Adapted from the NY Times, this recipe for light brioche hamburger buns is perfect for BBQ fare, sandwiches (try bacon, egg &amp; cheese!) and so much more. You'll never buy from the store again!

Light Brioche Hamburger Buns

c. warm water

milk

active dry yeast

sugar

eggs

bread flour

all-purpose flour

salt

unsalted butter, softened

sesame seeds (optional)

Whisk together the warm water, milk, yeast and sugar. Then, beat 1 egg.

In the bowl of a stand mixer, add the flours, salt and butter. Using the paddle attachment, mix the ingredients until the butter is the size of crumbs.

Stir in yeast mixture and beaten egg. Run the mixer on medium-low (I used #3 on my Kitchen Aid) until a dough forms, about 5-8 minutes.

Scrape down the sides of the bowl if necessary, and shape the dough into a ball. It will be sticky. Cover bowl with a damp kitchen towel and let the dough rise until it has doubled is size, 1- 3 hours @ 70 F* See Note.

Line a baking sheet with parchment paper. Using a floured dough scraper (or chef&#8217;s knife), divide the dough into 8 equal pieces. If you have a scale, weigh each piece to guarantee that they&#8217;re all the same size.

To shape the dough into balls, gently flatten each piece like a pancake. Gather the ends and pinch the dough to seal in the center. Flip the dough over, cup the surface with your palm, and roll into a ball. Transfer to your baking sheet, placing them a few inches inches apart. Cover and rest for 1-2 hours, or until puffy and slightly risen.

To make the egg wash, beat the remaining egg with a splash of water. When the buns are finished with the 2nd rise, gently brush each one with egg wash. At this point, you could add sesame seeds to the top of your rolls if desired.

Preheat your oven to 400 F. and place a skillet or metal baking dish on the oven floor. Before the dough goes in, add about 1/2 cup of water to the pan to create steam. This will help keep the bread nice and moist. Bake for about 15-20 minutes or until golden brown. Transfer to a wire rack to cool completely.

Best buns I've made so far, they went perfectly with my homemade vegetarian sloppy joe slop, I have added this recipe to my binder of go to meal ideas.

The only problem is the recipe..I think faster than I should I am sure..Says two eggs I put two eggs then realized one was for the egg wash...I've done this twice..I am sure I won't do that again..lol Had to add more flour but both times buns turned out so good..

I’ve used this recipe multiple times, and these buns are great even after freezing to use later! I cut them before freezing for ease of use one thawed. Made two batches baked out in smaller roll size (dozen per batch) for thanksgiving rolls this year as well. Just can’t get enough of the fresh baked bread taste this recipe produces!

Have now made this recipe two weekends in a row as it's so some. I live in a warm climate so the rise happens quick. 

I use lactose free milk and that's fine and this second batch I used wholemeal flour rather than white and they were even better...I also forgot the sugar and they were all good too! 

When I first made them the second rise they were HUGE so I refilled them into balls, definitely didn't do that this time which was good. When adding the egg wash they do fall a bit so I was a bit worried as that wasn't noted anywhere, but they taste great!

By far the best hamburger buns I have made.  I also use the same recipe to make dinner rolls (about 70 g makes a nice sized roll).  Rave reviews from the whole family!

Oh my! These are the easiest buns to make! The only thing,  I would do as someone said above and make a dozen buns as compared to eight. They were huge but so delicious!  My buns were 4 1/2" round.  I served them with pork BBQ . I will definitely be making these again, only smaller.

The Ultimate Brioche Buns for Burgers Recipe

(11 ounces 319 grams) all-purpose flour

yeast

(4floz/113 milliliters) whole milk

(2 ounces 57 grams) butter, (softened)

In a large bowl of a mixer, combine all-purpose flour, sugar, yeast, and salt.

In a separate jug whisk together the milk and eggs.

Pour the liquid into the dry ingredients and knead on medium speed with the dough hook attachment. (Tip: hold back a little liquid in case you don&#x27;t need it all to make the dough come together)

Once the dough comes together and there is no dry flour add in the sliced, softened butter. Continue to knead the dough for another 6-8 minutes. You will notice it is a soft, shaggy dough.

Turn out the dough onto a lightly floured surface and shape into a smooth ball. Place it into a greased bowl, cover the bowl with plastic wrap (or a shower cap), and keep in a warm place for 1 1/2 - 2 hours.

To make your Hamburgers: Divide the dough roughly into 6 (3 ¾oz) pieces. Shape each piece into a smooth ball and place it on a baking sheet lined with parchment paper to proof. This should take about 45 to 60 minutes. (Shaping the dough into a smooth ball is very important. Watch how, here.)

Once proofed, brush each bun with egg wash and sprinkle with sesame seeds.

Bake at 375°F (190°C) for 20-22 minutes or until they are golden brown.

Store buns in an air-tight container at room temperature for up to 2 days. Because of the butter and eggs, they can spoil after 3 days so you can either keep them in the fridge or in the freezer for longer shelf life.

Ultimate Brioche Buns: Your Burgers Deserve Better Than Store-Bought

The secret to keeping lean turkey juicy as a burger? Adding fat. The burgers in this recipe, stuffed with cheese and a bit of butter, are moist, flavorful and, best of all, hold together and flip easily. These are best cooked on a flat-top griddle, burger-joint style, or you can use a large, wide skillet (like cast-iron) if that’s what you have. Both give the outside of these burgers an irresistible sear that keeps the juice and flavor inside the burger, not dripping through grill grates. Finally, Hawaiian buns are a must. Their softness and subtle sweetness give these burgers a universal appeal.

Cheddar-Stuffed Turkey Burger With Avocado

Combine the turkey, salt, pepper and parsley in a large bowl and mix with a fork or clean hands to season evenly. Add the egg and milk and stir to combine.

Divide the meat into four portions with damp hands and gently pack into four round patties, about 3/4-inch thick. (It will feel very sticky because of the egg, which helps burgers hold their shape as they cook.) Place burgers on a parchment-lined baking tray or plate. Cut the butter into slices and 1 slice of the cheese into 4 thin squares, about 1 inch across. (The butter and cheese should be the same size.) Press a piece of each into the center of each burger. Shape the meat around it to cover across the top. Refrigerate for 10 minutes while you prepare the griddle.

Heat a flat-top griddle or cast-iron skillet over medium-high heat. Add enough butter just lightly coat the griddle or pan. Add the burgers to the griddle and cook until browned and just cooked through and a thermometer inserted into the meat (not the cheese in the center) reaches 165 degrees, about 4 minutes per side. In the final 2 minutes of cooking, add the remaining 4 cheese slices to the burgers, to melt.

Remove the burgers from the heat and layer onto the buns with the avocado and any other burger toppings you desire. Serve warm.

Add yeast and warm water to a large bowl. Add oil and sugar; let stand for 5 minutes.  After 5 minutes, mixture should be foamy.

Whisk in egg.  Slowly mix in the salt and flour.  Continue to add flour until you have a soft dough.

Using a dough hook, knead in a mixer for 3-5 minutes, until dough is smooth and elastic. (If you don&#039;t want to use a mixer, you can knead by hand on a lightly floured surface.) Do not let rise. Divide into 8 equal pieces; shape each into a ball.  Do not let the dough rise.

Preheat oven to 425 degrees. Place the dough balls on a greased or lined baking sheet. Cover with a kitchen towel and let rest for 10 minutes. After 10 minutes, brush the buns with an egg was, then sprinkle with sesame seeds. Bake until golden brown, 8-12 minutes.

Mix the sugar, 1/2 cup warm water and the yeast in a mixing bowl and set aside for five minutes or until the mixture starts to froth, indicating the yeast is alive and well.

Sift all the flours, salt, and baking soda into the bowl. Knead on low speed in a stand mixer or by hand for about 3 minutes, trickling in 1 cup of water until you have a dough that&#039;s smooth and supple. You might not need all of the water.

Add the oil and continue to knead until the oil has been absorbed by the dough, about 1 more minute.

Place the dough in an oiled bowl, turning over once to coat all over with oil, cover with a kitchen towel, and set aside in a warm spot for 1 ½ hours until the dough has more than doubled.

Fold the dough over itself to deflate. Form into a ball again, then divide into 8 equal sized pieces. Shape each piece into a smooth ball.

Place the buns on a baking sheet that&#039;s either been lightly greased or is lined with parchment. Space the buns at least a couple of inches apart. Flatten the tops slightly with your fingers, if you like. Cover the buns loosely with a kitchen towel and set them in a warm spot to rise for an hour.

Preheat the oven to 370 degrees.

Before the buns go into the oven, you can sprinkle seeds on the tops of the buns if you like. To do this, mix 1 tsp vegetable oil, 1 tbsp nondairy milk and 1/4 tsp maple syrup in a bowl. Brush the tops with this mixture, then sprinkle sesame seeds or poppy seeds on the tops.

Place the buns in the oven and bake 25 minutes. Remove the buns to a rack and allow them to cool thoroughly before serving.

How do you normally eat your burgers on Keto?

These are freaking amazing.   I've worked as a professional baker and here is what I did:  I melted the cheese and cream cheese in a large saucepan over low heat.  They just need to melt until the cheese is somewhat gooey and the two cheese are mixing together a little.  I then stirred in the eggs with a fork and  just kept mixing until things were somewhat combined.  You can then add the dry ingredients and it will come together like a loose dough.  I then oiled up my hands with cooking oil, scooped the dough onto a cutting board and kneaded the dough for a couple of minutes, this makes it much more dough-like.  Mine came out delicious and were definitely somewhat bread-like.  They are definitely caloric, so I cut them all in half and froze them.  Now I can pull a half bun out of the freezer, toast it and have an open faced sandwich.

Avoiding bread is one of the toughest hurdles for me on keto. This is the best recipe I found yet for bread substitute... it beats cloud bread hands down! I wasn’t blown away by the flavor, but does wheat flour bread really taste THAT great? (Just trying to keep things in fair perspective.) Despite the so-so flavor, I’m giving it 5 stars merely because it really gives me my bread fix and will help me to stay under 20, especially this time of year when I love having a tomato and mayo sandwich often. I cut each bun in half to equal a complete top and bottom bun. Now I can share a burger with the family, and a fried egg sandwich for breakfast, and I think that is awesome. Thanks!

I love fresh-baked crusty bread dripping with butter, but have not eaten any since four months and 34 lbs ago. I've tried cloud bread and another bun recipe but I like this one best. I had one hot from the oven with butter and it was good. I haven't tried to slice one yet... I figure they'll slice better cold, but I'm hoping for a near-hamburger experience tonight!

Very delicious and has a great bread texture and cheese bread taste. They taste similar to red lobster biscuits if you add garlic on top. I switch up what I sprinkled on top depending on what I'm using them for. I have also shape them like a hotdogs bun or make them small like a biscuit. I've used them for hot dogs, burgers, sandwiches, breakfast sandwiches, and biscuits with soup.

Keto Burger Buns Means You Can Still Have A Classic Hamburger

Homer Davis and his son Ross invented what he called the Depression burger at the Hamburger Inn in El Reno, Okla., as a means to add inexpensive bulk to their burgers. Rather than toasting, the buns are steamed in onion-scented vapor. That the technique — cooking the patties smashed-style with a huge amount of thinly shaved onions and steaming the buns — and restaurant remain popular to this day is a testament to the burgers’ deliciousness. If you prefer, you can take the cooking (and the accompanying lingering onion aroma) completely out of the house by heating the skillet or griddle directly over a very hot grill and cooking outdoors (see Tip).

Divide the beef: Line a 13-by-18-inch rimmed baking sheet with parchment paper. Divide the ground beef into 4 even balls. Working one ball at a time and using your hands, massage the meat until it is cohesive and tacky, about 15 seconds. Next, using clean hands, roll each into a smooth ball. Place the balls on the baking sheet, with 1 ball in the center of each quadrant. Refrigerate until ready to cook.

Shape the patties: Gently press each ball into a disk-shaped patty about 3 inches wide. Place the patties on a sheet pan or large plate, and season the tops with salt and pepper. Flip the patties, and top each with a large pile of sliced onions — as many as you can balance on top; they should resemble a large haystack. (It is important to not add salt to the onions at this point, as it will draw out excess moisture, which will inhibit searing.)

Heat the skillet or griddle: Heat a large (12-inch) cast-iron or carbon-steel skillet or griddle (see Tip) over an indoor burner set to high heat or on the grates of a hot outdoor grill for a few minutes until very hot; a drop of water should skitter around the surface. (If you don’t have a pan skillet or griddle big enough, you can cook the burgers in batches.) Place 1 patty of beef in the center of one quadrant of the pan, with the onions on top (do not add any oil).

Smash the burgers: Using a very stiff spatula, press on the onions and beef to form a patty 4½- to 5-inches wide. As you smash, focus on the patty’s edges so that the finished patty is slightly thicker in the center and smashed out as thinly as possible along the edges. Repeat with the remaining patties. Use the spatula to place any stray onions back on top of the burgers. Season the onions lightly with salt and pepper.

Cook the burgers: Allow patties to cook without moving until the edges are dark brown and crusty, 1 to 2 minutes. Holding the spatula upside down (so that the head of the spatula is angled down to increase leverage), scrape the edges of each patty off the pan, working around each patty to ensure that you don’t leave any crispy edges behind. When the edges have all been loosened, turn the spatula back over (so you are holding it the standard way) and flip the patties onion side down. Use the spatula and tongs or a fork to tuck any stray onion slices mostly under the patties.

Steam the cheese and buns: Add a slice of cheese to each patty. Place the top half of each burger bun on top of the cheese, and place the bottom half of each bun on top of the top bun, split-side down. Cover the pan or griddle with a large domed lid, a large overturned saucepan or a clean folded dish towel. (To avoid a fire, make sure the edges of the dish towel do not hang over the skillet or griddle. If cooking on an outdoor grill, just close the lid.) Continue cooking until the onions are browned along the edges and the buns are steamed through, 1 to 2 minutes longer.

To serve, open the cover or lid. Remove the bottom burger bun halves to a serving platter. Add pickles and condiments as desired (These burgers don’t typically need condiments). Lift each burger from the skillet with the spatula and transfer to the bottom bun. Serve immediately.

Heat a grill to medium and oil the grates.

In a food processor, pulse shrimp a few times, just until finely chopped but not puréed. Transfer to a large bowl and add the cod, 1/4 cup of the scallions, the salt and pepper, and mix until well blended. (Hands work best.) Moisten your hands with water, then form the mixture into 4 (½-inch-thick) patties. Coat patties lightly with the oil.

Grill the burgers until lightly charred and just cooked through, 4 to 5 minutes per side.

Meanwhile, in a small bowl, combine the mayonnaise, Old Bay and the remaining 2 tablespoons scallions; mix well.

Smear some of the Old Bay mayonnaise on the buns. Top each bottom bun with a burger and squeeze lemon on top. Top with some of the lettuce and pickles, close the burgers and enjoy.

Add all ingredients pan of the bread machine in the order listed. Program the machine for the dough cycle, and press start.  When the dough cycle has finished, transfer the dough to a floured surface.  Using either a pizza cutter or a dough scraper, cut the dough into 6 (3.44 ounces, 97 grams) or 8 (2.5 ounces, 71 grams). Form each piece into a ball and place it on a parchment-lined baking sheet.  Using floured fingertips, flatten each piece until it is about ½-inch thick.  Cover; allow to rise in a warm place* until doubled in size, about 30 to 35 minutes.

Preheat oven to 400°F. Bake 10 to 12 minutes, or until golden brown.

Remove from oven; transfer to wire rack to cool.

Yield: 6 large or 8 regular-sized hamburger buns.

In the mixing bowl of a stand mixer, place the water, milk, and the yeast. Stir to combine. Allow the yeast to proof for five minutes. It will start to foam and bubble.

Add the two eggs, sugar, melted butter or oil, flour, and salt to the bowl. Mix with the dough hook until the dough clears the sides of the pan and forms an elastic dough ball. You may need to scrape the sides of the bowl once or twice.

Alternatively, if you don’t have a stand mixer, you can stir this mixture by hand until a sticky dough is formed. Turn it out on a floured surface and knead until smooth and elastic.

Place the dough in a greased bowl and allow it to rest in a warm place until doubled in bulk, about one hour.

Lightly flour a large work surface. Divide the dough into 16 equal portions and form into tight rounds. You can also try other fancy shapes if you like. Place the buns on two sheet pans lined with parchment paper. Allow them to rise for about 30 minutes. Preheat the oven to 350°.

Add a tablespoon of water to the remaining beaten egg. Brush this mixture over the tops of the rolls.

In a small bowl combine the poppy seeds, caraway seeds, sesame seeds, garlic powder, onion powder, and salt. Sprinkle this mixture over the tops of the egg-washed rolls.

Bake the rolls for 20 to 25 minutes or until golden brown. Cool on a rack before serving. Cooled rolls may be frozen in a ziptop freezer bag for up to 4 weeks.

1-Hour Homemade Hamburger Buns Recipe

(20 ounces 566 grams) all-purpose flour

instant yeast* ((if using active yeast see notes))

(1 ounces 28 grams) butter, softened

(12floz/340 milliliters) milk, (warmed)

In the bowl of a stand mixer fitted with a dough hook, add in the flour and sugar. To one side of the bowl, mix in the dry yeast. On the other side, mix in the salt, being sure they do not make direct contact as this can deactivate the yeast.

In a separate jug, combine the butter and milk then gently heat in the microwave just until the butter is melted and the milk is lukewarm.&nbsp;

Turn the mixer on low-speed and stream in the wet ingredients, holding some back to ensure the dough does not get overly wet. Once the dough forms a ball and cleans the bottom of the bowl, knead for about 6-8 minutes. The dough should be smooth and elastic.

Transfer the dough into a lightly greased large bowl and cover tightly with cling wrap and a tea towel. Let the dough rise in a warm place to proof, about 20 minutes.

After 20 minutes, turn the dough out onto a lightly floured surface. Using a dough cutter or knife, cut the dough into 9 (3 1/2oz/99g) balls.

Roll each ball against your work surface with your hand to shape into a smooth bun. The pressure against the table will help you get a round, smooth roll. This takes some practice.&nbsp;

Line a baking tray with parchment paper then place each bun (seam side down) about 2 inches apart on the baking tray.

Using a pastry brush, apply a thin even layer of egg wash to the buns, ensuring there is no excess dripping down the side of the bun (this can keep them from rising up evenly when baking).
