This is my Buddy’s go to deer jerky recipe every year after we harvest a couple bucks during hunting season. He was nice enough to give me the recipe to share with you guys, so I named it after him. Jimmy’s Teriyaki Deer Jerky!

Jimmy's Teriyaki Deer Jerky

lb Venison Roast

Allegro Teriyaki Marinade

tbsp Mesquite Liquid Smoke

(Prague

tsp Garlic Powder

tbsp Fresh Cracked Black Pepper

Trim all visible fat from the venison and place in freezer for an hour or two to partially freeze.

While the meat is in the freezer, combine all the ingredients in a bowl or ziplock bag and mix well.

Remove the meat from the freezer and slice ¼" strips against the grain for an easy chew. Cut with the grain for a more chewy jerky.

Add sliced venison to the mixture in a ziplock bag or bowl and marinate for 8-24 hours in the refrigerator.

After the meat has finished marinating, remove from refrigerator and strain excess marinade in a colander.

Sprinkle meat evenly with the garlic powder.

Dredge one side of each strip of meat in fresh cracked black pepper if you want a peppery flavor *Optional

Dry with your favorite jerky making method. I used my Excalibur Dehydrator and dried for 2½ hours at 165F &amp; 1 hour at 145F.

The jerky is finished when it bends and cracks, but does not break in half.

Fantastic tasting jerky that is sweet and spicy and is made with local honey, fresh cracked black pepper, and spicy red pepper flakes. This is a must make jerky recipe!

Lay the jerky out on your air fryer trays, don't let the pieces touch. Then cook at 160 degrees for 3-4 hours. Make sure to flip and randomly check, and remove the meat when it is cooked to your texture liking.

Ninja Foodi or Air Fryer Venison Jerky Recipe

Here’s one of my favorite homemade game jerky marinade recipes. It’s asimple blend of soy sauce, teriyaki sauce, hoison sauce, Worcestershire sauce,a splash or two of rice vinegar, honey, granulated garlic powder and a lot ofsmoked crushed serrano chile peppers.

Elk Venison Jerky Marinade

3-5 lbs wild game meat, (thinly sliced)

Mr. Yoshida's teriyaki marinade, ((or other teriyaki sauce))

hoison sauce

tbsp honey

tbsp smoked serrano chile peppers, (crushed)

tbsp rice vinegar

Carefully slice the game meat into thin strips. You can slice the strips with the grain or against the grain to add or decrease the amount of chewiness.

Add all of the ingredients to a sauce pan and heat over low heat stirring to combine. Remove from heat and let cool before pouring over your sliced game meat. Marinate for at least 24 hours – if you can wait that long.
