Grilled Chicken with Spinach and Melted Mozzarella

oz 3 large chicken breasts sliced in half lengthwise to make 6

oz frozen spinach (drained)

oz shredded part skim mozzarella

Preheat oven to 400°F. Season chicken with salt and pepper. Lightly spray a grill or grill pan with oil. Cook chicken until no longer pink, about 2 to 3 minutes per side.

Heat a skillet over medium heat. Add oil and garlic, sauté a 30 seconds, add spinach, salt and pepper. Cook until heated through, 2 to 3 minutes.

Place chicken on a baking sheet, divide spinach evenly between the 6 pieces and place on top. Top each with 1/2 oz mozzarella, roasted peppers and bake until melted, about 3 minutes.

Today I am showing you how to make grilled chicken breasts on the stovetop with a grill pan. This has been one of the most popular recipes.

Grilled Chicken Breasts - Easy Grill Pan Method

Preheat oven to 350 degrees F.

Add seasonings to both sides of the raw chicken breasts.

Spray indoor grill pan with cooking spray, and preheat on the stovetop over medium high heat for about one minute.

Place the chicken breasts on the hot grill pan.

Cook on the first side for about 4 minutes, and turn the chicken breasts over on the other side.

Cook on the second side for about two minutes, and then place the grill pan into the preheated oven. (Note: you can transfer to any other baking dish if you need to. For example, if your grill pan won't fit in your small oven)

Cook in the oven for about 20 minutes, until chicken is cooked all the way through.

Let the chicken rest for 5 minutes before serving.

Store leftovers in the refrigerator.

This grilled chicken breast recipe is boneless skinless chicken breasts soaked in a flavorful garlic and herb marinade, then grilled to golden brown perfection. A staple recipe that&#x27;s perfect for summer entertaining!

Grilled Chicken Breast

Place the chicken breasts in a bowl or resealable gallon sized bag.

In a medium sized bowl, whisk together the olive oil, brown sugar, soy sauce, lemon zest, parsley, thyme, salt, pepper and garlic.

Pour the marinade over the chicken. Marinate for at least 1 hour, or up to 24 hours.

Heat an outdoor grill or indoor grill pan to medium. Add the chicken in a single layer.

Cook for 6-8 minutes per side, or until a thermometer inserted into the thickest part of the chicken registers 165 degrees F.

Let the chicken rest for 5 minutes. Sprinkle with additional parsley for garnish, then slice and serve.

BBQ Chicken Thighs

BBQ sauce

Apply the dry rub to the thighs and refrigerate overnight, or for at least 2 hours.

Remove the chicken from the refrigerator to bring up to room temperature while you set up the grill for two-zone cooking with the direct side on medium-high.

Lightly oil cooking grates, then place the chicken thighs skin-side down over direct heat with the lid closed until browned, about 3 to 5 minutes. Turn thighs over and cook on the second side until browned.

Move the thighs over to the indirect heat side of the grill and use a heatproof basting brush to apply about 1/2 cup of BBQ sauce to both sides of the chicken (finish with skin side up).

Close the lid and cook for about 20 minutes before brushing both sides again with about 1/4 cup more BBQ sauce.

Continue to cook until the internal temperature of the thighs reaches 175° F, about 20 minutes longer. (Verify with a probe thermometer.)

Transfer the chicken to a cutting board or serving platter and rest uncovered for 10 minutes before serving with more BBQ sauce.

Caesar-Marinated Chicken Kabobs with Zucchini and Grilled Romaine

¼ pounds skinless boneless chicken breast

zucchini

heads romaine

½ tsp kosher salt

Add the anchovies and pepper to a large bowl and use your fork to mash into a paste.

Add the cheese, lemon juice, yogurt, 1 Tbsp olive oil, mustard, and pepper and stir to combine.

Reserve half for serving.

Add the diced chicken to the bowl with the remaining dressing and stir to coat.

Set aside to marinate at room temperature for 30 minutes or refrigerate overnight.

To make the Caesar marinade

If using wooden skewers on an outdoor grill, soak them in water for at least 30 minutes.

Trim the ends from the zucchini, halve it lengthwise, and cut it into semicircles between ½- and 1-inch thick.

Separately, cut the romaine in half (if using small heads) or quarters (if using a large head), leaving the root ends intact.

Lightly spray or coat the cut sides with oil.

Thread the chicken onto doubled skewers, alternating every few pieces with a slice of zucchini, for a total of 4 kabobs. Place the kabobs on a large plate or baking sheet and, when they’re assembled, season lightly with salt.

Preheat the grill with medium-high heat and oil the grates. Grill the kabobs for 6 to 8 minutes total, turning every 2 to 3 minutes, until the chicken is cooked through and well browned.

When the chicken is done, grill the romaine flat side down until it’s lightly charred in places but still bright green and crisp, about 30 seconds per side.

Serve the romaine alongside the kabobs and drizzle the remaining marinade over both.

Remove the chicken from the marinade and discard extra marinade. Grill chicken for 5-8 minutes per side, until cooked through. The internal temperature of the chicken should reach 165 degrees F. For the best grill marks and juicy chicken, begin cooking the chicken on a hotter part of the grill for a few minutes and then move it to lower heat to finish cooking through.

Let chicken rest for 5 minutes before serving.

Guess what just happened? I'll tell ya what just happened! I made this chicken and it is wonderful! This morning I cut up the chicken breast into small chunks and sprinkle the  rub all over it and put it in the fridge until I got home this evening and cooked it. Added a little canola oil to a pan. I added some herbs to it, thyme and basil. 1/4tsp hot chilli powder for kick. Ranch sauce on the side. Mixed some in. 9/10 with veggies garlic and onions in a wok.

Outrageously good.  I add a few things like a bit of Chipotle or African Cayenne to give a touch of ''zing''.  I have a dual infra-red and conventional bbq so I zap it about 90 seconds on each side at over 1000 degrees then wrap and seal it in foil on the top shelf, about a 400 deg bbq for 7-12 mins, depending on breast size.   I use my handy=dandy remote reading thermometer and as soon as it hits 160F it's outta there........gains a few more deg to make 165.  It will dry out very quickly if you cook it too long.  When cooked just long enough, it is incredibly flavorful, tender and juicy.   Our favorite way to serve is on a hollowed out Costco Kirkland sandwich roll with a mayo/chipotle power dressing.   It was so good I bought bulk qtys of the ingredients, made a 5 pound batch (thats A LOT of chicken breasts) and gave it to friends as gifts.  They're still thanking me (probably campaigning for more truth be known).  While the ingredients are fairly plebeian, the recipients think its made of cardamom and saffron......  I also added a bit more salt, a finer grain kosher as I like the crusting effect on the high temp bbq.  I can't thank you enough for this recipe, it is now the only way we care to eat chicken, at least grilled.
