Slice all the cucumbers very thin and transfer to a medium sized bowl.

Sprinkle with salt and toss with your hands to ensure even salt coverage to draw out moisture, Wait 5-10 minutes.

Then rinse the cucumbers thoroughly to remove the salt, drain, then squeeze all the cucumbers to remove as much water as you can (don&#039;t be afraid!).

Mix the rice vinegar, sugar, salt, soy sauce until dissolved, then add to cucumbers.

Sprinkle with sesame seeds and serve.

Rinse cucumbers with fresh water.

Remove the edges of cucumbers with a knife on a chopping board, and cut cucumbers into thin slices. Use a sharp knife, mandarin slicer or food processor.

Transfer sliced cucumbers into a bowl. Sprinkle sea salt on them and gently rub it into the slices. Leave them for two minutes. Drain excess water by gently squeezing them by hand.

Preparation

Combine Japanese vinegar, soy sauce and sugar in a bowl well with a spoon, chopsticks or a whisk. Add all the cucumbers and combine. Let them marinade with the sauce. Add the sesame seeds. That&#39;s it! Serve immediately and enjoy!

My Japanese sunomono salad is a refreshing dish featuring crisp cucumbers and succulent shrimp tossed in a vinegary, spicy-sweet dressing.

Japanese Sunomono Salad

shrimp

Japanese cucumbers (sliced thinly (See Note 1))

cilantro (chopped)

green onions (thinly sliced)

green bell pepper (thinly diced)

garlic (minced)

Serrano chile pepper

lime juice (approximately 3 limes)

rice wine vinegar

tbsp sesame oil

tsp fish sauce ((optional))

tsp red pepper flakes

tsp sesame seeds (white, black, or combination)

mint leaves (chopped)

In a small bowl ,whisk together the lime juice, vinegar, sesame oil, fish sauce (optional), salt, red pepper flakes, sesame seeds and mint. Stir in the garlic and chile and set aside.

To a medium sized bowl, add cooked shrimp, sliced cucumbers, cilantro, green onion and bell pepper. Pour dressing over and toss to combine. Serve with more cilantro and or mint leaves with sesame seeds sprinkled on top. Refrigerate covered if not eating right away.
