These Healthy Cookie Dough Balls are a healthy snack and take minutes to make. They are filled with nut butter, sweetened with honey, and only five ingredients total.

Healthy Cookie Dough Balls

+ 2 tbsp oat flour

nut butter, I prefer salted peanut butter

Tbsp honey

Tbsp coconut oil melted (add more if needed)

vanilla

salt if none in nut butter

chocolate chips (I used mini)

Mix together all ingredients in a bowl until well combined.

If too wet to roll into balls, chill in fridge for 30 minutes.

Roll into balls and store in fridge or freezer. If freezer, defrost for a few minutes before eating.

Hi. I’ve made these a few times now but mine always come out a little dry and chalky. Should I add more coconut oil? They are very good but want to get the correct level of moist next time.

You can use tahini and gluten-free flour.

recipe is alright but tastes very heavily of flour and I’d recommend adding more vanilla to combat this

I love this recipe.  It is very forgiving and you can switch it up to be any of you yr favorite cookie dough. I made oat flour from oatmeal and it wasn’t as fine but it just makes it seem more like a monster cookie dough and would be great with mini chocolate chips.

I'm pretty sure that I could live off of these.

These were so good! Perfectly sweet and super satisfying if you’re craving something sweet as a pick me up or for desert. Will definitely be making again. I used almond butter instead of pb because that’s what i had at home and really liked it!

You are a genius! These are so yummy! Finally, I can eat cookie dough without the guilt, lol. I used cashew butter because it’s more neural and I didn’t want PB cookie dough. I added a couple Tbs. of stevia based sweetener because I used a sugar-free fake honey, which isn’t as sweet as regular honey. Mine was a little dryer but that’s probably because it wasn’t real honey. I just needed it to be sugar free. They turned out great! Thank you so much for sharing!

I used tahini as my 'nut' butter, maple syrup (out of honey for quarantine), and replaced the oil with a splash of almond milk. I also used the Bake Believe sugar free chocolate chips from Walmart and chopped them into chunks to stretch them further. 
The bites came together beautifully and my husband immediately scarfed a few down. A great healthy snack!! :)

Love love love these! They’re perfect for a mid morning or mid afternoon pick-me-up. You can make them however big or small you want. I followed the exact recipe, adding Teddie’s smooth peanut butter and they’re delicious!

Wrap ready-made polenta in Italian ham and bake for a stylish, dippable party bite

Heat oven to 200C/180C fan/gas 6. Cut the polenta into 18 chunky chips and the prosciutto into 18 strips. Put the polenta in a bowl along with the oil and a good grinding of pepper, and mix together. Wrap a strip of prosciutto around a polenta chip, then pop onto a baking tray. Repeat with the remaining chips and sprinkle over the Parmesan.

Bake for 25-30 mins until golden, turning them over after 15 mins. Serve with tomato ketchup, if you like.

Gluten-Free Banana Walnut Muffins

In a mixing bowl, mash bananas with a fork. Then, add in all other wet ingredients and mix until combined. Set aside.

Put quick oats, baking soda, salt and cinnamon in a food processor or high-power blender and blitz until combined and the texture becomes powdery like flour. Add mixture to mixing bowl and mix until combined and no lumps remain.

Grease your muffin tin, and pour the batter in. Fill each cup to about 3/4 full.

Bake for 25 minutes or until an inserted toothpick comes out clean.

Transfer to cooling rack and let them cool down completely before storing in an air-tight container.

¼ Cup Softened Grass Fed Butter (see note 1 for dairy-free option)

⅓ Cup Honey (or Pure Maple Syrup)

¼ tsp Pink Himalayan Salt

1½ Cups White Whole Wheat Flour + extra for rolling (see note 3 for gluten-free option)

These Chinese rice puddings are slightly chewy, mildly sweet, and a delightful traditional snack. They require only 3 ingredients, are gluten-free, and they show that sometimes the most humble foods can be some of the best foods!

Chinese Rice Puddings (Boot Jai Goh)

Asian white rice flour

tapioca starch

water

just-boiled water

sugar

Prepare steamer. You want the water at a gentle boil (I have the stove set to just below medium).

In a measuring cup or bowl with a spout, combine the rice flour, tapioca starch, and room temperature water. Use chopsticks or a small whisk to mix it into a thick slurry.

In a separate measuring cup, combine the just-boiled water and sugar. Stir until sugar is complete dissolved.

Add the sugar water to the rice flour mixture, mixing with chopsticks or a small whisk while pouring it in. The look and consistency will resemble milk.

Pour the liquid into your bowls/dishes, making sure to mix the rice flour solution right before pouring in case the flour has settled.

Steam the puddings over low-medium heat for 15 minutes.

Transfer the bowls to a cooling rack and let the puddings cool completely. Repeat  steaming any remaining rice flour mixture, being sure to stir the mixture with chopsticks or a whisk before pouring it into the dishes.

To remove the rice puddings after they have completed cooled, run a toothpick along the edge of the pudding and the dish to loosen and lift it out.

Store in a container at room temperature or in the refrigerator for 2-3 days.

Just like their namesake, these gooey treats are packed with peanuts but use rice malt syrup for a healthier sweet hit.
