How to make elderberry tea - 3 ways

Make these fermented honey elderberries to boost your immune system or simply for a tasty and healthy treat.

Fermented Elderberry Honey

raw honey

Put the elderberries into a pint sized mason jar, then add the honey to cover the berries leaving at least an inch of head space at the top of the jar.

Cap the jar with a plastic storage lid or use a piece of parchment paper underneath the metal lid. Invert the jar for about 30 minutes or longer to make sure that all of the elderberries are coated with honey.

Turn the jar upright again. After the elderberries and honey have settled and all of the air bubbles are gone you may need to add a bit more honey to cover the berries.

Loosen the lid to allow air to escape during fermentation and place the jar somewhere out of the way. For the first 2-3 days it is helpful to invert the jar daily then turn it upright again. Be sure to tighten the lid before inverting then loosen again once upright.

Within about 2-3 days (could be longer in cooler temperatures) you should begin to see small bubbles on the surface and the honey will be noticeably runnier.

After one or two weeks you will see a lot of bubbles! Give it a stir now and then and it will really bubble up. The honey is ready at any point after this and will continue to slowly ferment for weeks and months.

Strain out the elderberries before consuming.

Take a spoonful two to three times per day when you feel a sickness coming on to shorten the duration of a cold or flu.

Cold and Flu Elderberry Syrup

elderberries (See note)

water (divided)

herbal tea bags (use a cold & flu blend *see note)

-2 cups honey (raw and local is best)

apple cider vinegar

lemons (juiced (optional))

In a large saucepan add elderberries and 3 cups water.

Bring to a boil and then reduce heat to a simmer.

Simmer for 30-40 minutes or until liquid reduces by half.

Use a masher and mash the berries.

Strain into a large bowl. Set aside.

Heat remaining water and add tea bags. *, see note here*

Steep tea for 10-15 minutes and add to elderberry mixture.

Once cooled slightly, stir in honey, apple cider vinegar, and lemon juice (if using) until honey is well incorporated.

Taste and add more honey or lemon to suit your taste.

Pour into a jar and store in the fridge for up to 3 months. ( I've kept it longer though. Freeze if you're nervous about longevity )

Take 1 tablespoon daily or at the sign of a cold. Take 2-3 times a day once a cold has set in.

This simple elderberry syrup is easy to make and full of immune-boosting compounds to help you ward off, or fight off common wintertime ailments.

500 g elderberries

lemon juice

Remove elderberries from stalks (use a fork) then rinse in cold water. Put elderberries in a bowl with the sugar and stir. Leave overnight to macerate.

Pour the elderberry mixture into a deep sided pan and add lemon juice and bring to boil for about 15 minutes till setting point 105C is reached

They're selling a bottled drink now here in Louisiana that is
elderberry blossoms mixed with Kombucha. No berries. I'm
only interested in the berries. 

Thank you for your help on this. And do you make a syrup for
colds? Health food store sells it for about $12.00 here. Works
great if you feel a cold coming on. Stops it in its tracks. Elderberry
pills do also but more fun to use the tasty syrup.for this.

I have answered my own question.   It was not quite set,  so I reboiled this morning and it does indeed get to 105 degrees (221 here in the states) with a longer full boil.  Already had on toast and it is wonderful.

Mine never set up like a true jam. It is very runny...but great taste and perfect for pancake syrup.
