I rarely ever write a review but seeing that this one didn't have many I wanted to encourage ya'll to make these! So fun! Hit of the party! Everyone loved them. If you haven't made melon balls before I suggest you watch a video as I near destroyed 1/2 a cantaloupe before I got it right!

My man loved these and cleaned the plate! Then, he did dirty things to me after, so there ya go!

Melon Prosciutto Skewers Are The Perfect Party Bite

Pico de gallo is a type of raw salsa traditionally made from chopped tomato, onion, and jalapeno or serrano peppers, with salt, lime juice, and cilantro.

Pico de Gallo Salsa

tomatoes (chopped)

white onion

cilantro leaves (no stems)

lime juice

kosher salt and pepper (to taste)

tbsp chopped red bell pepper ((optional))

garlic (minced (optional))

In a bowl combine all ingredients.

Let it marinate in the refrigerator at least an hour for best results.

Cucumber Bites with Sun Dried Tomato Spread

Make the Sun Dried Tomato Spread. This can be made in advance and kept in the fridge for up to several days.

When ready to serve, cut the cucumber into slices. Using a 1/4 tsp measuring spoon like a melon baller, take out the seeds of each slice. Don't scoop all the way through, you want the bottom of the slice to be intact so your filing will sit inside.

Fill each cucumber "cup" with the sun dried tomato spread (you can use a spoon or place the mixture into a pastry bag and pipe the filling in.

Garnish with hemp hearts, tiny basil leaves or both (optional)

Thank you for the cucumber bites recipe YUM! I made them for an outdoor party I attended and they were so crisp and refreshing! Many of the guests were vegan (I knew that ahead of time) so I was looking for something everyone could enjoy. When I had first arrived and added my plate to the table, I did hear some guests think it was a salmon spread, so I added a little tag to the plate with the the recipe name and ingredients. Anyone bringing these yummy treats somewhere might want to do the same in advance. :) Thanks again!

I've made this and taken to 3 friends homes for get-togethers in just the last 2 weeks. HUGE hit everytime and the host always asks for the recipe. At one home a teenager said he hates avocados and he was the one going back for 2nd and 3rd servings! Everyone Loves it!
