This amazing Jamaican Jerk Sauce is so easy to prepare in a food processor or blender and is great on vegetables, tofu, or pasta. It is a popular Jamaican marinade that is recognized internationally and made throughout the diaspora.

Jamaican Jerk Sauce

Escallion onions

garlic

1-inch ginger peeled

pimento berries (allspice)

thyme leaves

cinnamon

nutmeg

soy sauce

orange juice

olive oil

organic brown sugar

Bonnet

Salt

Place all the ingredients in a blender or food processor and process until smooth.

Store jerk sauce in an airtight jar in the refrigerator.

lime juice

apple cider vinegar

Place all of the ingredients in a food processor or blender, then pulse the ingredients until you reach the desired consistency. (Generally jerk sauce is a smooth/slightly chunky sauce but you can opt for a chunkier sauce or a smoother sauce depending on how you prefer it).  Store in the fridge in an airtight jar where it will keep for up to a week.Makes approx. 1 1/2 cups

Vegan Jamaican Jerk Cauliflower Tacos with Avocado Lime Crema

Head Cauliflower (Medium to Large.)

c All Natural Jerk Sauce (See notes

c Onion (I use Sweet Vidalia Onion for everything :))

carrot

c Baby Spinach

Corn tortillas (or any other vegan or GF brand)

tbsp Garlic Powder

tsp Smoked Paprika (regular Paprika is fine, too.)

¼ tbsp Cayenne Pepper Powder

tbsp Organic Sugar (I use Organic Coconut

tsp Allspice

tbsp Cinnamon

tbsp Nutmeg

Parsley

Thyme,

Avocado (Whole or Pieces. Soaked and drained. SEE NOTES.)

c Dairy-Free Milk, Unsweetened

c Lime Juice, Fresh Squeezed (1 Medium lime)

c Cilantro, Fresh (Chopped)

Clove Garlic, Whole Clove

tsp Onion Powder

Heat the oven to 400°

Toss the cauliflower in a bowl with 1tbsp of the oil. Add Jerk sauce OR jerk seasoning and mix to coat the cauliflower.

Place cauliflower on a sheet pan lined with parchment or coconut oil cooking spray.

Bake 20 minutes (until tender and golden brown), stirring after about halfway through.

For the Jerk Cauliflower

In a frying pan, heat 1tbsp of the oil and saute the onions and carrots for 3-5 minutes or until they start to brown then add spinach and further cook just until the spinach begins to wilt. *Add more oil or a bit of water if necessary.

Place the mixture in a medium mixing bowl and set aside.

Spinach and Carrot Mixture

Blend or pulse all of the ingredients (except salt and pepper) until smooth and creamy.

Add salt and pepper to taste.

Avocado Lime Crema

Warm the corn tortillas in the pre-heated oven for1-2 minutes.

Toss the spinach mixture with some of the avocado lime crema and add a layer on each tortilla.

Add a portion of the jerk cauliflower to each tortilla and chow down.

Assemble

In a blender or food processor, combine the peppers, onion, green onion, garlic, ginger, orange juice, lime juice, coconut aminos, sugar, thyme, allspice, pepper and cloves.

Blend until smooth.

Salt to taste.

Jamaican Jerk BBQ Sauce

olive oil ((28 grams))

scallion ((green onion))

ginger (chopped)

tsp paprika ((4 grams))

mustard powder ((2 grams))

celery seed ((1 grams))

tsp liquid smoke ((15 grams))

passata ((355 milliliters))

jerk paste ((80 milliliters))

lime juice ((45 grams-60 grams) or apple cider vinegar)

pink salt and black pepper

On medium heat, add the olive oil to a medium sized saucepan.

Proceed to add the onion, scallion, garlic and ginger.Lightly saute until they are soft and translucent (not golden).

Add the paprika, mustard powder, celery seed, liquid smoke, raw cane sugar, jerk paste, passata, lime juice or apple cider vinegar

.Reduce the heat to medium-low and simmer for 15-20 minutes, stirring often so nothing sticks to the pan.

Carefully pour the contents into the blender.

Blitz into a smooth consistency (add any additional water if required).

Do a taste test and add pink salt to taste.
