How to Make Homemade Ricotta

c. Heavy Cream

c. Whole Milk

tbsp. White Vinegar Or Lemon Juice

Line a strainer with a couple layers of damp paper towel or cheesecloth, and set inside a large bowl.In a saucepan, combine heavy cream, milk, and salt. Bring to a boil over medium high heat. Once boiling, remove the pan from the heat and stir in the vinegar or lemon juice. Let the mixture sit for 2 minutes, then pour into the strainer and let drain for 20 minutes. It’s ready for use! Note: Because there are no stabilizers, a little liquid will always pool on the sides. Just stir it in.

Make several batches of this vanilla extract so you can easily add it to smoothies, lattes, and other recipes at home.

How to Make Vanilla Extract

Cut the vanilla beans in half lengthwise with scissors or a knife. Leave a bit intact at the end if desired. Cut the beans down to fit the height of your jar if necessary.&nbsp;

Put the beans in an 8-ounce jar. Cover with the vodka. Screw the lid on and give it a good shake.&nbsp;

Place in a cool, dark place. Let sit for at least 2 months. The longer the vanilla sits, the stronger the flavor will be. While it's sitting, give the jar a shake every week, or as often as you can remember.

Lemon curd is a sweet and easy condiment to make from scratch. Using just five ingredients, this recipe comes together quickly on your stovetop.

How to Make Lemon Curd

c. sugar

lemon juice (from 3 lemons)

eggs egg

kosher salt

Combine the sugar, butter and lemon juice in a small saucepan over medium-low heat. Cook just until the butter melts. Whisk in the eggs. Cook, stirring frequently with a rubber spatula, until the mixture thickens and coats the back of a spoon, 6-8 minutes. Do not let the mixture bubble. Pour then press through a fine-mesh strainer into a bowl. Press plastic wrap over top and let cool to room temperature. Refrigerate until set, about 2 hours.

I used this recipe for a cake. I made a strawberry cake and filled the middle with the lemon curd and strawberry buttercream. It turned out great! Will be using it for other recipes.

c. ketchup

c. packed dark brown sugar

c. red wine vinegar

Worcestershire sauce

Whisk the ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, hot sauce, salt and a few grinds of pepper in a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer, whisking occasionally, until the sauce has reduced slightly, about 20 minutes.

If not using right away, let the sauce cool, then store in an airtight container for up to 1 week.
