Orzo Salad

pasta

cucumber (diced)

cherry tomatoes (halved)

chickpeas

red onion

feta cheese (crumbled)

parsley

olive oil

lemon juice

red wine vinegar

Dijon mustard

garlic powder

oregano

salt and pepper

Place the orzo pasta, cucumber, cherry tomatoes, chickpeas, red onion, parsley and feta cheese in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano and salt and pepper.

Pour the dressing over the pasta mixture. Toss to coat, then serve.

Greek Orzo Salad Recipe

orzo pasta (1 1/4 cup dry)

chickpeas,

lemon, juice and zest (about 2 tablespoons juice)

shallot onion

English cucumber (2 cups diced,

red peppers

dill,

mint

white wine vinegar

feta cheese crumbles

Kalamata olives, halved

Black pepper

Prepare the orzo according to the package instructions. Taste the orzo a few minutes before completion to ensure it’s ‘al dente’ (chewy, but with a little firmness in the center). When it’s done, drain it and then rinse it under cold water until it comes to room temperature.

Place the chickpeas in a bowl with the lemon zest, lemon juice, and 1/4 teaspoon kosher salt.

Mince the red onion, then place it in a bowl with water (this helps to remove the sharp onion taste). Dice the cucumber. Dice the roasted red pepper. Chop the herbs.

Stir together the orzo, chickpeas and bowl of lemon juice, red onion, cucumber, red pepper, dill, mint, white wine vinegar, olive oil, Dijon mustard, oregano, feta crumbles, black olives, and several grinds of black pepper. Taste and if necessary, season with more kosher salt.

This Greek orzo salad is a fun spin on the traditional Greek salad with the addition of orzo pasta and grilled zucchini. Use the best of the summer produce for maximum taste!

Greek Orzo Salad with Grilled Zucchini

tbsp white wine vinegar

olive oil (extra virgin)

garlic (small, crushed)

salt and pepper (to taste)

orzo

zucchini (small baby zucchini)

100 grams/1 cup cherry tomatoes (mixed colours if possible)

grams/1/3c feta cheese (crumbled)

chives

tbsp fresh mint (chopped)

tbsp/1/4cup kalamata olives

salt (to taste)

In a mason jar combine all ingredients, put a lid on and shake to combine.&nbsp;

For the dressing

Cook the orzo in a pot of boiling and salted water according to package instructions.&nbsp;

While the orzo is cooking, cut the baby zucchini in half and grill for 3 minutes on each side. (If using a regular size zucchini, cut it in 1 inch thick slices.&nbsp;

Drain the orzo and dress with the vinaigrette while hot, set aside to cool.&nbsp;

When the orzo is at room temperature add sliced grilled zucchini, halved cherry tomatoes, crumbled feta cheese, sliced chives, chopped mint and olives. Gently toss the ingredients to combine, taste and add more salt if needed.

Cool in the fridge for 30 minutes to allow the flavours to meld. Serve as a side dish or a vegetarian main.&nbsp;

Prepare the vinaigrette in a large bowl by whisking together the zest from one lemon, lemon juice, extra virgin olive oil, red wine vinegar, oregano, salt and pepper.&nbsp;

Dice or thinly slice red onion and add to bowl.&nbsp;

Cook orzo according to directions and drain and rinse under cool water.&nbsp;

Seed and thinly slice cucumbers, halve cherry tomatoes and slice kalamata olives.&nbsp;

¼ cup sliced pitted kalamata olives, (about 1 ounce)

capers

Feta cheese, (to your liking)

lemon, (zested and juiced)

extra virgin olive oil

garlic clove, (minced)

Cook the orzo pasta according package instructions (mine took about 8 minutes). Drain and cool briefly.

In a large mixing bowl, combine the grape tomatoes, green onions, bell peppers, parsley, dill, olives and capers (hold the feta for now). Add the orzo pasta.

Make the dressing. In a small bowl, combine the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano and a good pinch of kosher salt and black pepper. Whisk to combine.

Pour the dressing over the salad and toss until well combined and the orzo pasta is well coated with the dressing.

Top with pieces of creamy feta cheese. Cover and refrigerate for a bit before serving.

Greek Orzo Salad with feta cheese is one of those super simple dishes that take just so little effort to prepare! Short cooking time, little preparation and you will have a delicious light meal or side dish in 30'!

Greek Orzo Salad (Orzo feta salad)

water

orzo (1 3/4 cups)

cherry tomatoes (14 oz)

English cucumber

Kalamata olives

fresh basil leaves (1 oz)

fresh dill (1/2 oz)

tbsp extra virgin olive oil

tsp red wine vinegar

cubed feta (6 oz)

To prepare this delicious Greek orzo salad recipe, start with cooking the orzo pasta. Boil the water in the kettle. At the same time heat the olive oil over a medium high heat in a large saucepan. Once the oil is shimmering, add the orzo and cook, stirring often until the orzo starts to color. Fill the pan with boiling water, stir in a of teaspoon of salt and cook the orzo for 10-12 minutes, until just tender and al-dente.

Drain the orzo and rinse under a cold tap until the water running out the pasta runs clear. Set aside to drain away any excess water, stirring occasionally to prevent the pasta sticking to each other.

Meanwhile, quarter the cherry tomatoes, peel and finely chop the onion and the cucumber, and quarter the olives.

Transfer the cooked orzo to a large bowl and stir in the salad vegetables. Roughly chop the fresh herbs and add those too.

To make the dressing, in a small bowl combine the extra virgin olive oil, red wine vinegar, dried oregano, lemon zest, and a generous amount of salt and pepper. Stir this into the orzo mixture.

Add the cubed feta and stir carefully, making sure the cheese pieces don’t break up too much. Season to taste with more salt and pepper, if needed, and leave to stand in the fridge for roughly an hour before serving to allow the orzo to soak up the dressing. Enjoy!

Easy Greek Orzo Salad Recipe

orzo pasta

English cucumber, chopped

any color bell pepper, seeded and diced

red onion,

½ cup cherry or grape tomatoes, halved (Note 3)

kalamata olives, pitted and sliced

feta cheese

garlic,

Tablespoons red wine vinegar

salt and ground black pepper,

Cook the orzo according to package instructions. Let pasta cool.

In a large mixing bowl, combine the cooked and cooled orzo, diced cucumbers, bell pepper, diced red onion, grape tomatoes, kalamata olives, and feta cheese.

Mix in the Greek Lemon Vinaigrette,( recipe below) combine well.

Refrigerate for at least an hour, up to overnight to blend flavors.

In a small mixing bowl, whisk together the garlic, lemon juice, red wine vinegar, olive oil, oregano, salt, and black pepper. Taste for seasoning, re-season if needed.

Quick and easy to make, packed full of wholesome ingredients, and bursting with flavor, this Greek Orzo Salad is sure to become a favorite!

Roma tomatoes (,

cucumber (, seeded and chopped)

red onion (, chopped)

olives

For the Vinaigrette:

balsamic vinegar

sugar

To prepare the orzo, bring a pot of water to a boil, add some salt, a teaspoon of olive oil, and the orzo and cook until al dente, 8-10 minutes. Drain, rinse and drain thoroughly. Let cool completely.

To prepare the vinaigrette, combine all ingredients in a bowl and whisk until emulsified.

Place the cooled orzo in a large mixing bowl and add all remaining ingredients. Gently stir to combine. Pour over the vinaigrette and gently stir to combine. Refrigerate or at least 30 minutes before serving.

Greek Orzo Pasta Salad

tbsp Red Wine Vinegar

tsp EACH: Salt, Black Pepper,

/ 5.3 ounces Baby Plum Tomatoes, (halved)

/ 3.5 ounces Kalamata Olives, (halved)

tbsp very finely diced Red Onion ((1/2 small/medium onion))

Garlic, (very finely diced)

Lemon, (juice only)

In a large mixing/salad bowl, whisk together extra virgin olive oil, red wine vinegar, parsley, oregano and salt &amp; pepper. Add in the tomatoes, feta, olives, onion &amp; garlic and stir to combine. Leave it all to marinate for as long as you have time for. I recommend at least an hour, which you can do at room temp. Any longer cover in the fridge (up to overnight). Stir everything every now and then if you can.

Cook the orzo in salted boiling water until al dente, then drain and rinse with cold water until completely cool. Give it a good shake to discard the excess water, then add into the bowl. Stir in the pepper and cucumber.

Stir in the juice of half a lemon (or to taste) then check for seasoning and adjust if needed. The lemon, salt and pepper give the final layer of seasoning, so be generous if you need to.

Love this recipe but I did switch out a couple of vegetables. I’m not big on green pepper and parsley. I used an orange pepper and baby arugula instead. It was delicious and family loved it.
