Greek Lemon-Garlic Roasted Potatoes

mini potatoes ((I used Yukon Gold))

olive oil

lemon

garlic (minced)

oregano

salt

black pepper

vegetable broth (or chicken broth)

Preheat the oven to 400 degrees F. Cut the potatoes in half and set in a 9X13 inch baking dish.

Drizzle the olive oil over the top. Then add the lemon zest, minced garlic, oregano, salt and pepper. Toss the potatoes to coat in seasoning.

Pour the lemon juice and vegetable broth in the side of the pan, being careful not to “washed” the seasoning off the potatoes. Roast for 30 minutes in the oven.

Flip the potatoes and place back in the oven for 25-30 minutes, until the potatoes are tender and the skin is starting to crisp.

Toss the potatoes in the glaze and serve. (Sprinkle with fresh parsley if desired.)

Greek Lemon-Garlic Roasted Potatoes Recipe - Our version of roasted Greek lemon potatoes features tender baby potatoes and lots of zesty garlic for a bright and tangy side dish.

Recipe video above. The idea behind this recipe is that the potatoes suck up the amazing lemon-garlic-oregano flavoured broth, then roasted until golden. These won't go super crunchy because of the way they're cooked - but you won't miss the crunch because they have flavour unlike any other ordinary roasted potato! 1.2 kg / 2.5lb potatoes (, starchy (Note 1))

chicken

/ 125 ml olive oil

/ 85 ml lemon juice

garlic (, minced)

Lemon wedges, fresh oregano leaves

Preheat oven to 200C/390F (standard) or 180C/350F (fan).

Peel potatoes and cut large ones into thick wedges - about 3cm / 1.2" thick - and medium ones into 3 (see photo in post).

Place in a roasting pan with all the other ingredients. Toss well.

Roast for 20 minutes. Turn potatoes, roast for a further 25 to 30 minutes until the liquid is mostly absorbed by potatoes/evaporated and you're left with mainly oil in the pan.

To crisp the potatoes (optional): Transfer potatoes to a separate tray. (Note 3) Tilt the original roasting pan and scoop off as much of the oil as you can (some juices is ok), then drizzle over the potatoes.

Transfer potatoes to oven and roast for 20 - 25 minutes, turning once or twice, until potatoes are golden and a bit crispy.

Return the pan with the garlic juices to the oven for the last 5 - 10 minutes or so to reduce down and make the garlic golden. (Optional, Note 4)

Transfer potatoes to serving platter. Drizzle over the reduced garlic pan juices (or toss potatoes in the pan). Serve, garnished with lemon wedges and oregano if desired.&nbsp;

Crispiest Greek Lemon Potatoes Recipe (Patates Lemonates)

To prepare these extra crispy Greek lemon potatoes, cut the potatoes into wedges and place them on a large metal roasting pan. Into a bowl add the remaining ingredients (including the semolina and the 150ml of water) and blend; pour the semolina-lemon mixture over the potatoes and season well with salt and pepper.

Bake for 40 minutes, until a nice golden crust has formed on the potatoes; turn them out of the oven, toss them a little bit to bring them upside down, sprinkle with a pinch of oregano and put back into the oven for another 30-40 minutes. If all of the liquid has been absorbed and the pan appears to be getting dry, add 1/4-1/2 of a cup hot water into the pan or some extra lemon mixture, before they have fully browned

The secret for these extra crispy Greek lemon potatoes is to sprinkle the potatoes with some semolina, as it helps to form a nice golden crust around them. Don&#8217;t be afraid of over baking them- they will become even more delicious!

½ lbs baby potatoes ((1 1/2 lb bag))

Preheat your oven to 425 F degrees. Spray a large baking sheet with cooking spray and set aside.

In a medium size bowl, toss the baby potatoes with the 2 tbsp of olive oil, rosemary, oregano, parsley, and season with salt and pepper.&nbsp;

Place the salmon fillets onto the prepared sheet pan. Drizzle with 1 tbsp of olive oil and season with salt and pepper on both sides.&nbsp;Arrange the potatoes on the pan in between the salmon fillets. Place a lemon slice on top of each salmon fillet, for additional lemon flavor.

Place the sheet pan in the oven and bake for 20 minutes.

Meanwhile, In a bowl whisk together the yogurt, mayonnaise, horseradish,&nbsp;lemon juice,  dill, shallot, salt, and pepper. Cover with plastic wrap and refrigerate until ready to use.

Remove the lemon slices from the salmon fillet and top with a couple tbsp of the dill sauce. Serve along with roasted potatoes.

In a large bowl, soak cut potatoes in cold water. Drain well and pat dry,

In a small bowl, whisk together olive oil, lemon juice, garlic powder, oregano, salt, and pepper.

In a large bowl, combine the potatoes and olive oil dressing. Toss well until evenly coated.

Arrange potatoes in a single layer on the air fryer rack and roast in the air fryer at 400 F for about 10 minutes. Toss the potatoes and cook for another 10 to 12 minutes.

Remove from the air fryer and garnish with chopped fresh parsley before serving.

Place the potatoes, lemon juice, ¼ cup of the olive oil, salt, pepper, oregano, garlic, and red pepper flakes to a large baking dish and toss to coat.

Greek Style Potatoes [Spicy Tomato Sauce!]

Yukon gold potatoes (quartered)

Tomato passata

tsp Cinnamon

tsp Oregano

tsp Nutmeg

tsp Chilli flakes

Parboil the potatoes

In a large pot of salted, boiling water, boil the potatoes until they are fork tender. Drain, and put in a large stainless steel skillet.

Top with remaining ingredients

Top the potatoes with the remaining ingredients, and stir to ensure everything is well coated and combined.

Simmer Potatoes

Simmer the potatoes on medium-low heat with the lid on, for 15-20 minutes.

Delicious roasted potatoes that can be made in a single casserole dish with the right combination of seasonings.

Preheat the oven to 400F. In a 9x13 casserole dish, add the vegetable broth, olive oil, lemons, garlic, oregano, mustard, dill and salt. Stir until fully combined. 

Add the sliced Yukon gold potatoes, and toss. Bake uncovered for 1 hour and 10 minutes, until the potatoes are fork tender. Stir halfway through making sure the potatoes are coated in the lemon olive oil mixture. 

Remove from the oven and finish with fresh parsley and flakey salt, as desired. 

These potatoes will be your new favorite side dish. They are crispy on the outside, soft and lemony on the inside. This is what potato dreams are made of and I highly recommend you give this recipe a try.

Preheat the oven to 400F (200C). I have also baked these at 425F (220C) and both temperatures work.

Peel the potatoes and reserve the skins for making my crispy potato skins recipe which is on the blog and linked in my notes below as well. Cut each potato in half and cut each half into 3 wedges.

Bring a large pot of water to a boil over high heat. Add the potatoes and boil for 6 minutes.

Drain the potatoes and transfer them to a baking dish. Add the olive oil, dry oregano, unpeeled garlic cloves, lemon juice, mustard, if using, and season with salt. Give everything a gentle mix. You can let the potatoes marinate for 1 to 2 hours or bake them right away.

Bake for 60 to 75 minutes, or until golden and crispy. Mine took exactly 75 minutes.

Top the potatoes with feta and fresh oregano. Enjoy!

Where are the 'crispy potato skins'? or the link? Otherwise, the potatoes are good; I added chopped up chunks of carrots to the boil and bake, awesome. Then, Dumb A** forgot the Feta.
