Healthy 'Fried' Rice

olive oil

chicken

garlic,

c. steamed brown rice, cold (or leftover brown rice)

eggs,

carrot,

c. frozen shelled edamame, thawed

c. frozen peas, thawed

scallions, finely chopped,

tbsp. low-sodium soy sauce

sesame oil

Chicken Fried Rice

tbsp oil (, peanut, vegetable

eggs (, lightly whisked)

(5 ounces) chicken breast

garlic (, minced)

onion (, finely chopped)

(4 ounces) bacon (, excess fat trimmed, chopped (Note 1))

carrot* (, peeled and diced 0.75cm / 1/3")

corn* ((or can or fresh))

peas*

(packed) cooked white rice (, day old (Note 2))

onions

2.5 tbsp Chinese cooking wine

tbsp oyster sauce ((Note 4))

tbsp light soy sauce ((Note 5))

tsp sesame oil (, optional)

tsp white pepper (, optional)

Sauce &amp; chicken: Mix Sauce in a bowl. Pour 2 tsp over chicken, toss to coat, then set aside for 10 minutes.

Egg: Heat 1 tbsp oil in a wok or skillet over medium heat. Add egg and scramble until just cooked (still a touch wet) then remove.

Fried Rice: Turn heat up to high, add remaining 1/2 tbsp oil and bacon into same skillet. Cook for 1 minute or so until fat starts to melt, then add onion and garlic.

Cook until bacon is light golden - about 1 1/2 minutes.

Add vegetables (still frozen is fine). Cook for 1 minute.

Add chicken and cook until it changes from pink to white - about 1 1/2 minutes.

Add rice and Sauce ingredients. Cook for 1 1/2 minutes, stirring consantly.

Add egg and green onion, toss through to disperse then remove from heat.

Serve immediately!

Easy Curry Fried Rice

Cabbage (chopped)

Mushrooms (diced)

Bell peppers (diced)

In a large pan or wok, heat the sesame oil over high heat.

Add in the onions and garlic then sauté for 2 minutes. Add in the vegetables and cook until tender.

Add in the rice or other leftover grain of choice.

Season with salt, soy sauce, and curry powder. Mix well. Adjust to taste if needed.

Garnish with some shopepd scallions and sesame seeds, if you&#039;d like. Enjoy while hot!

TWO SUPER EASY 10-MINUTE FRIED RICE RECIPES | One Pan Lazy Vegan Meals

Amazing chicken fried rice that is better than take out! This chicken fried rice has moist and tender chicken with flavorful peas and carrots and long rice cooked together. Make this unique and your own with this favorite Chinese rice!

Better than Takeout Chicken Fried Rice

vegetable oil

chicken (cut into small pieces)

rice *

Tbs sesame oil

onion

frozen peas and carrots (thawed)

soy sauce (more

eggs (lightly beaten)

In a large skillet or wok, add vegetable oil and soy sauce.  Add in the chicken and cook until lightly brown and cooked throughout.  Remove and set aside.

Pour sesame oil in the bottom. Add white onion and peas and carrots and fry until tender.

Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.

Add the rice and chicken to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

Fried Rice Square

A simple and easy yet super tasty and flavour-packed Ginger, Scallion, and Teriyaki Fried Rice! This is also a perfect way to use up whatever leftover veggies you have lying in your fridge!

Ginger, Scallion, and Teriyaki Fried Rice

220 g block extra firm tofu

tbsp ginger scallion oil* ((see notes))

tbsp ginger scallion sauce*

teriyaki sauce

salt and pepper

red bell pepper (diced)

rice

tbsp teriyaki sauce (or more! Feel free adjust according to desired taste)

tbsp ginger scallion sauce* (see notes)

white pepper or black pepper

tsp dark soy sauce (for colour)

Press the tofu. You can wrap the tofu in towels and place a plate on top of it until excess liquid is absorbed by the towels. You can also opt to use a tofu press.

Afterwards, slice them into small 1/2” (1.25cm) cubes.

Heat a large pan or wok over medium high heat.

Once hot, add in the ginger scallion oil. I like to add in the oil from the jar for extra fragrant, but you can also just use regular oil.

Add in the onions and sauté until translucent.

Add in the ginger scallion sauce. Sauté for 1 minutes until really fragrant.

Add in the tofu cubes and then turn up the heat.

Add in the teriyaki sauce. Sprinkle some salt and pepper, to taste. Mix well.

Leave the tofu to cook over medium high heat for it to turn lightly brown and crisp. I usually do so by leaving the tofu untouched for 1-2 minutes at a time before moving around to cook the other sides.

Tofu

Once the tofu is cooked to your liking, add in the peas and bell pepper or other veggies of choice.

Leave the veggies to cook for a few minutes until tender.

Add in 1 tbsp (or more) of the ginger scallion sauce.

Add in the leftover rice.

Pour in the teriyaki sauce.

Mix the rice well and feel free to add more teriyaki sauce if needed.

Add in the pepper and mix well. And if using, add in the dark soy sauce, for colour.

Add in the remaining ginger scallion sauce and then cook down the fried rice for 2 to 3 more minutes over medium high heat. Taste the rice and feel free to season it more as needed.

Turn off the heat and serve the rice in a bowl! Feel free to top with some fresh scallions and more ginger scallion sauce if desired. Enjoy!!

Fried Rice

Fried rice recipe - Restaurant style easy Chinese vegetable fried rice is a delicious meal in itself, loaded with fresh vegetables, packed with flavors and comes together under 30 minutes

Veg fried rice recipe

Rice ((uncooked

Garlic (chopped)

oil ((peanut, sunflower

Soya sauce ((or tamari, adjust to taste))

Vinegar ((rice vinegar or apple cider))

Salt (as needed (I use ¼ teaspoon))

Black pepper (coarsely crushed)

Carrots (chopped finely)

Bell peppers ((capsicum) chopped finely)

beans

onions ((scallions/spring onions, 4 stalks, fine chopped))

Cabbage ((optional, or ¾ cup mushrooms sliced))

green chili (slit (optional, for heat))

Skip this section if you have precooked rice. Wash rice a few times till the water runs clear. 

Soak it for at least 10 mins. Meanwhile bring 4 to 5 cups water to a boil in a large pot.

When the water begins to boil rapidly, drain the rice and add it to the water. Pour 1 tsp oil to prevent the rice from turning sticky.

Cook rice till al dente. Rice must not be mushy but has to be grainy.&nbsp;

Drain off the rice to a colander. Cool it completely &amp; fluff it up with a fork.

While the rice cools, chop the veggies and garlic. Keep aside 2 tablespoons of green onions for garnish.

Preparation

Heat a wok with oil on the highest flame and fry chopped garlic slightly just for 30 to 40 seconds. 

Next add all the chopped veggies and fry for 2 to 3 minutes just until half cooked. They should be crunchy and not soft.

Add soya sauce. Then add the optional ingredients vinegar and half tsp sugar. Sugar helps to preserve the bright colors of veggies and helps to balance the flavors.

Immediately add cooled rice, ¼ teaspoon salt and black pepper. Fry the vegetable fried rice for 2 mins.

Garnish veg fried rice with fresh green onions. Tastes good on its own but you can also pair it with veg manchurian or chilli paneer.

If your rice is already prepared, this recipe takes just about 15 minutes to prepare. If you need to prepare the brown rice, plan for about 55 minutes total.

Healthy Fried Rice Recipe

avocado oil

Heat 1/2 tablespoon oil over medium heat.

In a mixing bowl, whisk the eggs into a uniform mixture until well combine and season with a small pinch of sea salt and fresh black pepper.

Add the eggs to the pan and scramble. Once cooked remove the scrambled eggs from the pan to a plate and reserve for later.

Add the remaining 1/2 tablespoon oil to the pan over medium heat; add the scallions and carrot and sauté 3-4 minutes until softened.

Add the frozen peas to the pan, then add the rice, tamari, rice vinegar, toasted sesame oil and ginger. Stir well to combine, the heat from the pan will quickly defrost the peas.

Turn off the heat and stir in the scrambled eggs. Season with a pinch of sea salt if needed–it will depend on the sodium content of the tamari and other ingredients.

Turn the heat to low and cook another 5 minutes until the entire dish is warmed through.

Water chestnuts, bean sprouts, edamame, just about any other veggie you like, or plain shredded chicken would also be a delicious addition to this dish.

I made this for dinner tonight (paired with some beef broccoli I made) and it came out soooo good. The freshness of all the ingredients used together was just amazing! Thank you for this recipe, will have to save it!

One of my favorite quick meals on a work-day. So satisfying! I increased the amount of carrots and peas to increase my veggie intake.

My dad's simple, easy and quick egg fried rice recipe that's fluffy and coats each grain of rice with egg. Ready in 15 minutes!

Egg Fried Rice

rice ((preferably cold, day old rice, see notes))

oil ((for the eggs))

salt

green onions ((finely chopped, added at the end))

sesame seeds ((optional, added at the end))

Gently break up the day-old rice in a bowl into smaller chunks with your hands and set aside.

Finely chop up the green onions and set aside

In a small bowl, add in the eggs, oil, and salt and beat it until it is fluffy and set aside.

Heat a large frying pan with a bit of oil over medium heat.

When the oil is hot, add in the rice and cook it for a few minutes. Use your utensil to break up the rice while it is hot. Cook for about 4-6 minutes

Reduce the heat to low heat

Push the rice aside in the pan and add in the scrambled egg mix to the pan. Let it sit for about 1-2 seconds and then use your utensil to give it a gentle mix a few times.

Push the rice on top of the scrambled eggs and gently mix it until each grain is coated (Don't worry goopy, the egg will cook and dry out in the next steps)

Set the stove back to medium heat

Continue to toss and mix the rice until the egg is cooked and evenly distributed with the rice. The fried rice should look dry and not goopy and mushy. Cook for approximately 5 minutes. If the rice still looks mushy, continue to cook it until the heat dries out the eggs.

Add in the soy sauce and mix well to evenly distribute it

Turn off the heat and add in the green onions and mix it for 1 minute so that the residual heat cooks it.

Serve it as a side dish and enjoy!
