Hawaiian Huli-Huli Chicken With Teriyaki Sauce Recipe

Huli-Huli Sauce

This sweet &amp; tangy pineapple chicken stir fry is full of pineapple chunks, chicken breast &amp; veggies stir fried together in a tasty pineapple teriyaki sauce! 

Sweet &amp; Tangy Pineapple Chicken Stir Fry

pineapple chunks

Tablespoons avocado oil

red onion

broccoli florets

red bell pepper

orange bell pepper

scallions

Tablespoon toasted white sesame seeds

pineapple juice

brown sugar

water

Tablespoons rice wine vinegar

Tablespoons corn starch

oyster sauce

ginger

sea salt

Make the sauce

Combine all the ingredients for the sauce in a medium size bowl and stir it until the brown sugar dissolves. (Note: this recipe makes a generous amount of sauce. Reduce the amounts if you prefer less sauce)

Marinate the chicken

Add one tablespoon of the sauce to the chicken breast to use as a marinade. The pineapple juice will tenderize the chicken. Meanwhile, prep the vegetables.

Mix the pineapple chicken sauce

Stir fry the chicken

Heat a pan on medium high heat and add oil to the pan. Add the chicken breast to the pan and stir fry the chicken pieces until it&#039;s cooked through (about 3 to 4 minutes). Be careful not to heat the pan too high as the sugar in the marinade can burn easily. Once it&#039;s cooked, remove it from the pan and set it aside.

Stir fry the vegetables

Add the red onion, broccoli, red bell pepper, and yellow bell pepper to the same pan and stir fry it until the broccoli is tender but still crunchy (about 3 to 4 minutes).

Add the pineapple and chicken

Add the pineapple chunks and cooked chicken breast back to the pan.

Add the sauce

Stir the sauce once more as the cornstarch can settle. Then add the sauce to the pan and combine everything together. When the sauce starts to simmer, it should turn thick and glossy. Continue to mix everything together for one more minute and then remove it from the heat.

Serve

Sprinkle the chopped scallions and toasted sesame seeds over the top and serve it over rice.

Hawaiian Chicken with Coconut Rice

~1 1/2 lbs chicken tenderloins (7-8 pieces)

canola oil

basmati or jasmine rice

coconut milk

In a food processor or blender, blend pineapple juice, soy sauce, ketchup, brown sugar, fresh garlic and canola oil to create the marinade for the chicken.

Add chicken and marinade into a zip lock bag, mix well to ensure all chicken tenderloins are covered with marinate. Marinate for 1 hour, or up to 24 hours (the longer the better!). 

Grease a grill pan, cast iron grill, charcoal grill, electric grill or non-stick skillet.&nbsp;

Cook chicken until it reaches 165 degrees F. Flip halfway through. Once chicken is done, brush honey on both sides of the tenderloins and remove.

Slice pineapple into 1/2-1 inch thick slices and grill on both sides.

Hawaiian Chicken

On the stovetop, in a pot, bring to boil rice, water and coconut milk. Once boiled, bring to medium low heat and cook covered (cover with a tight lid and do not open) for ~17-20 minutes (See Note 1). Remove from heat.

If using a rice cooker, follow rice cooker instruction. Use 1:1 ratio of coconut milk to water to substitute for the amount of water needed to cook the rice.

Coconut Rice

Serve chicken and pineapple on a bed of coconut rice, and sprinkle with fresh parsley. Enjoy!

Huli Huli Chicken with Amazing Huli Huli Sauce

lbs Chicken, boneless thighs, sliced to 2" pieces to make kabobs

Cup Pineapple, juice

Cup Tomato Ketchup

Cup Sugar, light brown or white sugar

tsp Ginger, grated, about 2 inch piece of ginger

Garlic, garlic

tbsp Sriracha, adjust

tsp Sesame Oil

tsp Dijon mustard

tbsp Sherry Vinegar, Or 4 tbsp Unseasoned Rice Vinegar

tsp Black Pepper, fresh fine cracked

Salt, adjust

Oil Spray,

tbsp Fresh Herbs, parsley,

Prepare Ingredients

Divide diced chicken into two seal-able food grade plastic bags or add all to a container with lid (large enough to hold chicken and marinade). Also, if using wooden skewers, soak 6-8 skewers in water. Set aside.


Prepare Huli-Huli Marinade Sauce

To make Huli-Huli marinade, in bowl add pineapple juice, soy sauce, vinegar, grated ginger, grated garlic, mustard, ketchup, sugar, sesame oil, sriracha, salt and black pepper. I use about 1/2 tsp of salt. Always adjust per taste. Whisk well until sugar is dissolved. 

Marinate Chicken

Reserve 1 cup marinade and divide rest equally among two zip locks with chicken. Seal and mush to coat everything in marinade. Refrigerate to marinate for 30 minutes to an hour.

Skew Chicken onto Skewers

Preheat grill. Skew chicken on skewers (6-8 skewers). 6-7 small pieces of chicken per skewer. Discard the marinade used to marinate this chicken.


Grill Huli-Huli

Brush grill with oil or use oil spray. Grill chicken skewers turning (huli huli) often and basting with half of reserved marinade until chicken is fully cooked, 8-10 minutes. 


Serve 

Once cooked, transfer to serving platter. Garnish with scallions and chopped fresh parsley. Serve remaining Huli-Huli sauce on the side. (See Note 2) Serve with side of rice or noodles, grilled pineapple, grilled tomato/red onion rings.  Enjoy!

Huli Huli Chicken (Tropical Hawaiian chicken)

Mix marinade, set aside 3/4 cup (185 ml) for basting.

Pour the rest over the chicken in a glass or ceramic container (not metal or plastic), coat chicken then marinade 24 - 48 hours.

Marinade:

Brush BBQ grills with oil then preheat to medium high, or heat oil in a skillet over medium high heat.

Drain excess marinade from chicken, place on BBQ/skillet.

Cook the first side for 2 - 3 minutes until golden (adjust heat if browning too fast), then flip and cook for 2 minutes.

Baste (dab) generously with reserved marinade, then flip and cook for 1 minute.

Repeat this every minute or so for a total cook time of 10 minutes, or until internal temp in the thickest part registers 75°C/167°F (for thigh) or 65°C / 150°F (for breast).

Transfer chicken to a plate, loosely cover with foil and rest for 3 minutes before serving, garnished with green onion if desired.

It looks and tastes really good.  Just one change should be made to the recipe for health reasons.  I would divide the marinade as you shouldn't use the same marinade the raw chicken was in to baste the chicken while grilling.

This was so good, I have sent the recipe to others! I recommend cooking the pineapple slices whole and then slicing them, and also adding another half pound of chicken, there was a lot of wasted delicious marinade!

I made the recipe without basting and it turned out delicious!

I haven't tried it yet, so maybe I shouldn't be writing a review, but I am using this for my cooking class as kabobs. Yum!!
