Nut Free Pesto Basil Sauce

70 g Basil leaves (Fresh)

g Parmesan Cheese (Grated)

tbsp Extra Virgin Olive Oil

Garlic (Garlic Puree)

Salt & Pepper

Lemon (Juice)

Basil

Add basil leaves, parmesan and garlic into a food processor

Process

Process the mixture in short bursts until well chopped.

Add olive oil, a squeeze of lemon juice, salt and pepper to taste.

Blend

Food Processor or Hand Blender Method

Prepare

Chop the basil, add to pestle and mortar with the parmesan and garlic puree. Grind to make a thick paste.Add olive oil, salt, pepper and a squeeze of lemon. Continue to grind until at desired texture

Green Pasta Sauce

10 oz bag spinach

olive oil

garlic,

Parmesan cheese

vegetable stock (or chicken stock

oz cream cheese

spaghetti (or other pasta)

salt and pepper

Boil spaghetti according to package directions.

While pasta is cooking, add olive oil to large skillet over medium heat. Stir in minced garlic and saute for 1-2 minutes. Add in spinach and cook until it wilts.

Add cooked spinach to a food processor or blender. Add in cream cheese, Parmesan cheese, broth, salt and pepper. Blend until sauce is formed.

Add sauce and drained, cooked pasta back into skillet and toss.

Serve warm with extra grated Parmesan cheese.

GREEN PASTA SAUCE // GREEN SAUCE FOR PASTA

Give homemade mac and cheese extra oomph with this power-packed Green Pasta Sauce. It is cheesy, has a dose of greens, and is super easy to make.

Easy Green Pasta Sauce

cauliflower florets ((fresh

baby spinach

milk

cheddar cheese

butter

salt ((optional))

garlic powder ((optional))

pasta ((such as elbow

Parmesan cheese, cracked black pepper ((optional))

Bring a large pot of water to a boil. Add the cauliflower and cook for about 6 minutes or until soft when poked with a fork.

Use a fine-mesh strainer or slotted spoon to remove the cauliflower and add to a blender. Add the spinach milk, cheese, butter, salt, and garlic powder if using. Blend until smooth.

Meanwhile, add the pasta to the boiling water from Step 1 and cook according to package directions. Drain and return to the pot.

Stir the cheese sauce into the pasta and serve warm, topped with cracked black pepper if desired.

A two-in-one recipe for homemade green pasta a delicious whole-food vegan pasta sauce.

Homemade Green Pasta

all-purpose flour (or pasta flour)

tbsp extra virgin olive oil

greens (heaping, I used parsley)

garlic

water

tbsp cashews (or sunflowers seeds)

edamame (thawed)

If making your sauce, prepare it first. In a blender, add the greens, garlic, water, cashews and edamame, and blend until smooth.

For the pasta, in a food processor, add the flour, greens and oil. Process until you achieve a “dough ball”. 

Transfer to a floured surface, and knead for a couple of minutes, forming into a flat disk shape. 

Bring a large pot of water to a boil, then using scissors, slice the disk into approximately 1 inch long “noodles”. Transfer to the boiling water, and cook for 4 to 5 minutes, until soft. 

Once cooked, transfer to a pan over medium heat with the sauce. Combine everything and then serve with black pepper, red chili flakes and vegan parm as desired. 

A delicious, simple, under-30-minute dinner than anyone can make!

Easy Broccoli Pasta

broccoli

olive oil (or vegetable broth)

garlic (minced)

tsp black pepper

salt

oz bow tie pasta

pasta water (reserved from cooking)

yeast

lemon (juiced)

Bring a large pot of water to a boil. Add the broccoli, and cook for five minutes until soft. Using a spatula, transfer the broccoli to a pan over low heat, reserving the water in the pot. 

Cook the pasta in the remaining broccoli water according to package directions, reserving at least 1 1/2 cups of the pasta water when you drain. 

Now, in the pan with the broccoli, add the olive oil and garlic. Saute until you can mash up the broccoli, almost into a pesto-like sauce. You can add some water a tablespoon at a time to thin the broccoli floret sauce, as needed. 

At this time, add the drained pasta, nutritional yeast, salt, pepper and lemon juice. Stir, adding the reserved pasta water 1/4 cup at a time as needed. 

A good for you green pasta sauce that is creamy, luscious and of course, completely delicious! Topped with golden brown panko crumbs.

Delicious Spinach Pasta Sauce

panko breadcrumbs

garlic (finely chopped)

dried pasta pasta

spinach (I used baby spinach)

lemon juice

g parmesan (finely grated)

sea salt

black pepper

Heat the olive oil in a fry pan over medium heat.

Add the panko crumbs and mix with the oil, then toast, moving them around so they don't burn.

Add a big pinch of salt and pepper.

After 3 - 4 minutes add the garlic and toast for a further 4 - 5 minutes until golden brown. See the pictures above to see the crumbs before and after.

Yours might take more or less time, it depends on the heat. Stop when deep golden brown.

Set aside.

FOR THE BREADCRUMBS

Get your pasta cooking in a pot of well salted boiling water. You'll need some of the pasta water to blend the spinach so if you cook the pasta first, reserve a good cup of the water.

At the same time as cooking your pasta heat the olive oil over medium heat in a fry pan big enough to fit all the pasta in at the end.

Add the garlic and let sizzle for 30 seconds, moving it around so it doesn't burn.

Add the spinach and let it cook until wilted, around 5 minutes. Add a big pinch of salt and pepper. Turn the heat down if it is too hot.

Using a high speed blender (or a stick blender, whatever you have) blend the spinach and garlic with 1/2 cup pasta water until really smooth.

Add the lemon juice, parmesan and salt and pepper and blend again until well combined.

Taste the sauce and season to taste, this sauce needs a lot of salt.

Pour the sauce into the fry pan and heat over a medium - low heat and add your cooked pasta straight in.

Let it gently bubble for a minute or so in the sauce, add a splash of pasta water if it needs.

Serve with extra grated parmesan and the garlic crumbs on top.

I love some lemon zest on top too, that is an optional topping.

FOR THE PASTA

This green pasta sauce comes together in 20 minutes with just a few ingredients, one pot, and a blender. And It will get your child eating spinach and lots of it too! 

Green Pasta (Hulk Pasta)

extra virgin olive oil

avocado

lemon zest

garlic garlic powder

grated parmesan (2 ounces)

water, broth, coconut milk

pasta

Cook pasta according to package instructions. Reserve 1 cup of pasta cooking water and drain.

Add the rest of the ingredients into a food blender and blend until smooth.

Pour the sauce into the same pot you cooked the pasta in. Cook over medium-low heat for 2-3 minutes, stirring frequently. Add some reserved pasta water if it gets too thick.

Add pasta and toss. Top with additional parmesan cheese or lemon juice, as desired.
