Our Company Potatoes Recipe is a down-home comfort dish, perfect side dish for holiday meals.

7-Ingredient Funeral Potatoes Recipe

bags frozen Potatoes O’Brien mix, (thawed (28-ounces bags))

sour cream ((could be low fat))

cheddar cheese

salsa verde, (or green enchilada sauce)

chicken

corn flakes, (crushed)

butter

Preheat the oven to 375 degrees F. Pour the potatoes, sour cream, salsa or enchilada sauce, shredded cheese, and chicken base in a  3 quart baking dish. Mix well, and spread out evenly.

Place the cornflakes in a plastic zip bag. Zip closed and crush the corn flakes. Then pour in the melted butter and toss to coat.

Sprinkle the buttered cornflakes evenly over the top of the potatoes. Cover the pan with foil.

Bake covered for 45 minutes. Then remove the foil and bake another 10-15 minutes, until bubbly. Serve warm.

I used tater tots as well instead of hashbrowns. I cooked mine on low at first and then put it on high. I also added sausage to it.

It was awesome.  I used 15 eggs instead, added sliced mushrooms, spinach and a few sliced jalapeños..... mmmmm.

This Dump-and-Bake Hash Brown Breakfast Casserole is an easy brunch recipe that's ready for the oven with just 5 minutes of prep!

Dump-and-Bake Hash Brown Breakfast Casserole

(30 ounce) package frozen shredded hash brown potatoes, thawed

(8 ounces) shredded cheddar cheese

sour cream

pepper

(10.5 ounces) condensed cream of chicken soup, NOT diluted

Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.

In a large bowl, whisk or stir together shredded cheese, 1/2 cup of the melted butter, sour cream, pepper and condensed soup.

Fold in the thawed shredded potatoes. Transfer potato mixture to the prepared baking dish.

Next, prepare the topping for the casserole by combining the crushed Corn Flakes with the remaining 2 tablespoons of melted butter in a small bowl until the cereal is coated. Sprinkle on top of the potato mixture in the baking dish.

Bake, uncovered, for 40-45 minutes (or until heated through and topping is browned).

Preheat the oven to 350°F/180°C, 160°F fan oven, and lightly grease a 9x13&quot; baking dish. Set aside.

Pat dry the thawed hash browns to get rid of excess moisture.
