salt ((optional))

garlic powder ((optional))

pasta ((such as elbow

Parmesan cheese, cracked black pepper ((optional))

Bring a large pot of water to a boil. Add the cauliflower and cook for about 6 minutes or until soft when poked with a fork.

Use a fine-mesh strainer or slotted spoon to remove the cauliflower and add to a blender. Add the spinach milk, cheese, butter, salt, and garlic powder if using. Blend until smooth.

A two-in-one recipe for homemade green pasta a delicious whole-food vegan pasta sauce.

Homemade Green Pasta

all-purpose flour (or pasta flour)

tbsp extra virgin olive oil

greens (heaping, I used parsley)

garlic

water

tbsp cashews (or sunflowers seeds)

edamame (thawed)

If making your sauce, prepare it first. In a blender, add the greens, garlic, water, cashews and edamame, and blend until smooth.

For the pasta, in a food processor, add the flour, greens and oil. Process until you achieve a “dough ball”.

Transfer to a floured surface, and knead for a couple of minutes, forming into a flat disk shape.

Bring a large pot of water to a boil, then using scissors, slice the disk into approximately 1 inch long “noodles”. Transfer to the boiling water, and cook for 4 to 5 minutes, until soft.

Once cooked, transfer to a pan over medium heat with the sauce. Combine everything and then serve with black pepper, red chili flakes and vegan parm as desired.

A delicious, simple, under-30-minute dinner than anyone can make!

Easy Broccoli Pasta

broccoli

olive oil (or vegetable broth)

garlic (minced)

tsp black pepper

salt

oz bow tie pasta

pasta water (reserved from cooking)

yeast

lemon (juiced)

Bring a large pot of water to a boil. Add the broccoli, and cook for five minutes until soft. Using a spatula, transfer the broccoli to a pan over low heat, reserving the water in the pot.

Cook the pasta in the remaining broccoli water according to package directions, reserving at least 1 1/2 cups of the pasta water when you drain.

Now, in the pan with the broccoli, add the olive oil and garlic. Saute until you can mash up the broccoli, almost into a pesto-like sauce. You can add some water a tablespoon at a time to thin the broccoli floret sauce, as needed.

At this time, add the drained pasta, nutritional yeast, salt, pepper and lemon juice. Stir, adding the reserved pasta water 1/4 cup at a time as needed.

A good for you green pasta sauce that is creamy, luscious and of course, completely delicious! Topped with golden brown panko crumbs.

Delicious Spinach Pasta Sauce

panko breadcrumbs

garlic (finely chopped)

dried pasta pasta

spinach (I used baby spinach)

lemon juice

g parmesan (finely grated)

sea salt

black pepper

Heat the olive oil in a fry pan over medium heat.

Add the panko crumbs and mix with the oil, then toast, moving them around so they don't burn.

Add a big pinch of salt and pepper.

After 3 - 4 minutes add the garlic and toast for a further 4 - 5 minutes until golden brown. See the pictures above to see the crumbs before and after.

Yours might take more or less time, it depends on the heat. Stop when deep golden brown.

Set aside.

FOR THE BREADCRUMBS

Get your pasta cooking in a pot of well salted boiling water. You'll need some of the pasta water to blend the spinach so if you cook the pasta first, reserve a good cup of the water.

At the same time as cooking your pasta heat the olive oil over medium heat in a fry pan big enough to fit all the pasta in at the end.

Add the garlic and let sizzle for 30 seconds, moving it around so it doesn't burn.

Add the spinach and let it cook until wilted, around 5 minutes. Add a big pinch of salt and pepper. Turn the heat down if it is too hot.

Using a high speed blender (or a stick blender, whatever you have) blend the spinach and garlic with 1/2 cup pasta water until really smooth.

Add the lemon juice, parmesan and salt and pepper and blend again until well combined.

Taste the sauce and season to taste, this sauce needs a lot of salt.

Pour the sauce into the fry pan and heat over a medium - low heat and add your cooked pasta straight in.

Let it gently bubble for a minute or so in the sauce, add a splash of pasta water if it needs.

Serve with extra grated parmesan and the garlic crumbs on top.

I love some lemon zest on top too, that is an optional topping.

Ridiculously easy and yummy for a quick Monday night dinner! I only had roasted cashews. Seemed to work just fine! (Why do some recipes call for raw anyhow?) Thank you, Nora!

Thanks Nora, this was a tasty hit in our house tonight - everyone came back for seconds!

Hi Nora,

What can I do if the sauce turned out too liquidy?

I used about 70 grams of cashews.. is that about half a cup?

Many thanks in advance!

Ps: it smells great though!

Wonderful. Like all your recipes this dish was amazing doubled it so we could have leftovers

Nora- this is great!!! Even my non vegan husband loved it . Thanks again for a great easy dinner.
I’ve always loved your website- we are both nurses.

I made this with quinoa fusilli twice now and I can’t get enough, I can’t stop myself from licking the spoon! So yummy and a fun bright color. Very easy too.

Knocked it out of the park again, Nora! I had a bit of red onion in the fridge that I sauteed with the garlic and also tossed a small bit of arugula in the blender with everything. It turned out incredible!

We have made this too many times to count - it's SO GOOD! Keeps well. I'm sure it would be delicious over veggies (think broccoli or cauliflower with this over top), but we always have it with pasta. Huge fan.

I had to come back again after making this today for the third time, now and share some tweaks I tried. I had half kale and half baby spinach this time and went ahead as usual otherwise. YUM! Half of that dish leftover for lunch today, I reheated the green pasta and had some coconut milk open, and decided to toss in a bit to revive it and see. YUM!!! Added a bit of red pepper flakes and really enjoyed!! Great recipe, Nora. All of yours have been brilliant!! Thank you for making our lives more tasty with these healthy ideas of yours.

Another hit! Easy, delicious, and kind of exotic looking.

this is my new go to for a quick delicious dinner! i love how versatile it is! i add or change things depending what i'm craving or what i need to get out of my fridge! i seriously cannot overstate how much i love this recipe and how often i use it!!

Everyone needs more greens in their lives. This ultra-simple pasta sauce featuring frozen broccoli and spinach from chef Catherine Flynn is the ideal way to get your greens in...and enjoy it! Perfect for a quick weeknight meal that checks all the boxes.

Green Pasta With Lemon and Pecorino

450 g paccheri (or other pasta)

tbsp olive oil

broccoli florets

vegetable broth (or chicken broth

basil

35% cream (or labneh)

Basil Oil (for drizzling)

Bring large saucepan of salted water to a rolling boil over high heat. Cook pasta for about 2 minutes less than the package recommends. Scoop out and reserve ½ cup of the pasta water. Drain pasta. Drizzle it with olive oil and toss so it doesn't stick together.

Return empty saucepan to burner and turn heat up to high. Add olive oil and broccoli. Cook for 2 minutes, stirring occasionally, until broccoli turns bight green. Add garlic cloves. Cook for 1 minute. Add broth and bring to a boil. Add spinach. Stir to wilt spinach. Turn off heat.

Using slotted spoon, transfer broccoli, garlic and spinach to high-speed blender along with basil. Pulse to combine. With blender running on low speed, slowly pour in any broth remaining in pot after you scooped out the vegetables and then pour in cream. If you're using labneh instead of cream, add about half of the reserved pasta water and purée until smooth. Season with salt to taste.

Transfer broccoli sauce back to saucepan. Add pasta. Cook over low heat for 2 minutes, stirring to coat pasta in sauce. Add lemon juice and pecorino cheese. Stir in to combine. The pasta should be quite saucy, so if it's looking a little dry, add another splash or two of reserved pasta water and stir to combine.

Divide pasta among bowls. Garnish with more pecorino cheese, black pepper to taste and basil oil. Serve immediately. Store leftovers in an airtight container in the fridge for up to 5 days.
