Delicious &amp; easy smooth hummus without a blender -- the trick is the mixing technique. Tahini and garbanzo flour can be hard to find -- links are to Amazon.

Easy Smooth Hummus

water ((divided))

garlic powder garlic paste

cumin ((adjust to taste))

salt

lemon or lime juice

tahini ((sesame paste))

garbanzo flour

olive oil

Mix 1/2 cup of the water, garlic, cumin, salt, lemon/lime juice and tahini in a saucepan. Slowly add the garbanzo flour, mixing as you go.&nbsp;

Slowly add the remaining water, again mixing as you go. Adding slowly and mixing well so there are no lumps is key.

Bring the mixture to a boil while stirring and turn down to a simmer immediately when it begins to boil. Keep stirring (it can scorch if you don't stir) and let it simmer for 3 minutes.

Remove from the stove, pour into a lidded plastic bowl, cover with a thin coating of olive oil and either eat immediately or refrigerate.

Serve with veggies, crackers or pita wedges.

The Best Falafel I’ve Ever Made!

chickpeas

red onion, peeled and cut in quarters

garlic,

hot chile pepper,

lemon

lemon juice

Tbsp coriander

Tbsp cumin

Tbsp salt

tsp baking powder

Tbsp all purpose flour, or chickpea flour

vegetable oil

tahini (sesame paste)

water

Measure out 3 cups (500 grams) of soaked and drained chickpeas. Note: you are starting with dried chickpeas that have been soaked, but not cooked.

Put the soaked beans, onion, garlic cloves, hot pepper, lemon zest and juice, spices, salt, baking powder, and flour in the bowl of a full sized food processor.  Your machine will be full. Note: if your machine is smaller, do this in batches.

Pulse the machine repeatedly to break everything down.

Stop the machine and scrape down the sides. Run again until the mixture is evenly blended but still has some texture, like coarse sand. It should hold together when you squeeze it between your fingers, but also fall apart easily. It should have a texture similar to wet sand. Note: you can refrigerate the mixture at this point for up to 2 days ahead of time.

Using your hands or a small cookie scoop portion out the mixture and roll into balls or form patties. The mixture will be delicate, so use a gentle touch.

If you are using a deep fryier or a deep pot for frying, heat your oil to about 340F. Use a thermometor to check the temperature. Your oil should be at least 3 inches deep. Note: You can also shallow fry patties in a pan on the stove.

When the oil is hot, gently lower the balls or patties into the oil with a slotted spoon.  Work in batches so you don&#039;t crowd your pan.  Fry the falafel for about 2 to 3 minutes, until they are a nice deep brown on the outside and fluffy inside. If they are getting too dark, lower the temperature of your oil. If they are not turning golden within a minute, turn up the temperature a bit.

Drain on paper towels. Serve hot with tahini sauce.

Make the tahini sauce by mixing the tahini, lemon juice, salt, and enough cold water to make a sauce.  Taste to adjust the lemon and salt. Note: be sure to stir your jar of tahini thoroughly before measuring, as it separates.

Podemos hacer toda la preparación en la cazuela de barro directamente o hacerlo en una sarten y añadir los ingredientes a la cazuela en el momento que lo vayamos a meter en el horno.

Pelamos la patata, la cortamos a rodajas de un centimetro mas o menos, las salamosy la freímos ligeramente en una sartén. Cuando estén un poco doradas, no hace falta mucho ya que se van a cocer con el arroz, las apartamos y las colocamos en el fondo de la cazuela de barro. En esa misma sartén freímos las carnes previamente salpimentadas, cuando estén las colocamos en la cazuela.

Ahora los embutidos, fritos y a la cazuela. Seguimos ahora ponemos los garbanzos en la sartén, los rehogamos un poquito y como no! los retiramos y los ponemos en la cazuela.

Y como final en la misma sartén (que pesada dios mio!), ponemos una cucharadita de pimentón en el aceite que quede, que sera poquito, lo remobemos rapidito para que no se queme, añadimos el arroz, le damos unas vueltecillas para que coja todo color lo añadimos.

Metemos al horno precalentado durante unos 30 minutillos a unos 180 grados. De todas maneras el arroz se quedara sin caldo y es fácil ver cuando el arroz.

Oil-Free Chickpea Salad

garbanzo beans, drained and rinsed

red bell pepper, diced

tomato,

celery, diced

dill pickle, diced

onion powder

In a medium bowl, mash the garbanzo beans with a fork or potato masher until the beans are smooth.

Add all other ingredients and mix in until thoroughly combined.

Sautéed Chickpea Recipes are the simplest way to make pan fried chickpeas. A classic staple that’s budget-friendly and easy to prepare.

Sautéed Chickpea Recipes

tbsp Olive Oil

½ tbsp Garlic Powder

Paprika

tsp Ground Turmeric

⅛ tsp Black Pepper

Lemon

Parsley

Open canned chickpeas, rinse under running water then dry on a clean kitchen towel. Heat olive oil in a skillet/frying pan on medium heat.

Add chickpeas and sauteed until it turns golden crispy on the surface. Before adding the spices, turn the heat to very low to prevent spices burnt. Add ground turmeric, paprika, garlic powder, and salt. Mix until chickpeas are well coated (no more than 2-3 minutes to avoid burning the spices). .

Add lemon juice (optional, leave out if you prefer crispy texture) and stir.

Turning off the heat then finish it with chopped parsley. Serve as a side dish or with salad or rice.

Each enchilada has over 20 grams of plant-based protein (from non-soy sources). Then topped with a homemade Mexican-inspired enchilada sauce!

Protein Monster Vegan Enchiladas

enchilada sauce (or your own favorite)

Make the enchilada sauce and set aside. (Or skip this step if using your own sauce.)

Preheat oven to 350°F (180°C).

Dice onion and bell pepper.

In a large skillet over medium heat, sauté onion and bell pepper for about 8 minutes.

Meanwhile, dice tomatoes. Rinse and drain beans.

When onions are translucent, reduce heat. Add cumin, paprika, tomatoes, nutritional yeast, hemp hearts, and both beans (rinsed and drained). Stir well. Heat for 4-5 minutes then set aside.

In a lightly sprayed 9&quot;×13&quot; baking dish, cover the bottom with a thin layer of enchilada sauce.

Distribute bean mixture in the center of tortillas. Roll up, tucking in both ends.

Place all 6 rolled enchiladas in baking dish and top with remaining sauce.

Bake for about 25 minutes.

Serve topped with avocado, cilantro, additional hemp hearts, nutritional yeast, etc.

Just made this for the first time today and gotta say the filling is delicious! A great protein filled meal after a workout.

I can't tell you how many times I've made this. It's one of the best and easiest vegan recipe I've come across over the years.  The ingredients are usually already in my pantry, so simple. This has become a staple in our household and I've served it up to plenty of non-vegans without any complaints.  5 star rating without a doubt!

A hearty salad that combines both black beans and chickpeas with fresh veggies, creamy avocado, and a cumin-lime dressing. Enjoy it as a main dish, side dish, or snack!

Fiesta Bean Salad (Easy, Vegan!)

garbanzo beans

red onion

cilantro

avocado

Tbsp. lime juice

Tbsp. red wine vinegar

Make the dressing: In a small bowl, add all dressing ingredients and whisk to combine. Set aside. (Feel free to add 1 tsp. pure maple syrup to balance the flavors, or 1/4 tsp. chili powder for some spice.)

Rinse and drain chickpeas and black beans. Add to a medium mixing bowl.

Dice tomatoes, roughly chop cilantro, and finely dice red onion. Add to the beans.

Pour dressing over salad and stir.

Peel and dice avocado. Add it to the salad and lightly toss to combine. Taste and adjust flavors if needed, or add more salt &amp; pepper.

Can serve immediately or let it chill in the refrigerator for at least an hour first. (If not serving immediately, you can add the avocado right before serving to prevent it from browning.)

cucumber (I use hothouse/English)

feta cheese crumbles, pepperoncini, fresh herbs

salt (or up to 1/2 tsp.)

Serve this dish immediately or refrigerate for at least an hour to let flavors further combine. Some dressing will settle on the bottom, so stir again before serving.

Chickpea Avocado Mash with Lemon

lemon juice (or more to taste)

Salt and pepper

hummus, garlic powder, fresh herbs, etc.

Rinse and drain chickpeas and place in a medium bowl. Mash with a potato masher. (Mash thoroughly for a smoother consistency, or not as much for chunky texture. I prefer a chunkier texture.)

Cut avocado in half and remove pit and peel. Place avocado flesh in bowl. Add lemon juice, salt/pepper, and any other desired additions.

Lightly mash again to combine. Serve immediately or refrigerate covered for 2-3 days. (Though it&#39;s best when fresh!)

This was wonderful!! We're out camping and this is a fantastic lunch to make. I didn't want to pack avocados, so I bought the organic Wholly Guacamole minis instead. I used two minis in place of 1 avocado, and it worked like a charm! Added diced celery and raisins (like in your curried version). So delighted to have this as a simple camping lunch.

This recipe has been added to my rotating menu! I added the "mash" to a whole grain tortilla, then a couple lettuce leaves, sliced tomato, and another dash of salt &amp; pepper. Brilliant! Thank you! Tammy J.
