chicken, cheese, bacon and green onion by hand.

Divide filling evenly among crescent rolls. Bring pointed edges together and pinch to close.

Brush the tops with butter and sprinkle with Parmesan cheese.

Bake for 18-20 minutes or until golden. Cool in pan 2 minutes, then remove to platter and serve.

Add the olive oil to a skillet over medium heat. Add the sliced peppers and onions, along with the salt, pepper, oregano and garlic powder, cooking for 10-12 minutes until they have softened.

Add the chopped roast beef and stir to combine.

Separate the crescent rolls and then fill each triangle with about 2 tablespoons of the meat and pepper filling and then top with mozzarella cheese.

Roll up the crescent roll starting with the wide end and tucking in any filling that leaks out. Set on a baking sheet and repeat with the remaining rolls.

Bake for 15 minutes and serve whole or cut into slices.

Preheat the oven to 375°F. Spray a large baking pan (either a deep dish pie plate or an 11x7 inch pan) with cooking spray and set aside.

Melt the butter in a large skillet over medium high heat. Add the onion, celery, carrots, and peas, and cook until the vegetables are tender, about 5-7 minutes. Add in the garlic and cook for 1 minute more until nice and fragrant. Add the chicken and stir everything well.

Sprinkle the flour over the top of the chicken and vegetables and stir until everything is evenly coated. Cook for 2 more minutes, then add the chicken broth to the pan. Stir constantly for 2-3 more minutes until the mixture starts to thicken. Season with the thyme, parsley, seasoned salt, poultry seasoning, garlic powder, and some pepper to taste. Stir in the heavy cream and cook for 2-3 more minutes until nice and thick. Pour into the prepared baking pan.

Spread the crescent rolls over the top of the filling. Place in the oven and bake for 12-15 minutes until crescent roll dough is golden brown on top and cooked through. Let it cool slightly before serving. Enjoy!

This is absolutely DELICIOUS and easy especially if you get all ingredients chopped and prepped ahead and then throw it together when you're ready.  Using Sam's or Costco rotisserie chicken is cheap, easy and tasty!  I used 1 pkg. of crescent rolls on the bottom and par-baked for 10 mins. (We like a lot of crust). Leftovers are just as good and it makes a large portion! (There are only 2 of us)
