I received a lot of compliments making this cake/bread. It's so light and moist. I added a generous amount of plump raisins to the batter which I believe elevated it.

For the frosting, I used one stick instead of 2 and nearly twice as much sugar.

Excellent recipe. My family loved it. I used  some mascarpone cheese rather than cream cheese in the frosting and it just took it over the top.

Just made yumm I did not ice it I don&#39;t think it needs it.  Added extra cinnamon an Nutmeg just because I love it.  Will make again.

I've discovered - admittedly by my many viewings of the British Baking Show - that mixing the batter as little as possible makes the bread much lighter and fluffier than mixing too thoroughly. Also using an aluminum baking pan keeps the heat more evenly distributed so the bake doesn't brown too much on the top. This is a great recipe! Thanks for sharing!

I doubled recipe to make 2 big loafs! Amazing taste and texture! I used 3 1/2 cups of flour not the full 4 when I doubled it. Only slight change.

Good recipe for the bread, the frosting was not very good. It was too salty and tastes like pure butter.

Delicious! I omitted the 1/2 cup brown sugar, doubled the carrots and walnuts and skipped the icing. This is my new go to banana bread recipe!

It was ok, but I felt that it could have used more spices and carrots, and even some raisins. Also, I did use a slightly different pan (because it was SO MUCH batter) and even 45 minutes was too long. So I'm not sure about the cooking time. I'd keep an eye on it after 40 minutes, if I were you. 

Also, while I altered my frosting, I did add a Pinch of salt, because everyone saying salt in frosting is gross doesn't seem to understand how salt works. Salt compliments flavours and activates your tongue in a certain way. There's a reason why Ina Garten says to put salt in your oatmeal, and Alton Brown says to put salt in your coffee.

Delicious recipe.  Like others have said, I also cut back on the sugar, ramped up the carrot, substituted walnuts for pecans (just because I didn't have any pecans) and also added a tablespoon of smooth peanut butter.  The resulting loaf is moist and full of flavour with no one ingredient dominating another.  I skipped the frosting, there's no need, but a smear of butter on a slice is delightful.

I doubled the carrots and put half teaspoon extra cinnamon.  Icing recipe measurements are way off so used a different recipe for the icing.

This Carrot Cake Banana Bread Is The Best Of Both Baking Worlds

You MUST try Coconut Lime Monkey Bread! It's sweet, a bit tangy, gooey on the inside, and a golden brown and crispy on the outside! There's more though, it has the most incredible lime glaze that really is like icing on the cake! You can make it and bake right away, or stick it in the fridge overnight and bake in the morning.&nbsp;

Coconut Lime Monkey Bread

Rhodes dinner rolls (frozen)

lime

c. shredded coconut

lime juice

Tbsp butter (room temperature)

tsp coconut extract

Tbsp. milk (if needed for thinning)

lime zest

toasted shredded coconut

Thaw Rhodes rolls only until they are soft enough to cut with scissors. Grease a bundt ban with baking spray.

While rolls are thawing prepare lime sugar. Add sugar, lime zest, and shredded coconut to a shallow dish. Mix to combine. Set aside.

Melt butter in a shallow dish.

Cut rolls in quarters or in half, depending on how small you want each piece of bread to be. Dip each piece of roll in melted butter, then roll in sugar mixture. Place evenly in bundt pan, making sure seams don't line up. If you have extra butter set it aside until rolls have risen.

Cover with greased plastic wrap and let sit at room temperature until doubled in size. Time will vary depending on temperature of the room. Typically around 3-4 hours. Once rolls have risen, remelt remaining butter from the "dipping" process and drizzle it over monkey bread.

Bake at 350 degrees for 30-35 minutes. Check after the first 20 minutes of baking. If rolls are overbrowning they can be covered with aluminum foil for the remainder of baking time.&nbsp;

Let baked monkey bread sit in the bundt pan to cool for 5 minutes. Invert on a serving plate, or platter. Cool for about 5 more minutes. Drizzle with glaze.

If desired garnish with additional toasted coconut and lime zest.&nbsp;

Serve warm.

Make glaze while you are waiting for baked monkey bread to rest.

Whisk all glaze ingredients, except milk together. Glaze tends to have a mind of it's own. If it's too thick add a little milk. If it's too thin, add a little more powedered sugar.

Also made 4 batches for big Sat. afternoon bridal shower today.  Fruit and mint rose to top so we were able to use a beverage dispenser with a spigot., fruit didn’t clog spigot!  Every drop was gone!  Not too over the top on alcohol but sure got everyone into the fun spirit.  Not overly sweet either, used dry Prosecco.  Will make again.

This is AMAZING!!!! We had 5 for brunch and drank it all day long!

This Easter Brunch recipe is the perfect make-ahead casserole &amp; tastes just like a carrot cake!

Easter Breakfast Bake

cream cheese (room temperature)

Leave your bread out for a few hours or place it on a tray at 350˚F for about 8 minutes to slightly dry it out.

In a medium bowl, combine cream cheese mixture ingredients until fluffy.

Grease a 9x13 inch baking dish. Layer half of the bread cubes in the pan. Sprinkle with half of the carrots, pineapple and raisins. Dot with the cream cheese mixture. Top with remaining bread and the other half of the carrots, pineapple, and raisins.

In a bowl, stir together the eggs, milk, brown sugar, and cinnamon. Pour over the casserole, cover with foil and refrigerate overnight.

Remove the casserole from the fridge about 45-60 minutes before baking. Preheat the oven to 350°F.

Mix topping ingredients together in a small bowl. Sprinkle over casserole just before baking.

Bake uncovered 45-55 minutes or until a knife inserted in the center comes out clean and casserole is set.

Cool 15 minutes before serving.

Place box of frozen phyllo dough in the refrigerator for at least 4 hours prior to using. Letting it sit in the refrigerator overnight is best.

Cut bananas into ½ inch coins. Mix banana with brown sugarvanilla extract and salt. In a medium sauté panmelt 1 tablespoon butter over medium heat. Cook the banana mixture for approximately 5 minutesuntil sugar begins to bubble and bananas become softer. Remove the bananas from the heat and place mixture in a medium bowl. Let sit for 5 minutesthen stir in the chocolate morsels to melt. Set aside.

Assembly:Remove phyllo dough from the refrigerator and unroll the dough sheets onto a cool and clean work counter. Be sure that the long side of the dough is closest to you.Leave the sheets in a pileonce they are unrolled. Melt remaining 3 tablespoons butter either on the stove or in a microwave. Place granulated sugar in a small bowl.

Place one sheet of phyllo in front of you and using a pastry brushbrush the sheet with a thin layer of butterand then sprinkle sheet with 2-3 pinches of granulated sugar. Place another sheet of phyllo dough on top of the first one and repeat the butter and sugar steps.

Repeat with two more sheets of phyllountil you have 4 sheets on top of each other. Using a pizza wheel or knife and a rulercut the layered phyllo into 4 stripseach 3 inches wide each. Use the long side of the dough as your guide for cutting. The long side is typically 12 inches long.

Place 2 tablespoons of the banana filling 2 inches below the center line of the dough on each of the 4 dough strips. Starting at the bottom of the dough stripsclosest to youroll the 4 strips into logsone at a timebeing careful not to let the filling spill out. Using careplace strudels onto a parchment lined sheet tray.

Repeat this entire process 1 more timeto create 8 strudel in total. Brush the tops of the strudel with the remaining butterand let strudels chill in the refrigerator at least 30 minutes prior to baking.

Preheat your oven to 350° F. Bake strudel approximately 20-25 minutesuntil phyllo is golden brown and cooked through. Remove sheet tray to cooling rack and let strudels cool 8-10 minutes prior to serving.

Chocolate Chip Ginger Scones

Preheat oven to 425° F. Lightly grease baking sheets.

Combine flourgranulated sugarbaking powderand 1/2 teaspoon salt in a large bowl. Slice butter thinly. Then combine with flour mixtureusing a fork or dough cutteruntil mixture resembles coarse meal.Mix in ginger pieces and morselsthen stir in 1 cup heavy cream. Place dough onto floured work surface and press into a 1-inch-thick round disk.Cut disk into 8 wedges; transfer to baking sheet. Brush tops with heavy cream prior to baking.

Bake for 15-17 minutesuntil edges are golden brown. Cool on wire racks for 10 minutes.

Mix powdered sugar2 tablespoons heavy creamginger and 1/8 teaspoon salt in a small bowl and whisk together. Drizzle over scones prior to enjoying.
