In this variation on a classic Irish coffee, spiced rum takes the place of whiskey, lending its sweet, spiced caramel flavor to the coffee's roasted, bitter bite. On top, a heaping dollop of butterscotch whipped cream, which riffs on the rum, caramel, and dairy flavors of rum raisin ice cream. To finish, a little fresh nutmeg grated on top, which plays up those spice notes.

Everything Nice (Spiced-Rum Coffee With Butterscotch Whipped Cream) Recipe

(175 milliliters) heavy cream

(10 grams) malted milk powder,

(15 grams) dark brown sugar

kosher salt

(175 milliliters) hot black coffee

(60 milliliters) spiced rum

nutmeg,

Combine heavy cream, malted milk powder, brown sugar, and salt in a mixing bowl or bowl of a stand mixer. Beat, using the whisk attachment, electric beaters, or a whisk, until dry ingredients are evenly incorporated and cream forms soft peaks.

Combine hot coffee, spiced rum, and simple syrup in a prewarmed mug. (You can prewarm it by pouring hot water into it, letting it stand for 1 minute, then draining.) Using a spoon, dollop whipped cream on top of coffee and top with freshly grated nutmeg, if using. Serve right away. (Note that you may have more whipped cream than the mug can accommodate; feel free to add more as you drink, or use some for the next round.)

To make the syrup, combine all the ingredients in a saucepan and allow to come to a simmer. Cook until the syrup has reduced and thickened. Remove from the heat and allow to cool.&nbsp;

To make the milkshake, combine all the ingredients in a blender and blend until smooth.&nbsp;

Swirl the coffee syrup into chilled glasses. Pour in the milkshake and top with whipped cream and more syrup. Serve immediately.&nbsp;

Pour the whiskey and 1 teaspoon maple syrup into a heat-safe mug. Pour in a splash of the coffee and stir with a spoon until the maple syrup dissolves into the coffee.

Pour in the rest of the coffee. Taste, and stir in additional maple syrup if you would like a sweeter drink.

Top with whipped cream. If your whipped cream is lightly whipped (soft peaks), you may need to pour it slowly over a spoon so it floats on top. Serve while the drink is still warm!

I like to use the traditional lightly whipped heavy cream; about 200 to 300 whips of the chilled whisk in a chilled stainless steel bowl should do it. It should float easily when poured over the bottom of the bowl of a tablespoon. If it melts into the coffee then it needs a few more whips of the whisk. When using a thick enough layer it will reform over the Irish coffee after dunking your doughnut in it. 

I'm all for the traditional ingredients and preparations but I skip the freshly ground nutmeg.

Love the idea of maple syrup in lieu of sugar and it certainly is a perfect substitute! I added a stitch of Bailey’s in my whipped cream mixture for texture. Adding a Ceylon cinnamon stick in the mug was sublime

Combine all ingredients EXCEPT the chocolate chunks and stir well to dissolve sugar and espresso. Pour the mixture into the bowl of an ice cream machine and process until churned enough to be thick and semi-firm.

Add the chocolate chunks and continue mixing until combined. Remove the bowl from the machine and pour the mixture into a freezer safe container.

Freeze for several hours or overnight.
