40 Sweet and Savory Vegetarian Pies – Bake your weekend away

Preheat the oven to 200°C/390°F.

Beat the eggs in a large bowl.

Add the garlic, nutmeg, onion powder, salt and pepper.

Grate the cheese.

Give it all a stir then mix in the spinach and cheese.

Make sure everything is thoroughly coated in egg and spice mix.

Pour into a 9 inch pie tin (grease with a little oil first), spread it evenly and get it in the oven!

Slice the tomatoes.

After about 20 minutes of cooking, take out the pie and layer the tomatoes on top.

Cook for another 15-20 mins.

When ready, sprinkle on the basil, oregano and a little more salt and pepper.

Done! Serve, and enjoy.

Keto Key Lime Pie

Almond Meal

Golden Flax Meal

Swerve

Butter (melted)

Eggs

Sugar-free sweetened condensed milk

Heavy Cream

Lime

Limes (zest only)

fluid ounces Heavy Cream

Preheat fan forced oven to 170C/340F.

Combine almond meal, flax meal and Swerve and mix well.

Add the melted butter and mix well.

Pour mixture into the base of a 9in spring form pan and press into the base and at least 1in up the sides.

Bake the crust for 12 minutes, or until golden and firm. Set aside to cool.

Base

Reduce the oven temperature to 150C/300F.

Whisk together the eggs and sugar free sweetened condensed milk in a stand mixer on medium speed.

Drop the speed to low and slowly pour in the lime juice, and then the cream and the lime zest.

Pour the mixture into the cooled base and bake in the oven for 35-40 minutes, until there is only a slight wobble in the center.

Leave the pie at room temperature for 20 minutes to rest before placing in the fridge for at least 2 hours to cool.

Slice into 16 pieces and enjoy. We recommend serving it with a dollop of softly whipped cream.

Filling

Whip cream and spread over the top of the cooled pie.

Craving an apple pie with a flakey, buttery crust and sweet apple filling while on your keto diet? This keto apple pie recipe looks and tastes just like a traditional apple pie, but without all of the carbs and sugar. With squash and apple pie flavoring, you can’t even taste the difference! 

Keto Apple Pie

coconut flour

xanthan gum

unsalted butter,

cream cheese, softened

rice vinegar or apple cider vinegar

egg wash (1 egg beaten + 1 tablespoon water)

zucchini

sugar free sweetener

allspice

arrowroot powder

apple cider vinegar or lemon juice

apple apple extract

Cut butter in to dry ingredients for keto pie crust

To a food processor, add almond flour, coconut flour, xanthan gum and salt. Give a quick pulse to combine. Add chilled cubed butter and cream cheese. For the flakiest low carb pie crust, freeze the butter for 30 minutes before use. Pulse until coarse crumbles form. (See instructions below if you don't have a food processor.)

Add remaining pie crust ingredients

Add egg and vinegar to crumbled pie dough. Pulse until combined and a dough ball forms. Don't over mix or the butter may melt. Divide dough into two balls (one ball using 2/3 of the dough for the bottom layer, one ball using 1/3 the dough for the top. Wrap pie crust dough in plastic wrap, flatten into a disc shape and refrigerate for one hour or freeze for 10 minutes. This helps to keep the butter flecks from melting while we roll out the pie dough.

Roll out bottom pie dough

Place the larger chilled pie dough in between two sheets of parchment paper and roll out dough to a flat circle. Start rolling from the center and work your way out in all directions. If the parchment paper crumbles beneath the dough, either carefully stretch the paper out or flip the parchment paper sandwich and stretch out the paper. Continue rolling until dough is 1/8 to 1/4 inch thick and your circle is at least an inch wider on all edges than the pie pan you want to use. Add pie dough to your pie plate and flute the edges. Place pie crust in freezer or refrigerator while you work on the keto apple pie filling. 

Cook the 'apples'

To a large skillet over medium-high heat, add butter and zucchini or chayote slices. 

Cinnamon spice and everything sweet

Sprinkle in sugar free sweetener, cinnamon, allspice and salt. Continue to cook until squash has softened (10-15 minutes depending on the thickness of your squash). 

Thicken the pie filling

Sprinkle in arrowroot powder and xanthan gum. Cook for 2-3 minutes while stirring. Remove from heat. Stir in apple cider vinegar (or lemon juice) and apple flavoring. Set aside and let cool. 

Assemble sugar free apple pie

Add the keto apple pie filling to your pie pan on top of the bottom crust. 

Top filling with pie crust

Roll out the second layer of pie crust similar to step 3. Place on top of pie filling or cut out lattice strips and drape on top. Brush top crust with egg wash. If covering pie with whole layer of pie crust, cut slits in the top crust to allow for steam to vent. 

Bake

Bake in a 350 degree oven for 30 to 35 minutes or until crust is golden brown.

Low Carb Apple Pie

Low Carb Pie Crust ((note 1))

Pounds Zucchini or Summer Squash ((about 6 medium zucchinis))

Tablespoons Unsalted Butter

Teaspoon Cinnamon

Teaspoon Nutmeg

Teaspoon Kosher Salt

Lemon

Teaspoon Vanilla

Cup granular Swerve or Lakanto ((note 2))

Teaspoon Xanthan Gum

Prep your pie crusts but don&#39;t bake them. Allow them to chill in the fridge for at least an hour (this can be prepped ahead of time) as you make the filling.

Zucchini. Chop off the ends of the zucchini (3 pounds), and use a veggie peeler to peel off the skin. Cut zucchinis into thirds. Use a mandolin to slice the zucchini into 1/4&quot; slices.

Keto Apple Pie - Step 2

Simmer. Add unsalted butter (2 tablespoons) to a large pan (that you have a lid for) and melt over medium heat. Add cinnamon (1 teaspoon), nutmeg (1/2 teaspoon), salt (1/2 teaspoon), lemon juice (1 tablespoon), vanilla (1 teaspoon), and erythritol (1 cup). Give everything a nice stir. Add the zucchini slices and stir to coat. Bring ingredients to a gentle simmer and cover with a fitted lid. Steam the zucchini for 15 minutes.

Keto Apple Pie - Step 3

Thicken. Remove the lid, stir in xanthan gum (1 teaspoon), and cook uncovered for about 30 minutes, keeping the liquid at a steady simmer -- you&#39;ll know the filling is done once most of the liquid is gone, the filling has become sticky, and the zucchini is nice and soft (remember we want an apple-like texture here). Remove filling from heat and set aside, allowing it to cool for at least 30 minutes.

Keto Apple Pie - Step 4

Prepping the crust. Preheat oven to 400 F. (NOTE: This step can be done as soon as the dough has chilled in the fridge for 1 hour. I like to do this while I&#39;m cooking the zucchini to save time) Roll 1 of the pie crust between 2 sheets of parchment paper until it&#39;s a 13&quot;, even circle. Fit the rolled crust into a 9&quot; pie pan, allowing excess to drape over the edges. Add filling in an even layer to the pie pan. Place the pie back in the fridge while you roll out the second crust.

Keto Apple Pie - Step 5

Top crust. Roll the second crust between 2 sheets of parchment paper, until it&#39;s a 13&quot; circle (same as above).EASY: Place the 2nd pie crust on top of the filling. Cut the excess crust, then seal and flute the edges. Cut 4 large slits in the crust (so the air can release).FOR THE LATTICE (more difficult, as shown above): Cut the pie crust into long 1&quot; wide strips using a pizza or ravioli cutter. Place strips on a cookie sheet in the freezer for 15 minutes (makes them easier to work with). Use a thin spatula to loosen the bottom of the strips before transferring them over the apple filling. Lay 3-4 parallel strips, leaving 1/2&quot;-1&quot; in between them. Place a strip perpendicular, and weave in between the strips. If the lattice cracks, simply use the warmth of your fingertips to smooth out any crackers (note 3+4). Continue until you&#39;ve formed the lattice over the entire pie. Cut the access, then seal and flute the edges.

Bake. Place pie on a rimmed baking sheet, and cover with foil. Place in the center of the oven and cook for 30 minutes. Remove foil from the top of the pie, and continue to bake uncovered for 10-15 minutes, or until the top becomes golden brown. Wait for the pie to cool before slicing (about 20 minutes). Enjoy!

Keto Apple Pie - Step 7

This keto peanut butter pie takes under 5 minutes total, and you can eat it as soon as you finish making it! And this quick keto dessert literally tastes like a Reese's cup pie form, so if you like peanut butter and chocolate, you'll love this keto pie.

5 Minute Keto Peanut Butter Pie | Low Carb, Gluten Free, &amp; No Sugar Added

Crust:

(20 grams) butter salted, melted

(14 grams) sugar free chocolate chips

Cup (28 grams) blanched almond flour

(12 grams) confectioner swerve

Filling:

(42 grams) natural no sugar added peanut butter

(42 grams) mascarpone cheese

(15 grams) almond milk

Optional drizzle:

(3 grams) butter

 Make the crust first, melt the butter and chocolate chips in the microwave, mix until a sauce forms, and set aside.

Mix the almond flour and confectioners swerve together in a small bowl, and pour in the sauce.

Use a spatula to combine the ingredients into a ball of dough.

Coat a 4-inch bowl with baking spray, add the ball of dough, and press it out into the shape of a pie crust.

Microwave the crust in 2, 30-second intervals. Or you can eat it as a no bake crust too.

While the crust is cooking, add all of the filling ingredients to a small bowl, and use a fork to break them down and combine them until smooth.

Eat as is or refrigerate until ready to eat.

Add the butter and chocolate chips to a small bowl and microwave until melted. 

Mix the ingredients until a chocolate sauce forms.

Add the sauce to a Ziploc bag, cut off the tip of one end of the bag, and drizzle the chocolate sauce onto the pie.

Using up leftover Beef Bolognese Sauce has never been tastier! We’ve thrown it into a tasty Parmesan Crust and created a Low Carb Spaghetti Bolognese Pie.

Keto Bolognese Pie - With Low Carb Crust - Saucy &amp; Rich!

Parmesan Pastry Crust

Low Carb Beef Bolognese Sauce (chilled)

Shirataki Spaghetti

Parmesan cheese (grated)

Cheddar Cheese (shredded)

Preheat your oven to 170C/340F.

Spoon the Low Carb Beef Bolognese Sauce into the Parmesan Pastry Crust. Set aside.

Prepare the shirataki spaghetti according to the packet directions and drain well.

Place a nonstick frying pan over medium-high heat and add the drained noodles. Dry fry for 3-5 minutes.

Top the Bolognese with the sauteed spaghetti and sprinkle over the Parmesan and Cheddar cheeses.

Bake in the oven for 20-25 minutes, until the cheese is melted and browned. If the crust begins to brown too quickly, cover with foil.

Cut into 8 slices and serve.
