Friday Night Fajita Platter

flour

Preheat the oven to it&#x27;s lowest temperate and place a large baking tray in there to warm. Then cut the peppers and onion into slices.

Place the chicken on a plate, pour on 2 tbsp of the oil and sprinkle on the fajita seasoning. Mix together until thoroughly combined.

Heat a cast-iron griddle plate to a high heat, when hot, place the tortillas on the griddle - turning once until you have griddle lines on the tortillas. It should only take a minute or two, but you'll probably need to do this in 2 or 3 batches. Place on a plate and cover with some foil to keep warm.

Brush the griddle with the remaining 1 tbsp of oil. Place the sliced peppers and onions on the griddle and fry until slightly charred and softened (about 8-10 minutes), turning once or twice during cooking. Remove and place on the warmed baking tray (take the tray out of the oven now so it's not too hot to serve).

Place the chicken on the hot griddle and cook until charred and no longer pink in the middle (about 5-6 minutes). Turn over once during cooking.

Place the chicken on the tray along with the warmed tortillas, avocado slices and coriander/cilantro. Serve with the sour cream, salsa, shredded cheese, jalapenos and lime wedges.

History is dotted with references to chicken soup. Since the 2nd century AD, different cultures simultaneously realised that chicken plus water and a handful of vegetables equalled flavour, comfort and a general feeling of well-being. With this express version, we skip the simmering-a-whole-chicken-in-water bit, instead poaching thigh fillets creating a full-flavoured stock in half the time. With spicy whole peppercorn and a final flourish of fresh parsley, this chicken soup recipe will warm the cockles of your heart.

Try our easy Thai prawn curry on a busy weeknight. This quick dinner is ready in under 20 minutes and flavoured with warming red Thai curry paste

Easy Thai prawn curry

tsp fresh root ginger

sachet coconut cream

raw frozen prawns

Heat the oil in a medium saucepan. Tip in the onion and ginger, then cook for a few mins until softened. Stir in the curry paste, then cook for 1 min more. Pour over the chopped tomatoes and coconut cream. Bring to the boil, then leave to simmer for 5 mins, adding a little boiling water if the mixture gets too thick.

Tip in the prawns, then cook for 5-10 mins more, depending on how large they are. Serve alongside some plain rice and sprinkle with a little chopped coriander, if you like.

This fragrant salad is perfect for any Friday night feast. For a more kid-friendly option, simply reduce the chilli.

Step 1

Spray beef all over with a little oil. Heat a large frying pan over medium- high heat. Add beef. Cook for 3 to 4 minutes each side or until well browned. Transfer to bowl of a 5.5 litre-capacity slow cooker (You may need to cut the beef in half lengthways to fit).

Step 2

Add rosemary. Combine mustard, barbecue sauce, honey, Worcestershire sauce and stock in a jug. Pour over beef (the liquid should just cover beef). Cover with lid. Cook on low for 6 to 7 hours or on high for 4 to 5 hours or until beef is very tender (see note).

Step 3

Remove beef from slow cooker and transfer to a board. Remove and discard rosemary. Using 2 forks, roughly shred beef. Divide sweet potato mash between plates. Top with beef and sauce. Serve with peas.
