This Low-Carb Blueberry Smoothie may just be the perfect smoothie for a keto breakfast. This smoothie tastes like blueberry cheesecake in a glass. This fast and easy smoothie has some healthy fats, and a touch of protein, and some blueberry anti-oxidants for good measure. It can be part of a low-carb, keto, Atkins, diabetic, gluten-free, or Banting diet.

Low-Carb Blueberry Smoothie

heavy whipping cream

almond milk

cream cheese

granulated stevia/erythritol blend ((Pyure))

blueberries ((Frozen))

scoop collagen peptides ((optional))

vanilla extract

lemon extract

Place all ingredients in a blender.&nbsp;

Close the lid and blend until the berries and ice are crushed and the smoothie has a smooth texture.

Keto Blueberry Lemon Scones (Gluten-Free)

Almond Flour

blueberries

Swerve Confectioners

Baking Powder

sea salt

unsalted butter (melted)

lemon zest

Vanilla Extract

heavy cream (or as needed)

Preheat the oven to 350°F. Line a baking sheet with Parchment Paper.

In a medium bowl, combine the almond flour, Swerve (or erythritol), baking powder, and sea salt.  In a small bowl, whisk together the melted butter, lemon zest, vanilla, and egg.

Stir the wet mixture into the almond flour mixture, pressing with a spoon or spatula, until a uniform dough forms. The dough should be pliable and dense, but not crumbly add a little more butter, a teaspoon at a time, if it’s too dry. Stir and press the blueberries into the dough.

Place the dough onto a baking sheet lined with parchment paper and form a disc shape, about 1 inch thick and 6 inches in diameter. Cut into 8 wedges, like a pie or pizza. Move the pieces about 1 inch apart.

Bake for 18 to 22 minutes, until golden.  Mine took exactly 20 minutes.  Cool completely on the pan to firm up. Scones will fall apart if you move them before cooling.

Mix the 1/4 cup of Swerve, lemon juice and start with 1 teaspoon of the heavy cream, adding more as needed to get the right consistency for the glaze.  Drizzle over the tops and serve.

Keto Blueberry Lemon Scones

Serve a cheeseburger-style carnivore omelette from start to finish in 15 minutes. This dish has to be one of the easiest breakfast recipes ever! However, don’t limit the fun to just the morning hours; enjoy the high-protein and almost zero carb meal any time of the day.

Carnivore Omelette (Cheeseburger Style)

tbsp onion (thinly sliced)

eggs

oz shredded cheese

Saute

Warm the butter in a skillet or frying pan over medium heat. Sauté thinly sliced onion for 2 minutes until translucent.

Cook

Add the ground beef and cook until browned. Break it apart with a spatula as needed.

Remove

Whisk

Pour the eggs into the pan and cook without disturbing until the egg sets. It takes about 3 minutes over medium heat.

Arrange the meat over one-half of the eggs. Sprinkle half of the cheese on top and fold the omelette over. Lower heat, top with remaining cheese, and cover with a lid. Continue cooking until cheese melts completely.

Serve

Remove from heat, arrange on a plate and serve warm.

Keto Ham Frittata

Get a large bowl

In a large bowl, mix together eggs, cream cheese, salt and pepper. 

Add the cheese

Heat the skillet

Heat a medium skillet to medium heat and add avocado oil. 

Add ham and green onions and saute for 2 - 3 minutes or until ham starts to brown. 

Add egg mixture

Add egg mixture to skillet and cook. Use a spatula to stir and scrape the bottom of the skillet until large curds begin to form and the spatula starts to leave wakes but the egg remains wet (2 minutes). Shake the skillet to evenly distribute the eggs. Cook without stirring for 30 seconds to set on the bottom. 

Finish in the oven

Place skillet in the oven and broil until frittata has puffed up and starts to brown on top, about 3 - 4 minutes. Remove from oven and let stand for 5 minutes to finish cooking. Loosen frittata from the skillet and cut into wedges to serve.

Roll into balls

Roll dough into 1/2 to 1 inch balls and place on a parchment lined baking tray, spacing about 1 inch apart. 

Bake at 325 degrees Fahrenheit for 6 minutes.

Dip in butter

Once doughnut bites have cooled to the touch, dip each one in the melted butter. Then dip in a mixture of monk fruit and cinnamon.

Stir the cooked & cooled sausage to the egg mixture. Spread into the casserole dish. Top with remaining ½ cup of shredded cheddar cheese. 

Bake at 350 for 20-28 minutes or until the casserole is golden brown on top and the center is set.
