A single serving for a soft, chewy keto chocolate chip cookie that you can make in minutes. Instructions for air fryer, oven and microwave baking to give a delicious eggless low carb cookie for one.

Keto Chocolate Chip Cookie for One

almond flour

coconut flour

monk fruit

unsalted butter, softened

vanilla

salt

keto approved chocolate chips

In a small bowl, add all the ingredients listed above. Mix together using a fork until combined.

Mold into 1 or 2 cookies. Place in the refrigerator for 5-10 minutes to allow the flavors to meld together and to keep the cookie from spreading while baking.

Place cookie on a parchment lined baking tray and bake at a 350 degrees for 6 minutes or until the edges start to brown. Remove from oven and let cool completely before handling.

Place cookie on a piece of parchment paper and microwave at 100% or high for 45 seconds. Let cookie cool completely before handling.

Place cookie on the pre-greased air fryer grilling tray. Bake at 350-360 degrees for 6 minutes. Let cookie cool completely before handling.

How to make Keto Chocolate Chip Cookie for One.

Keto Lemon Bars are one of those refreshing cookie-like low carb desserts.  Sweet and tart, but with a cookie, too! This dessert is low carb and a real treat.

Keto Lemon Bars

½ cup low carb sweetener

butter

eggs

low carb sweetener POWDERED

lemon juice

lemon

tsp xanthan gum

tbsp butter (cut up in small pieces)

tsp gelatin (unflavored)

tbsp low carb sweetener (POWDERED)

Preheat the oven to 350°. Line a 8”x8” square baking pan with a piece of parchment paper.

In a medium bowl mix together almond and coconut flour along with the low carb sweetener, salt and melted butter.  Stir all ingredients together with a fork and combine until crumbly.

Press crust mixture into the bottom of your 8x8” pan and place in 350* oven.  Bake the crust for 10 minutes and then remove to cool on the counter.

Fill a medium saucepan with 2 inches of water and place over medium heat.  Water should be at a rapid simmer.

Choose a large heat safe bowl that will fit on top of the saucepan to create a double boiler.

First place eggs, low carb sweetener, lemon juice in the bowl before you put on the double boiler. Then place the bowl on top of the saucepan over the rapidly simmering water.

Using a wire whisk continuously whisk the eggs, sweetener and lemon juice together. Turn the heat to high and continuous whisk for 10 full minutes.  Whisking should be continuous, but not rigorous.

At 10 full minutes of whisking your curd should be thickening up.  At this point, continue to whisk and test the thickness of the curd by coating the back of a spoon. Every stove top is a little different, so you may or may not need 1-3 more minutes.

When the curd has thickened, remove from the bowl from heat and carefully set on the countertop. Still using the wire whisk, stir in the xanthan gum. Add the butter pieces and stir in until melted.

Sprinkle in the unflavored gelatin while continuously stirring the lemon curd until fully combined.  Pour lemon mixture on top of the cooled crust and smooth with the back of a spoon to evenly distribute the lemon over the crust.

Bake for 20-25 minutes at 350*.  Remove pan from the oven and let cool on the counter at least 30 minutes to 1 hour.

Sprinkle the top of your lemon bars with POWDERED low carb sweetener. Slice into 16 bars. Serve at room temperature.

Store Lemon Bars in an airtight container in the fridge for up to 1 week.

This keto peanut butter pie takes under 5 minutes total, and you can eat it as soon as you finish making it! And this quick keto dessert literally tastes like a Reese's cup pie form, so if you like peanut butter and chocolate, you'll love this keto pie.

5 Minute Keto Peanut Butter Pie | Low Carb, Gluten Free, &amp; No Sugar Added

Crust:

(20 grams) butter salted, melted

(14 grams) sugar free chocolate chips

Cup (28 grams) blanched almond flour

(12 grams) confectioner swerve

Filling:

(42 grams) natural no sugar added peanut butter

(42 grams) mascarpone cheese

(15 grams) almond milk

Optional drizzle:

(3 grams) butter

 Make the crust first, melt the butter and chocolate chips in the microwave, mix until a sauce forms, and set aside.

Mix the almond flour and confectioners swerve together in a small bowl, and pour in the sauce.

Use a spatula to combine the ingredients into a ball of dough.

Coat a 4-inch bowl with baking spray, add the ball of dough, and press it out into the shape of a pie crust.

Microwave the crust in 2, 30-second intervals. Or you can eat it as a no bake crust too.

While the crust is cooking, add all of the filling ingredients to a small bowl, and use a fork to break them down and combine them until smooth.

Eat as is or refrigerate until ready to eat.

Add the butter and chocolate chips to a small bowl and microwave until melted. 

Mix the ingredients until a chocolate sauce forms.

Add the sauce to a Ziploc bag, cut off the tip of one end of the bag, and drizzle the chocolate sauce onto the pie.

Keto Peanut Butter Pie In 5 Minutes

Preheat

Donut hole batter

Add almond flour, protein powder, baking powder, xanthan gum, cinnamon, salt, melted butter, sour cream and hot water to a small bowl. Mix until combined. 

Roll into balls

Roll dough into 1/2 to 1 inch balls and place on a parchment lined baking tray, spacing about 1 inch apart. 

Bake it

Bake at 325 degrees Fahrenheit for 6 minutes.

Dip in butter

Once doughnut bites have cooled to the touch, dip each one in the melted butter. Then dip in a mixture of monk fruit and cinnamon.

Whip it

Add softened cream cheese to a large bowl and beat until fluffy. Pour in heavy cream and continuing beating until stiff peaks form. Set aside. 

Make jello

To a 2 cup measuring cup or small bowl, add the contents of one flavored jello packet. Pour in cold water and let bloom for 1-2 minutes. Stir in boiling water and mix until dissolved. 

Combine

Slowly stir in liquid jello mixture into the whipped cream. Don't add in too fast as you want to keep the airiness of the whipped cream. Once added, mix an electric mixer until fluffy. Scoop or pipe into a serving dish if desired. Refrigerate for 3-4 hours or enjoy right away.
