Mediterranean-Style Baked Grouper with Tomatoes and Olives

lb grouper fillet (or a similar fish)

kosher salt

dry oregano

cumin

tsp sweet paprika

tsp black pepper

garlic cloves, minced

lemon,

virgin olive oil

oz cherry tomatoes, halved

kalamata olives, sliced

dill (about 1/4 oz or so)

Pat the fish dry and season with salt on both sides. In a small bowl, combine the spices (cumin, oregano, paprika, and black pepper), and season the fish with the spice mixture on both sides.

Place seasoned fish in a lightly-oiled baking dish. Add minced garlic on top, then add  lemon juice and a generous drizzle of extra virgin olive oil (I used Early Harvest Greek EVOO). Arrange cherry tomatoes and olives on top of the fish fillets.

Bake in heated oven for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork.

Remove from heat and add fresh dill (or your favorite herb). Enjoy!

I used fresh oregano instead of dried oregano. I topped the cooked fish with chopped basil.  The pan dripping made a great dipping sauce for fresh homemade bread.  Excellent!

Season grouper fillet with salt and pepper on both sides. Heat butter over medium heat in the skillet and saute minced garlic in it for 1 minutes.

Add grouper and cook for about 3 minutes on each side. Take the fish out and set aside.

Add lemon juice and parsley to garlic butter. Saute for a minute or two.

Top grouper fillet with lemon buter parsley mixture and serve.

Delicious! Made this last night using tile fish, which is similar to grouper. The seasoning combination with the brininess of the olives brought amazing flavor to the dish. Will definitely be making this one again.

Baked Grouper with Garlic Lemon Butter

Preheat the oven to 400 degrees.  Spray a baking dish with cooking spray.

Cut the lemon in half.  Cut half of the lemon into wedges to serve with the fish and use the other half for juice for the recipe.

In a small bowl, whisk together the butter, minced garlic and the juice from half of the lemon.

Place the fish in the baking dish and brush with the lemon garlic butter.

Sprinkle the fish with seasoning salt plus salt and pepper.

Bake the fish for 10-16 minutes until the fish is opaque and easily flakes with a fork.

Serve with the extra lemon wedges and fresh parsley.
