Healthy Egg Salad, Mediterranean-Style

eggs, hard boiled and peeled (see notes for cooking instructions)

Kosher salt and black pepper

tsp Aleppo pepper (sweet chili pepper,

Fresh parsley, large handful, chopped

Fresh mint, large handful, chopped

virgin olive oil

Campari tomatoes or small Roma tomatoes (191 grams), quartered

cucumber,

avocados, pit removed, cubed

(26 grams) chopped red onions

lemon, juice of

Peel hard boiled eggs and slice them into quarters.

Place sliced eggs in a mixing bowl. Season with a pinch of kosher salt, black pepper, and about 1 1/2 tsp of the Aleppo chili pepper. Throw in fresh parsley and mint, and add a generous drizzle of extra virgin olive oil. Toss to combine.  Transfer seasoned eggs to a serving platter. Clean the mixing bowl to use again.

Place tomatoes, cucumbers, avocado, chopped red onions in the mixing bowl. Season with kosher salt, black pepper, 1/2 tsp Aleppo pepper and 1/2 tsp sumac. Add lemon juice and drizzle of extra virgin olive oil. Toss to combine.

Top the eggs with the chopped salad. Serve at room temperature or chill for a few minutes.

Cook eggs: Fill a pot with cool water and add the eggs. Bring to a boil over high heat. Cover the pot with a lid, turn off the heat and let the eggs cook in the hot water for 12 minutes.

Transfer the eggs to a bowl of ice water and let them sit for 5-10 minutes. Peel the eggs.

In a large bowl, whisk together the Dijon mustard, plain Greek yogurt (or mayonnaise), salt and pepper.

Chop the eggs and add them to the bowl, along with the chopped red onion.

Stir until well combined.

Taste and season, as needed.

Boil

Bring a pot of water to a boil. Then turn the heat to low so there's no bubbles. Use a skimmer to slowly and gently place the eggs in the pot. Turn the heat back to high and boil the eggs for 12 minutes.&nbsp;

Cool

Transfer the eggs to an ice water bath for a few minutes to stop the cooking process and cool.

Once your eggs are cool to touch, peel and discard the eggs shells. Cut the hard boiled eggs to your desired size (I prefer chunky). Then add the eggs, red onion, chives, parsley, mayonnaise, Dijon mustard, and lemon juice to bowl and stir all ingredients together.

Serve

Season with salt and pepper and serve in a bowl, in a sandwich, or in a wrap.

In a small bowl, whisk together the mayonnaise, olive oil, mustard, capers, lemon juice, garlic, turmeric, salt, and several grinds of black pepper.

Mix in the eggs, then stir in the celery seed, dill, and chives. If desired, lightly mash the mixture if it&#x27;s too chunky. Chill until ready to serve.

In a medium saucepan over high heat, bring water to a boil then gently add the eggs. Boil eggs for 10-12 minutes. Once done, immediately place the eggs in ice water for 10 minutes and then peel the eggs.  After peeling the eggs, dice them into chunky pieces with a knife.

While eggs are boiling and cooling, go ahead and chop the herbs & vegetables.

In a large mixing bowl, add the avocados and mash with a fork until fully broken down.  Then, add all remaining avocado egg salad ingredients and stir until fully combined.

Serve with gluten free bread, crackers, lettuce wraps, etc. This egg salad will stay fresh in the refrigerator for 3-4 days.

My Favorite Egg Salad Recipe

Place eggs in a heavy saucepan that's large enough to hold them in a single layer. Fill the pan with enough cold water to come up an inch above the eggs. Bring the water to a boil over medium heat. As soon as the water comes to a boil, cover the pot, remove it from the heat, and set a timer for 12 minutes.

When the timer goes off, pour off the hot water. Run cold water over the eggs for a minute or two to stop the cooking process. Let the eggs sit in cold water for 10 minutes.

Crack the eggs and peel them under cold running water or submerged in water, to rinse the shells away as you peel.  .

Place the eggs in a bowl and use a potato masher or a fork to chop them finely. Alternatively, a few pulses in the food  processor will  do the trick.

Mix in the rest of the ingredients: mayo (1/3 cup) , mustard (2 teaspoons), salt (1 teaspoon), pepper (1/2 teaspoon) and chopped herbs.

I made it exactly as directed. Delicious!!

Hard boil the eggs (stovetop) - Add eggs to a large saucepan and cover with 1-2 inches of water. Bring to a boil and immediately remove from heat. Cover and let eggs rest in the hot water for 10-12 minutes before transferring to an ice bath to cool. Remove eggs from the ice bath, peel, and chop.

Hard boil the eggs (pressure cooker) - Add 1 cup water to the inner pot of your Instant Pot and insert egg or steam rack. Place eggs on the rack and securely fasten the lid. Set the cooking time for 5 minutes on high pressure. Allow pressure to release naturally for 5 minutes before doing a quick release. Transfer eggs to an ice water bath to stop cooling. Once cool, remove eggs from the ice bath and carefully peel and chop.

Mix - Transfer peeled and chopped eggs to a medium mixing bowl. Add the mayonnaise, pickle juice (optional), red onion, mustard (Dijon or yellow), chives, sweet paprika, salt, and pepper. Mix well to combine. 

Season to taste - Season with additional salt, pepper, or mustard, to taste.

Serve - Serve on your favorite bread, crackers, or on your favorite salad, if desired. Enjoy!

Drain and submerged the cooked eggs under cold water as soon as possible. Once the water gets warm, refill it with cold water again. Allow the eggs to cool slightly before peeling.

Chop the ham, pickles and finely diced red onions. Dice the hard-boiled eggs slightly larger. Combine everything in a bowl with mayonnaise and a little black pepper. Mix and serve.
