This meatloaf was very bland. Ketchup was good so I made more just to give the meat some flavor. Definitely could use some more seasonings.

Made this today using ground turkey instead of beef. It turned out AMAZING. I was little weary about the ketchup but that was also excellent!!!

al dente spaghetti noodles

Add onion, garlic, and parsley to a food processor.

Pulse until everything is finely minced, scraping down the sides as needed.

Add mixture to a large bowl along with ground beef, ricotta, Parmesan, eggs, breadcrumbs, Worcestershire, oregano, thyme, sage, salt, and pepper.

Use hands to gently mix ingredients until just combined. Do not over mix.

Coat a loaf pan with oil and transfer meatloaf mixture to the pan.

Gently press it into the pan, using hands to smooth out the surface so it's flat.

Place loaf pan on a rimmed baking sheet and bake for 40 minutes.

Pour off about half of the liquid from the loaf pan. Bake for another 20 minutes or until meatloaf is cooked through.

Broil meatloaf for 1-2 minutes on high if desired. Let meatloaf rest for 5-10 minutes before serving.

This easy meatloaf uses ground beef, ground turkey, and onion soup mix for a tasty, flavorful slow cooker meal!

Slow Cooker Meatloaf

oz packet dry onion soup mix

lb raw 95% lean ground beef

lb turkey breast

In a large mixing bowl, combine the eggs, milk, bread crumbs, onion soup mix and sage and stir or whisk together until well combined. Add the ground beef and ground turkey and mix together (I recommend using your hands) until thoroughly combined. Transfer the meat mixture to a cutting board or other clean, dry surface and form into a loaf that will fit in your slow cooker without touching the sides. If you prefer, you can place a long, wide strip of aluminum foil into your slow cooker at this point before adding the meatloaf to help you lift it out at the end (I just used two spatulas to lift mine out).

Add your meatloaf to the slow cooker and cover. Cook on low for 6 hours or high for 3 hours until fully cooked. Remove the cooked meatloaf to a cutting board or serving platter. Spread the ketchup over the top of the meatloaf and slice into 12 even slices.

Combine ketchup brown sugar and Worcestershire sauce in a small bowl, set aside.

Make the Glaze

In a large bowl whisk together milk, BBQ sauce, eggs, Worcestershire sauce, garlic, salt and pepper.

Add meat, onions and bread crumbs and stir until combined.

Line a wire rack with aluminum foil and poke holes in it, then place it on a large baking sheet

Form the mixture into a large loaf (about 10” by 5” by 2”)

Bake for 40 minutes.

Remove from oven, spread sauce on top and bake for 10 more minutes or until meatloaf reaches an internal temperature of 160 degrees F.

If necessary, broil for the 2-4 minutes to caramelize the top.

Remove from oven and let cool for at least 5 minutes before serving.

Tried recipe an did a few weeks an it turned out awesome. I used panko bread crumbs, no eggs, upped milk to 1/3rd cup, it takes 50 minutes at 375 ,add 15 more minutes when you apply topping sauce.

In a large bowl, combine ground beef, eggs, breadcrumbs, onion, bell pepper, tomato sauce, salt and Italian seasonings.

Label ziptop bags with the contents, date, and cooking directions.

Add uncooked meatloaf into the ziptop bag, seal and place in the freezer until ready to use.

The night before (or at least an hour prior to cooking dinner), remove the frozen meatloaf from the freezer and place it in the refrigerator (overnight), on the counter or in a sink of cool water. If left on the counter or in a sink of cool water, the meatloaf should defrost in about an hour because it’s so thin.

Once the meatloaf mixture is defrosted, preheat the oven to 350°F and grab a standard-size loaf pan and the ketchup (we love using our homemade ketchup).

Dump the meatloaf mixture into a loaf pan, pressing firmly to eliminate air pockets.

Brush the top with a generous layer of ketchup or other preferred sauce.

In a large bowl, mix the bread crumbs, eggs, and milk (or broth). Let sit for 5 minutes.

To the bread crumb mixture add salt, tomato paste, Dijon, maple syrup, Worcestershire, grated onion, garlic, smoked paprika, black pepper, oregano, marjoram, and fresh parsley. Mix until thoroughly combined.

Add the ground meat mixing gently with your hands until just combined. (It will combine more easily if the meat has been out of the fridge for 20 minutes.) Do not over-mix. Mold into a loaf shape, roughly 8 x 4, and place in a pan with a little room around the edges, like a pyrex baking dish or a lined rimmed baking sheet, rather than packing it into a loaf pan. This helps the meatloaf brown evenly and caramelize on the edges.

Coat the top and sides of the meatloaf with 1/2 of the glaze. Bake for 40 minutes, remove from the oven and reglaze with what is remaining. Turn the oven up to 400° and bake 10-15 minutes more. Test the temperature (an internal instant read thermometer is handy here) it should register 155-160.

This was delicious! I made it with bison and everyone raved about it. I will add it to my winter recipe rotation!

This recipe produces a delicious  meatloaf. I have one caveat--I tried grating the onion on my cheese grater. I will never do it again! It did not work well and was not worth the trouble. Next time I will try using my food processor. We made the Quick Cheater Ketchup for the glaze and added sriracha. Delicious.We served our meatloaf with mashed potatoes for an excellent dinner.

This recipe looked excellent but our family doesn't eat meat so I thought I'd take inspiration from your walnut mushroom loaf recipe and try to come up with a substitution for the ground beef. I combined 1/4 walnuts, 1/4 cooked bulgar wheat, and 1/2 cooked barley (all processed to a ground beef texture) with 1t miso paste and a little oil and used that with the rest of the recipe as-is. It was delicious and we'll make it again as a vegetarian main dish! Thanks for sharing your recipes.
