Easy Avocado Brownies. Healthy, extra fudgy, and gluten free! This healthy dessert recipe tastes decadent but is made of simple, wholesome ingredients.

Avocado Brownies

avocado

eggs (at room temperature)

coconut sugar (or light brown sugar)

maple syrup

unsalted butter (at room temperature (to make the brownies dairy free, use coconut oil))

vanilla extract

cocoa powder

Bob’s Red Mill Blanched Almond Flour

espresso powder (optional; will yield

baking soda

salt

dark or semisweet chocolate chips (divided (dairy free if needed))

Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8-inch pan with parchment paper so that two sides overhang like handles. Lightly coat with nonstick spray.

In the bowl of a food processor fitted with a steel blade, place the avocado, eggs, coconut sugar, maple syrup, butter, and vanilla. Process until it’s completely smooth and combined, stopping to scrape down the bowl a few times as needed so that no chunks of avocado remain.

To the food processor, add the cocoa powder, almond flour, espresso powder, baking soda, and salt. Process until smooth. Add 1/4 cup chocolate chips and pulse a few times so that the chips are roughly incorporated.

Scrape the batter into the prepared pan and smooth the top. Sprinkle over the remaining 1/4 cup chocolate chips. Bake for 25 to 30 minutes, until the top is set and a toothpick inserted in the center of the brownies comes out mostly clean with just a few moist crumbs clinging to it. Place the pan on a wire cooling rack and let the brownies cool for 30 minutes. With the parchment paper handles, lift the brownies from the pan and place them on the rack to cool completely. If time allows, refrigerate for at least 4 hours or overnight. (I find that these taste their best and fudgiest the next day.) Slice and serve.

Healthy Brownies With Dark Chocolate & Avocado

Chocolate Zucchini Bread

oats

tbsp cocoa powder

tsp baking powder

tsp baking soda

zucchini,

eggs

coconut sugar

tbsp olive oil

Grate zucchini using a box grater and drain off excess liquid. Transfer to a large mixing bowl.

Add to mixing bowl the rest of the wet ingredients and mix until combined.

In a blender or food processor, process rolled oats into a fine powder.

Add the rest of the dry ingredients, except for chocolate chips, to the blender. Process until combined.

Add the combined dry ingredients to the mixing bowl with the wet ingredients. Mix until combined.

Transfer batter to a lightly greased loaf pan.

Bake for 50 minutes or until an inserted stick comes out clean. Transfer to a cooling rack and let cool completely before slicing and storing. Enjoy!

3 Ingredient Snickers Stuffed Dates

Medjool dates, pitted

peanut butter

sugar-free dark chocolate, finely chopped

peanuts (optional)

Fill each pitted date with peanut butter. You'll need about 1/2 tsp of peanut butter for each date, depending on the size of your dates. Place filled dates on a plate and chill in the freezer for 10 minutes.

Put dark chocolate in a microwave-safe bowl. Melt chocolate in the microwave. Alternatively, you can melt the chocolate using a double boiler.

Line a tray or a large plate with parchment paper.

Take dates out of the freezer. Dip each one in the melted chocolate using a fork, let excess chocolate drip off, then transfer to parchment paper lined tray.

Top stuffed dates with some chopped peanuts if you wish.

Let the chocolate set in the fridge for 30 minutes.

Roughly chop the dates into small pieces.

Chuck them, the maple syrup and water into a food processor and blend until smooth.

Peel and add the avocado and cocoa. The easiest way to peel an avocado is to cut it in half, make a nick on each side and peel it like a banana.

Quick taste test - if you’d like it a little sweeter than add that tablespoon of maple syrup and quickly blend again.

Banana Oat Muffins

These peanut butter oatmeal cookies are thick, fluffy, soft, and made with simple, healthy ingredients! They're gluten free, dairy free, and loaded with chocolate chips.

Peanut Butter Oatmeal Cookies (Gluten-free)

almond flour

rolled oats (certified gluten free)

salt (if pb is unsalted)

eggs, room temperature

coconut oil, melted

chocolate chips (I used mini and regular)

Preheat the oven to 350F and line a baking sheet with parchment paper or silicone liner.

In a medium bowl, mix together almond flour, rolled oats, baking soda, and salt.

In a large bowl, whisk eggs. Add in peanut butter, coconut oil, coconut sugar, and vanilla.

Add dry ingredients to wet and stir to combine.

Use a cookie scoop or spoon to place dough on parchment paper. I like to make these large and use about 1/4 cup dough, rolling it into a ball in my hand.

Press chocolate chips into the top, but keep them pretty tall (do not flatten too much, just slightly).

Bake in oven for 9-11 minutes or until slightly golden brown.

Store on counter or in fridge, they also freeze well.

Love this recipe! I used Lily's chocolate chips.  They're made with stevia.

Made these for cookie week and my only regret is waiting so long to make them - they are amazing! I love peanut butter and this has the perfect taste of that with great additions. I sprinkled some maldon sea salt flakes after baking and it really brings the chocolate out too, but other than that I followed this recipe to a tee. My future in-laws are coming to spend the holidays with us and I will def have a batch of these waiting.

In the microwave with short intervals or over a double boiler, melt the chocolate, stirring until it comes together into a glossy chocolate. If using the microwave, use short bursts of 10 seconds or so and stir after each: be careful not to overheat the chocolate or get any water in the chocolate, which will cause it to seize up. When melted, drizzle over the bars and allow to cool.  You can eat right away, or refrigerate for about 1 hour for a more solid texture. Store refrigerated for up to 2 weeks (or frozen for several months, placing wax paper between the layers).
