Easy Keto Pecan Pie

pecan halves, divided

tbsp Swerve Brown

tbsp Bocha Sweet

tsp caramel extract (or vanilla extract)

Preheat the oven to 325F.

Set aside 6 to 8 pecan halves to top the pie, then use a sharp knife to chop the rest. Set aside while preparing the filling.

In a medium saucepan over low heat, combine the butter and two sweeteners. Whisk until the butter is melted and the sweeteners are dissolved, about 3 minutes.

Remove from heat and whisk in the egg, then stir in the chopped pecans. Pour the mixture into one 8-ounce ramekin or two 4-ounce ramekins. Place the reserved pecan halves decoratively on top.

Place the ramekins on a cookie sheet and transfer to the oven. Bake 20 to 25 minutes, or until the sides are set but the center is still wobbly. Remove and let cool at least 15 minutes before serving.

Top with lightly sweetened whipped cream or some keto ice cream. Share with your favorite person!

Mix Karo® Light Corn Syrup, eggs, sugar, butter and vanilla using a spoon or a rubber spatula. Stir in pecans and pour the mixture into pie crust.

Whisk sugar, syrup, eggs, butter, vanilla, and salt together in bowl. Add pecans. Pour into crust. Bake in 400 degree oven for 10 minutes. Pecan Pie Roll Ups

Preheat oven to 400 degrees and lightly grease or line a baking sheet with parchment or a nonstick baking mat.

Unroll the crescent dough and gently separate the triangles. (I like to use a pizza cutter to get nice even lines)

Stir together pecans, brown sugar, flour, cinnamon, and melted butter.

Gently roll up each crescent starting with the wide end of the triangle and rolling toward the skinny pointed end. Place on prepared baking sheet 2-3 inches apart.

Bake in preheated oven for about 8-10 minutes until golden brown.

While roll ups are baking, heat caramel sauce a bit in the microwave or on the stovetop.

Drizzle caramel sauce over roll ups. Top with a sprinkle of cinnamon-sugar if desired. Serve warm.

2. Store the pie flat—and don’t store anything on top of it. 
3. Defrost the pie overnight in the fridge. 
4. Allow the pie to sit at room temperature for 10 minutes, then heat for 10 minutes in a 350ºF oven.

Can you freeze a pecan pie?

Heat oven to 375°F; place cookie sheet in oven to preheat.

In medium bowl, beat brown sugar, butter, corn syrup, salt and eggs with whisk until well blended; stir in pecans. 

Bake on preheated cookie sheet 35 to 45 minutes or until center is set.  

After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. 

Cool 30 minutes; refrigerate at least 2 hours until chilled before serving.

In a mixing bowl, add eggs, sugar, butter, corn syrup, cinnamon powder, vanilla extract and mix everything together. Keep aside

In the pie crust, add pecans and spread them out.&nbsp;

Pour the filling into on top of the pecans.&nbsp;

Bake at 350 degrees for about 50 minutes. Halfway through baking, cover only the edges of the pie with aluminum foil to prevent the crust from burning or becoming too brown.&nbsp;

Prepare the homemade pie crust as directed and let the dough chill for 1 hour in the fridge. Roll the dough out into a 1/8&quot; thickness and line a 9&quot; pie plate with the crust. Trim the overhang, press down the edges with a fork and poke holes in the bottom of the crust.

Preheat oven to 350°F (176°C). Spread the chopped pecans into the bottom of the unbaked pie crust. Whisk the remaining ingredients together in a large bowl until well combined and pour over the pecans.

Bake the pie for 1 hour and 15 minutes or until the edges of the pie filling are set and the center is slightly jiggly. Tent a piece of foil over the pie during the last 10-15 minutes to prevent the pecans and crust from over-browning. (You&#39;ll know that the pie is done when the edges of the filling are set and the center is slightly jiggly, like &quot;jello&quot;, when you move the pie plate.)

Remove the pie and let cool completely, at least 2 hours, before slicing so that the pie filling sets up properly.

Let pie crusts rest at room temperature for 15 minutes.

Stack pie crusts on top of each other and roll out into a rectangle 13x18-inches.

Transfer dough to a 12x17-inch jellyroll pan and trim overhang to 1 inch. Tuck overhang under and crimp edges. Place in freezer while you work on the filling:

In a large bowl, whisk together the eggs, corn syrup, sugar, butter, vanilla, cinnamon, and salt until combined. Stir in pecans.

Remove pie crust from freezer and pour filling into crust.

Bake until filling has puffed and just set in the middle, 40-45 minutes. Transfer to a wire rack to cool completely before slicing and serving. Enjoy!

Brown Butter Pecan Pie (Gooey, Rich, and Easy to Make)

(9") pie crust dough (or storebought)

heavy cream

¾ tsp fine sea salt

tbsp all-purpose flour

Roll

Roll out bottom crust and fit it into a 9-inch pie dish. Take a fork and lightly dock the bottom crust. (this will help when we blind bake)

Chill

Chill or freeze for 20–30 min to get the pie dough cold again.

Preheat

Preheat oven at 425°F (220°C). Line the cold pie crush with tinfoil ensuring to get into every crevice and fill with pie weights or raw beans/rice. We want to weigh down the crust to prevent it from puffing in the oven while we blind bake.

Place

Place the pie dish on a sheet tray (to catch spills) and bake in the preheated oven for 15 minutes or until the edges start browning.

Remove

Remove the tinfoil and weights (don&#39;t throw it out, reuse the weights for your next pie), and bake for 5 more minutes or until it gets just slightly more color. We do not need to fully bake the crust since it will be cooked again with the pecan pie filling. Let it cool while you make your filling.

Prep the Pie Crust

Melt

Melt butter over medium heat, swirling, until golden with toasted bits on the bottom (about 5–7 min). Remove from heat and cool slightly.

Brown the Butter

Bake

Bake at 350°F (175°C) for about 8 minutes until fragrant. Let cool then spread evenly over the parbaked pie crust. Set aside.

Toast Pecans

In a large bowl, whisk together all the ingredients; brown sugar, flour, corn syrups, eggs, melted brown butter, cream, vanilla, salt and cinnamon. It should be glossy and smooth.

Pour

Pour the filling over the pecans, spreading it evenly across the parbaked crust. Add extra whole pecans on top for decoration, if desired.

Bake at 350°F (175°C) for 50–60 minutes, or until edges are set and the center barely jiggles. The internal temperature should be 200°F (93°C). Tent crust edges with foil halfway through if browning too fast.

Remove from oven and cool at room temperature for 3–4 hours, then refrigerate for about 1 hour before slicing to ensure it&#39;s fully set up.

Serve

Serve at room temp or slightly warmed, with whipped cream or vanilla ice cream.
