Gluten-Free Blondies (dairy-free, nut-free options)

(110 g) toasted and cooled nuts,

(115 g) dark

GF vanilla extract

(80 g) sweet white rice flour flour

(25 g) GF oat flour ((or try teff, buckwheat, or almond flour))

(15 g) tapioca flour

baking powder

fine sea salt

Position a rack in the center of the oven and preheat to 375ºF. Line an 8x8-inch baking pan with parchment on the bottom and sides.

In a large bowl, whisk together the egg and sugar. Whisk in the melted butter or oil and vanilla.

Sift in the flours, baking powder, and fine salt and stir until just combined.

Stir in the chocolate and nuts (if using).

Spread the batter in the prepared pan and top with more hazelnuts, chocolate, and a few pinches of flaky salt. It will seem like not enough batter, but it will puff up as it bakes.

Bake until a toothpick inserted near the center comes out with moist crumbs, 18-22 min. Take care not to overbake.

Cool until warm or room temperature. Slice into bars and devour!

Preheat oven to 350 degrees F. 

In a large bowl, add all ingredients and combine well.

Scoop out equal size amounts (it makes 6-8 depending on your size) and shape into a flat cookie shape about 1/2 inch thick.

Place on a parchment lined baking sheet and bake for 10 minutes. 

Remove from oven, let cool and serve.

Preheat oven to 350°F (177 °C). 

Line a baking sheet with parchment paper. Set aside.

In a large bowl, add vegan butter and sugar and beat until creamed together (about 2-3 minutes). Scrape down the sides if needed. 

Add in milk and both extracts and mix just until combined. 

Add in flour and salt and use a spatula to combine.

Scoop out the dough and roll into a ball, about a tablespoon size.  Use your thumb or the back of a 1/4 measuring teaspoon to make an indent into the cookie. 

Place on parchment paper and repeat with remaining dough.  

Bake cookies 11-13 minutes or until very lightly golden brown.

Remove and let cool for 5 minutes. Then remove to a cooling rack. 

Fill cookies with jam or other desired topping (see post for ideas).  

Let cool completely before serving or storing in an air tight container.

Flourless Peanut Butter Cookies

Preheat the oven to 350ºF. Add all of the ingredients to a bowl and stir until it forms a cohesive dough. It should be firm enough to pull away from the sides of the bowl. If the dough is still too soft, add a tablespoon or two more of powdered sugar to further firm up the dough.

Divide the cookie dough into twelve pieces. Roll each piece into a ball then flatten it slightly. Place the cookies on a parchment-lined baking sheet and then use a fork to create a corss hatch pattern on the top of the cookie.

Bake the cookies for 12 minutes in the preheated oven. After baking, allow them to cool for about five minutes on the baking sheet, or until they&#39;re firm enough to lift with a spatula.

Transfer the cookies to a wire rack to cool completely, then serve and enjoy.

Preheat the oven to 350° F/177° C.  Place parchment paper on a baking sheet.  Set aside. 

In a large bowl, whisk together sugar, oil, milk, and vanilla until smooth. 

Next, add in your flour, cocoa powder, baking powder, baking soda, and salt.  Stir with a spatula until it&#039;s completely combined. 

Add powdered sugar to a smaller bowl.

Scoop out tablespoon size balls of dough. Roll each ball very thoroughly into the powdered sugar. 

Place on parchment lined baking sheet about 2 inches apart as they will spread while cooking.  *DO NOT PRESS DOWN. 

Bake for 10 to 13 minutes. It&#x27;s okay if still slightly soft in the center. 

Allow to cool on the baking sheet for 5 minutes. The transfer to a cooling rack.

Preheat oven to 350 degrees with the oven racks in the upper and lower third. Line 2 cookie sheets with parchment paper.

Combine all ingredients in a medium size mixing bowl. Stir to combine.

Use a medium size cookie scoop to scoop out the dough (1.5 tablespoon size balls). Put 9 cookies per sheet. Use a fork to make cross hatches on top of the dough.

Bake for 8-10 minutes, until the edges are set and the centers are slightly puffed up. Rotate the cookie sheets half way thru baking. Cool on the cookie sheet for 5 minutes before eating.

Leftovers will keep in an airtight container for 1 week.

In a large bowl, combine the oats, flour, cinnamon, baking powder, salt, and vanilla powder. Add the raisins or chocolate and the sliced almonds if you're using them.

In a smaller dish, whisk together the coconut oil, honey, milk, and ginger.

Add the honey mixture to the dry ingredients and stir to incorporate. If it seems too thin let it sit for five minutes to thicken up a little before shaping the cookies.

Prep

Scoop

Preheat oven to 375° F. Line a large baking sheet with parchment paper.

In a large bowl, sift together the flour, baking soda, and salt.

In a separate large bowl, cream the butter with the granulated sugar, brown sugar, and vanilla extract using a hand mixer or stand mixer. Add eggs, one at a time, beating well after each addition.

Working in 3 batches, add the flour mixture to the wet ingredients, combine after each addition.
