Iceberg Lettuce

Large Loaf Crusty Italian Bread

oz Sliced Colby Jack Cheese

lb Salame

lb Capocollo

lb Honey Roasted Turkey Breast (thinly shaved)

oz Prosciutto

Beefsteak Tomato

Parmesan Cheese (thinly shaved-see blog notes)

In a large bowl add the salad dressing ingredients. Pour the mayonnaise, garlic paste, seasoning blend, parmesan, pepperoncini and red wine vinegar.

Stir until combined.

Next, pour in the shredded iceberg lettuce and using tongs, toss until the salad is thoroughly coated. Set aside until later use.

Grinder Salad

While the grinder salad marinates, prep the hoagie by preheating your toaster oven, oven or air fryer to 425 degrees.

Slice the hoagie roll through the middle.

Layer the sliced cheese, deli meats and toast for 8-10 minutes until the cheese is bubbly and bread is toasted.

Take the sliced tomato and add on top of the baked deli meats.

Season tomatoes with a little salt and pepper.

Top the seasoned tomatoes with the grinder salad and additional grated parmesan.

Lastly, fold the top of the bread over the grinder sandwich, &quot;smush&quot; the sandwich (for good measure) and enjoy!

Using an immersion blender, blend together all vinaigrette ingredients until a smooth sauce has formed. Taste for seasoning and reserve.

In a small bowl, toss salad greens in a tablespoon or two of vinaigrette and set aside.

Cut bread in half and scoop out thick bread parts.

Liberally brush vinaigrette on both sides of the bread, evenly spreading the vinaigrette from end to end.

To assemble, use half of each ingredient and layer roast beef, mozzarella, basil leaves, salami, pepperoncini, dressed greens, turkey and red onion. Repeat with other half and close the sandwich.

Using plastic wrap, wrap the sandwich very tight and let rest for 1 to 2 hours, up to overnight for best results.

(12 oz) jar peperoncinis, drained

Italian Sub Bites

In a small bowl, mix together cream cheese, Italian seasoning, garlic powder, salt, and pepper until smooth.

On a large cutting board place two tortillas side by side with the edges overlapping by a few inches.

Spread half the cream cheese mixture on the tortillas leaving a small border around the edges.

Place a layer of ham on top of the cream cheese layer, followed by a layer of salami, then cheese.

Sprinkle the peppers and basil on the lower two thirds, then tightly roll the wrap toward the top.

Secure the seam with toothpicks. Use a sharp knife to slice the wrap into portions.

Repeat process with remaining ingredients.

Preheat the oven to 350˚F.

Cut the hawaiian rolls horizontally. Lay the bottoms in a baking dish.

Layer the provolone cheese on the bread. Then add the ham, pepperoni, and salami on top. Place the tops back on the rolls and cut through the sandwiches between each roll.

Combine the butter, parmesan, garlic powder, and salt. Spread over the tops of the slider sandwiches. Bake for 15-20 minutes or until the cheese is melted and the tops are golden brown.

While the sandwiches bake, make the grinder salad by whisking together the mayonnaise, red wine vinegar, Italian seasoning, salt, pepper, and garlic powder to form a dressing.Toss the lettuce, tomatoes, and pepperoncini peppers together with the dressing.

Once the sandwiches are done, remove the tops, add the grinder salad and put the tops back on. Serve immediately.

Cook the plant based chicken or chosen protein

Add the dressing ingredients to a bowl and whisk together.  Then add the iceberg lettuce and banana peppers and mix together until nice and creamy

Add a teaspoon of olive oil along with salt and pepper to the sliced tomatoes to let them marinate

Slice the bread roll in half and if its quite thick, tear out some of the insideAdd a slice of cheese to each half and place in the oven or grill for a few minutes until the cheese has melted

Assemble the sandwich starting with the marinated red peppers, plant based chicken (or protein), iceberg salad, parmesan cheese and tomatoes. Place on the top, slice in half and enjoy!!

This Italian Grinder Chicken Salad combines all the elements you love about a Grinder sandwich and we turn it into a deliciously tangy chicken salad perfect for an easy lunch with crackers or veggies for dipping. Or, serve it up on toasted croissant for an amazing sandwich.

Italian Grinder Chicken Salad

rotisserie chicken (shredded)

pepperoni (diced)

provolone, thick-sliced (diced)

feta

grape tomatoes

banana peppers (mild)

onion

banana pepper juice

salt to taste (about 1/4 tsp)

Start by making the dressing. Combine all the dressing ingredients in a bowl or liquid measuring cup. Taste and adjust if needed**.

In a large bowl combine all of the toppings: rotisserie chicken, diced deli meats*, red onion, tomatoes, banana peppers, and cheeses.

Pour most the dressing over the bowl of toppings, toss well to coat, adding the remaining dressing if needed.

Store it in an airtight container in the fridge for up to 4 days. Serve with veggies, crackers or tortilla chips or on a sandwich.

If you have dressing leftover, store it in a sealed container in the fridge and add it to the chicken salad the next day if needed to rehydrate it. Some of the dressing gets absorbed as it sits in the fridge.
