This Lamb Kofta recipe packs a ton of flavor. The ground lamb is seasoned with a mixture of dried spices and fresh herbs, then grilled to perfection. Serve these Lamb Koftas with basmati rice, or get yourself a spread going and add tomatoes, cucumbers, lettuce, hummus and tzatziki.

Lamb Kofta

vegetable oil, divided

small shallot, minced (about 3 tablespoons)

garlic cloves,

(or ground) ginger

cumin

coriander

lamb

parsley,

mint leaves, finely chopped

salt and black pepper

Place small skillet over medium-high heat. Once skillet is hot, add 1 teaspoon oil. Add shallot, garlic and ginger (if using fresh minced) to skillet and sauté for 4 to 5 minutes.

Add cumin and coriander (and ginger, if using dry ground) and continue to sauté for 1 minute. Lightly season with salt and pepper. Remove shallot mixture from heat and slightly cool, about 10 minutes.

In a large mixing bowl combine ground lamb, shallot mixture, parsley, and mint. Season with salt and cracked black pepper.

Mix together until fully combined.

Divide mixture into 6 equal portions and with wet hands form each portion of lamb into a 1 ½” by 7” log. Press a skewer into the center of each lamb log and form the meat around the skewer until secure, leaving about a 4” handle on the bottom and a 1” handle on top.

Place large grill pan over medium-high heat. Once pan is hot, brush with remaining oil and add skewers, about 1” apart. Grill skewers on each side, for 6 to 8 minutes or until just cooked through, with nice grill marks. Remove from heat, transfer to a platter

Serve with a bed of basmati rice and a romaine, cucumber and tomato side salad and hummus of choice. Serve.

The Genghis Khan Recipe is a genuine Japanese recipe. Japanese people call this dish Jingiskan (ジンギスカン). It is a grilled lamb or mutton dish with vegetables, cooked in a special metal skillet. But you can cook it in a frying pan or a large griddle pan.If you marinate the meat previous day, you can make it in 15 minutes.Marinating time is not included as it can be between 1 hour to 24 hours. Cook time assumes that the lamb slices are cooked all at once. Genghis Khan Recipe

bean sprouts

/ 1.1 ounces carrot diagonally sliced thinly

tbsp oil

1⅓ tbsp soy sauce

1⅔ tbsp cooking sake

mirin

apple juice

Mix the Marinade ingredients in a bowl. Put aside 1 tablespoon of the sauce.

Add the sliced lamb to the bowl of the remaining sauce and marinate the lamb for minimum 1 hour, preferably overnight.

Heat oil in a large frying pan (note 3) over medium heat. Add onion, carrot, and capsicum. Sauté for about 1½ minutes.

Add bean sprouts to the pan and sauté for a minute. Add the reserved sauce to the pan and mix.

Shift the vegetables to the outer edge of the pan, making a ring shape so that the centre part of the pan is free to cook the meat.

Spread the lamb pieces in the centre of the pan, without overlapping where possible. Cook for a few minutes until the edges of the lamb pieces start changing colour.

Flip the lamb pieces over and cook for a couple of minutes. As the lamb pieces get cooked, I place them on the vegetables so that the juice from the lamb drops onto the vegetables.

Turn the heat off and place the pan on the table.

An easy meal that&#039;s ready in minutes, Grilled Rack of Lamb is simple to prepare and a fantastic dinner for any occasion.

Grilled Rack of Lamb

Combine the olive oil and lemon juice in a small bowl.

Brush the entire surface of the lamb with the olive oil and sprinkle liberally with salt/pepper.

Prepare the grill by heating to high heat (approximately 400˚F.)

Place the lamb on the grill grates over direct heat with the bone side up.

Grill the lamb with the lid open for 4-5 minutes. Flip the rack over and cook on the opposite side for an additional 4-5 minutes.

Turn the grill to low or move the rack to an area of indirect heat. Close the lid and continue cooking for an additional 10-15 minutes depending on the size of your lamb.

Remove the lamb when the internal temperature reaches 125˚F for medium rare.

Transfer the lamb to a platter and cover with foil. Rest for 10 minutes.

Cut the lamb in between the bones and serve immediately.

This easy Grilled Rack of Lamb recipe is perfect for your next BBQ. Rich, smoky grilled lamb that’s so tender &amp; juicy! It’s a delicious, quick and easy dinner that’s sure to impress. 

Grilled Rack of Lamb Recipe

lamb (3-3 1/2 pounds total, rib bones frenched)

garlic (grated

Tablespoons minced fresh rosemary

Tablespoons lemon juice lemon

½ teaspoons kosher salt (plus more to season)

black pepper (plus more to season)

Combine the olive oil, garlic, rosemary, lemon juice, lemon zest and salt & pepper in a small bowl.

Pour the mixture over the racks of lamb and let marinate at least 30 minutes, or up to overnight.

When ready to grill, allow the lamb to come to room temperature (about 20-30 minutes) while you preheat your grill. Season the racks with salt and pepper.

Prepare grill for high heat (450°F).

Cover the bones of the lamb with foil (to prevent charring) and place on grill, fat side down. Close grill and let cook for 7 minutes, flip and cook for another 5 minutes, or until the internal temperature reaches 145°F for medium-rare (or see below).

Remove from grill and let lamb rest 10 minutes. Cut into individual chops.

I always double the marinade recipe because my family loves to have plenty to add to the cooked lamb at serving time.

Butterflied and Marinated Leg of Lamb

lemon juice

brown sugar

Dijon mustard

soy sauce

pepper

ginger root (unpeeled)

leg of lamb (boned and butterflied (5 to 6 pounds boned weight))

Combine the first 8 marinade ingredients in a blender. (I use the blender but a whisk could also be used.)

Set aside a small amount of marinade (about 1/2 cup or more if you doubled the recipe) for drizzling on the lamb at serving time.

In a large container, combine the remainder of the marinade, ginger root, and lamb and marinate the lamb for a minimum of 2 hours in the refrigerator. I usually marinate the lamb overnight. Turn the meat in the marinade at least once.

Remove the lamb and discard the marinade and ginger.

Pre-heat the oven to 450°F or prepare coals or gas barbecue.

Place lamb on a rack, fat side up, and roast for 20 minutes.  Turn the lamb over and roast another 20 minutes more. This timing is approximate. Use a thermometer to determine how long you cook the lamb. This depends on the doneness that you prefer.

In the oven:

Place grill 4 to 5 inches above the coals or flame and grill, fat side down, covered, for 15 minutes.  Turn meat and grill, covered, about 15 minutes more on the other side.

Lamb should be slightly pink inside.  Be sure to check the temperature as different thicknesses will require more or less cooking time.  (USDA Recommendation - rare at 135ºF, medium-rare at 145ºF, and medium at 155ºF.)

To use the reserved marinade as a sauce, warm it on medium low heat in a small saucepan. 

To serve, cut the lamb in slices against the grain and pass the warmed sauce to drizzle on top of the sliced meat.

On the barbecue:

A butterflied boneless leg of lamb on the grill is surprisingly low-effort, high-reward with tons of smoky-herby flavor and a delicate texture. For a simple Sunday supper or a big holiday feast, it&#39;s a showstopper.

Grilled Leg of Lamb Recipe

shallots, chopped

garlic cloves, chopped

tsp fresh thyme, chopped

tsp fresh rosemary, chopped

Ground pepper

Red pepper flakes (optional)

Olive oil

Trim excess fat and remove silverskin using a sharp knife. Score the top layer of fat in a 1/2&quot; crosshatch pattern, being careful not to slice into the flesh.

Using a meat pounder, or the back of a heavy skillet, pound the butterflied lamb leg so it is relatively even.

Season all sides very liberally with kosher salt.

Make the marinade paste by blending all marinade ingredients together with an immersion blender or food processor or use a mortar and pestle.

Spread the paste all over the lamb leg on a sheet pan. Cover tightly with plastic wrap and refrigerate for 12 hours or preferably 24 hours.

Remove the lamb from the refrigerator to temper for about 30 minutes while you set up the grill. Insert a remote thermometer probe through the side of the thickest part of the meat.

Prepare the grill with a two-zone setup and bring the temperature up to 400° F. Preheat and add wood chips for extra smoke if desired. Clean and oil the grill grates using a canola oil-soaked paper towel and tongs.

Sear the leg (fat side down first) on the hot side of the grill for about 4 minutes per side to get a flavorful golden crust, then transfer to the cooler side of the grill and close the lid.

Continue to cook to an internal pull temperature of 125 to 130°F for medium-rare** (will finish at 130-140° F) or 130 to 135° F for medium (will finish at 135-145° F). This will be approximately 12 minutes per pound. Use an instant-read thermometer to verify doneness. The temperature will continue to rise 5 to 10 degrees after it is off the grill, so pull from the grill before it reaches the desired finished temperature.

Transfer to a cutting board and rest for 15 to 20 minutes.

Carve the lamb leg by slicing against the grain. Enjoy!

Mint Chimichurri Lamb Chops

mint leaves

lamb chops (about 1 1/2-2" thick)

zucchini

squash

sweet peppers

mint leaves (finely minced)

parsley leaves (finely minced)

tarragon leaves (finely minced)

shallot (finely minced)

red wine vinegar

Combine all ingredients in a mini food processor or blender and blend until smooth.

For The Marinade:

Pat the lamb chops dry with a paper towel. &nbsp;Pour half of the marinade over the lamb and coat all sides evenly. &nbsp;Cover and refrigerate for an hour.

Coat the vegetables with the remaining marinade and let sit at room temperature for an hour.

For The Chops &amp; Vegetables:

In a small bowl, combine the chopped mint, parsley, tarragon, shallots, vinegar, olive oil, salt and pepper, whisk to combine and set aside.

For The Mint Chimichurri:

&nbsp;Preheat the grill to a medium high heat, about 425-450°. Take the lamb out of the fridge and let it warm up for about 10 minutes in the ambient air while the grill heats.

Place the lamb on the grill, followed by the vegetables and cook for 5-8 minutes until a nice char has developed on one side and the lamb releases easily. Turn the lamb and vegetables and continue to cook for an additional 5-7 minutes depending on the doneness you desire and the thickness of your chops. 130° for medium rare (that's how I like it.)

Transfer the lamb and vegetables to a serving platter. &nbsp;Serve, lightly napped with the mint chimichurri.

For Grilling:

This is simply wonderful. Made it last weekend for the family and not a scrap was leftover. The chimichurri is epic.

Really tasty and easy to make. We served with couscous.

My husband &amp; I love lamb chops, this recipe by far is our favorite!! The marinade &amp; sauce is excellent on both the lamb &amp; veggies. I also have substituted the tarragon with fresh oregano. So glad to have this in my recipes, it’s a WINNER!!

I love lamb chops but I love this recipe for lamb chops most of all. I love the flavor combination here, and I bet these were literally incredible.

I have never made lamb before but I've been itching to try it as I love the flavors of lamb and chimicurri.  I love your approach with the lamb chops because I am not comfortable cooking a leg of lamb just yet, maybe next Easter, but I think this would be a great introduction to me making this delicious dish at home.  Do you think if I make it, Mother Nature will get her act together and bring on the spring weather?!  Wishful thinking I know...

My husband and I were *just* talking about chimichurri yesterday! I *rarely* buy red meat since my husband has adapted pretty well to my pescetarianism and has sort of gradually forgotten about it (out of sight, out of mind?) but he still enjoys it at restaurants. Grilled Lamb Skewers BBQ Party

sumac spice (for sprinkling once cooked (optional))

mint leaves (chopped, for garnish (optional))

Peaches (lage, deseeded and sliced)

arugula (or your favorite greens)

red onion (thinly sliced)

mint leaves (coarsely chopped)

honey

Sumac spice

Perfect Tahini Sauce

Pita Breads

cucumber (sliced)

baby tomatoes

Harissa hot sauce

Start by making the lamb skewers. Add all the lamb ingredients (except the diced onion, sumac spice and mint garnisin a bowl. Mix well.

Note on the onion water/liquid. This is made by grating the onions and then squeezing out the water ONLY from the onions. Then use this onion water to flavor the lamb chunks. Don’t add in the grated onions because they burn on the grill and add an off flavor to the lamb!

Start skewering the lamb chunks with some onion pieces, alternating one lamb chunk and one onion slice.

Preheat your BBQ to medium high and start grilling the lamb skewers for 6-8 minutes on each side covering the lid of the BBQ.

When the lamb is done, set it aside for a couple of minutes before serving.

While the lamb is grilling, start preparing your plater. Make the salad by tossing the peaches, arugula, onions and mint together. Make the dressing using salt, lemon juice, olive oil and honey. Mix well and drizzle over the salad. Sprinkle sumac spice for a tangy finish to the salad (optional).
