Cucumber Tomato Salad

cucumber

tomatoes (diced)

½ red onion (sliced)

herbs

olive oil

red wine vinegar

salt & pepper (to taste)

Combine all ingredients in a bowl and toss well.

Refrigerate at least 20 minutes before serving.

This healthy Mediterranean Salad recipe makes  a flavorful, crunchy salad. This salad is packed with cucumber, tomatoes, riced cauliflower, and feta cheese. Our recipe makes an easy and fool-proof summer salad for all occasions. This fresh salad is also suitable those following a low-carb, keto, diabetic, Banting, or vegetarian diet.

Mediterranean Salad (Keto Friendly)

riced cauliflower (fresh

cucumbers (coarsely chopped)

red onion (chopped finely)

tomatoes (coarsely chopped)

feta cheese (crumbled)

kalamata olives (pitted)

Tbsp red wine vinegar

lemon juice

oregano

garlic (crushed)

salt and pepper

Add the 1 tbsp olive oil to a medium pan over low heat. Then add the cauliflower and stir frequently until cooked through, about 5 minutes. Remove from heat and let cool completely before adding to the salad.

Cauliflower Mixture

 Combine cucumbers, red onion, and tomatoes in a large bowl and toss until combined.

The Salad Mixture

Combine the olive oil, vinegar, sweetener, lemon juice, oregano, garlic, and salt and pepper in a small bowl and whisk until thoroughly combined.

In a large bowl, combine the riced cauliflower, the salad mixture, and the dressing and toss together. Finally, add the olives and feta cheese and toss until thoroughly incorporated. Store in the fridge until serving. Flavor is best with at least an hour for the salad to marinate before serving.

Dressing

This cucumber tomato salad is full of fresh sliced cucumbers, cherry tomatoes, red onion and green peppers, all tossed in an herb dressing. The perfect light and refreshing side dish for any summer meal!

green bell pepper (cored, seeded and diced)

Dijon mustard

Place the cucumbers, cherry tomatoes, red onion, bell pepper and herbs in a large bowl.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, pepper and oregano.

Pour the dressing over the vegetables. Toss gently to coat. Serve.

Cucumber Tomato Avocado Salad

English cucumber (quartered lengthwise and sliced)

cherry tomatoes (about 2 cups)

avocados

feta cheese (divided)

cilantro (or dill)

lime juice (from about 2 small limes)

honey

garlic (about 1 teaspoon)

salt

black pepper

Soak

Place the sliced red onions in a small bowl and cover them with cold water (this helps remove some of the onions’ harsh bite).

In a small bowl or large measuring cup, whisk together the dressing ingredients: Lime juice, olive oil, honey, garlic, salt, and pepper.

In a very large bowl, place the cucumbers, tomatoes, avocado, half of the feta, and cilantro. Drain the red onion, then add it to the bowl. Pour the dressing over the top, then stir very gently to combine. Sprinkle the remaining feta over the top. Enjoy immediately or cover the bowl with plastic wrap and refrigerate for up to 4 hours. Give the mixture a gentle stir just before serving.

The Best Greek Salad Recipe

balsamic vinegar

feta brine (*see note)

fresh dill, chopped

sea salt

lemon

bell peppers, chopped

cucumber,

cherry

red onion, thinly sliced

feta cheese, crumbled or cut into small pieces (*see note)

½ cup of pitted black kalamata olives

To make the dressing, whisk the olive oil, red wine vinegar, balsamic vinegar, feta brine, dill, oregano, sea salt, garlic, and lemon juice in a medium-sized bowl.

Cut all the veggies so that they are roughly the same size. Add the bell peppers, cucumber, cherry tomatoes, red onion, feta cheese, and olives to a large bowl. Pour the dressing over the top and toss to coat.

Fantastic. I too, could never get excited about Greek salad. An overestimate in how many cukes I needed to pickle led me to this recipe. Delicious. And as fortune would have it my daughter had brought me a sampling of  olive oils from Vancouver. This is so very delicious!

This has become a staple at our house. It really is delicious,  but dressing is somewhat overly vinegary. So, I've begun increasing the oil to at least 50% more, if not double. This makes it perfect for us. It is so quick and easy to make. We put lotsa feta in and increase herbs a bit to compensate for extra oil. You can't go wrong with this Greek salad.

Best Greek Salad Recipe

This healthy Mediterranean Cucumber Tomato Salad with feta cheese and pickled red onions takes minutes to make and is the perfect vegetarian summer side dish!

Cucumber Tomato Salad with Feta

sugar (or honey)

red onion

cucumbers (medium sized)

cherry tomatoes

feta cheese

parsley (chopped, or other herbs

In a small bowl, mix together the red wine vinegar (2 tablespoons), sugar (1 teaspoon), kosher salt (1/2 teaspoon), and black pepper (1/4 teaspoon). Add the sliced red onions and stir to coat. Allow to sit for 5-10 minutes, stirring once or twice.

While you let the onions sit: cut the ends off the cucumber, slice in half lengthwise, and scoop out the seeds with a spoon. Discard the seeds and slice the cucumber thinly, about 1/4&quot; thick. Add to a large bowl. (And if you prefer, you can peel the cucumber before cutting it.)

Cut the cherry tomatoes in half and add to the large bowl as well.

If your feta cheese isn&#x27;t already crumbled, use a fork to crumble it and add it to the large bowl.

Drizzle the olive oil (1/4 cup) into the small bowl with the onions, add the chopped fresh parsley (2 tablespoons) or other herbs, and mix together.

Pour the onion mixture into the large bowl with the remaining ingredients and toss to coat. Serve immediately for best results.

Thanks for posting this. Was looking for a no oil recipe of this classic and this worked great. Only recommendation would be to eat that same day, or remove dressing for leftovers as it gets over saturated over night.

Rinse
