The noodle part is easy - you can literally use any noodles, even pasta (yep, seriously). Also, switch out the vegetables with 5 cups (packed) of any chopped vegetables of choice.

Lo Mein Noodles

Sauce: Mix cornflour and dark soy until lump free, then add remaining Sauce ingredients.

Season Chicken: Transfer 2 tsp Sauce into bowl with chicken. Toss to coat.

Heat oil in a wok or large heavy based skillet over high heat until smoking.

Add onion and garlic, stir 30 seconds.

Add chicken, stir until white on the outside, still raw inside - 1 minute.

Add carrot and capsicum/bell peppers, cook 2 minutes or until chicken is cooked.

Add noodles, Sauce and water. Use 2 wooden spoons and toss for 30 seconds.

Add green onions, toss for another 1 minute until all the noodles are slick with sauce.

Serve immediately, garnished with extra green onions if using.

Homemade Lo Mein Recipe with Vegetables

all purpose flour (plus extra for dusting)

large eggs

pasta dough (recipe included)

coconut oil (or vegetable oil)

red bell pepper

yellow summer squash (small)

green onions

mushrooms

sesame oil

garlic (minced)

ginger

soy sauce

Chinese black vinegar rice

fish sauce

Pour the flour on a clean work surface. Make a deep well in the middle of the flour and crack the eggs in the center of the well. Using a spoon, gently break the yolks and stir the eggs to collect the flour around the edges. Stir in more and more flour until the entire pile of flour clumps. Then gather the clumps and knead into a ball. Knead aggressively for 5 minutes, until the dough becomes smooth and firm. Wrap the dough in plastic and allow it to rest while you prepare the veggies.

For the Pasta Dough:

Trim and slice all vegetables into thin bite-size pieces. Heat a large pot of salted water to boil the pasta and get a wok (or large skillet) out for the lo mein. Also set out a pan to hold the sauteed veggies.

Flatten the dough ball a little and cut it into 2-inch strips. Place the pasta roller attachment on the KitchenAid mixer and run each piece of dough through the roller to flatten. Lay each piece out on a floured surface. Then switch the attachment to the spaghetti cutter, and run each sheet of dough through the cutter to form thin noodles. Flour the noodles as they come through the cutter and lay them out on a floured surface. *If you don&#x27;t have these attachments you can use a countertop pasta maker, or even roll the dough out flat and cut with a pizza roller.

After the noodles are ready, heat the wok over high heat to stir fry the veggies. Place 1-2 teaspoons of oil in the wok and wait until it smokes. Then place one vegetable at a time in the wok and stir fry for 1-2 minutes moving constantly. Scoop the veggies out and place in the holding pan, then repeat with the next vegetable. You want the veggies to be bright, crisp and barely cooked, not soft and flimsy. This should take 5-8 minutes total.

Once all the veggies are cooked and moved to the pan, turn the heat to medium and place the sesame oil in the skillet, followed by the garlic and ginger. Saute for one minute, then add the soy sauce, black vinegar, fish sauce, water, and cornstarch. Whisk immediately to incorporate the corn starch then allow the sauce to thicken a little.

Start the sauce, then immediately drop the homemade noodles in the boiling pot of water. They should take only 2-3 minutes to cook. Drain well.

Once the sauce thickens, pour the drained pasta and all the veggies back into the wok. Toss and simmer another minute or two to thoroughly coat and season the pasta. Serve warm.

tbsp Light soy sauce

Blanch the noodles with hot water for 1-2 minutes, drizzle a bit of sesame oil mix well and set aside.

Mix all the sauce ingredients in a small mixing bowl and set aside.

Prepare all the vegetables by wash and cut into slices. Cut the beef steak into thin slices against the grain.

Marinate the beef slices with a tablespoon of sauce mixture for 10-15 minutes and set aside.

Heat the wok or pan over medium-high heat, drizzle 2 tablespoon of oil, add the beef slices. Flatten the beef and sear for 1-2 minutes and continue stir fry for another 1-2 minutes.

Then follow with the vegetables, start adding from the hard one. Cook for 1-2 minutes.

Make a space in the middle of wok, add the noodles and pour the sauce mixture in.

Toss all the ingredients and noodles well to combine evenly for 2-3 minutes until cook through.

Remove from heat and transfer to serving plate. You can topped with extra chopped spring onions and chilli oil according to your taste. Serve immediately! Enjoy!

Vegetarian Dan Dan Noodles

Mix all of the ingredients for the Dan Dan sauce together in a medium bowl, besides the cooking water from the noodles. Set aside.

Bring a large pot of water to boil on the stove.

Add the noodles and cook for 4-5 minutes (or according to package directions).

After the noodles are cooked, remove ¼ cup of the water and add it to the prepared Dan Dan sauce, whisk to combine.

Drain the noodles and set aside.

In a large skillet or wok on the stove over medium high heat, add the sesame oil.

Add the mushrooms and cook 3-4 minutes.

Add the hoisin sauce, shaoxing wine, soy sauce, five spice powder and spinach.

Cook for 2-3 minutes.

Add the cooked noodles and prepared sauce, toss everything together.

Serve topped with chopped peanuts and diced green onions.

Lo Mein. Delicious long egg noodles stir fried with an assortment of colorful vegetables in a delicious savory sauce!   These stir-fried noodles are popularly served at Chinese restaurants or Chinese takeout. Ready in 20 minutes. Great for busy weeknights.

Easy 20-min. Lo Mein

lb lo mein noodles

cabbage

red bell pepper (julienned)

snow peas (ends trimmed)

carrot (julienned)

button mushrooms (sliced)

green onion (finely chopped)

vegetable oil (or any neutral oil)

oyster sauce (or sub with vegetarian stir fry sauce)

chicken stock (or any stock of your choice)

In a small bowl, combine sauce ingredients as listed above. Set aside.

Soak your lo mein noodles in hot boiling water for 15-20 seconds just until loosened. Strain immediately.

In a large skillet or large wok, on medium-high heat, heat vegetable oil. Add carrots, red bell pepper, snow peas, mushrooms and napa cabbage. Add 1/4 cup water around the pan to help cook the veggies until softened, about 1-2 minutes. It&#39;s okay if there&#39;s still some water in the base of the pan.

Add in cooked noodles and prepared sauce. Toss everything together until noodles are coated in sauce and sauce has slightly thickened.  Garnish with green onions and enjoy!

Easy 20-min Lo Mein

Homemade chicken lo mein with load of vegetables and Paleo lo mein sauce. With keto low carb lo mein noodles, this is the best healthy lo mein recipe!

Chicken Lo Mein with vegetables (Paleo, Keto, Low Carb)

packs Well Lean shirataki konjac pasta (in fettucine style)

garlic (minced, about 3 cloves)

scallions (sliced diagonally

Rinse and drain the shirataki konjac noodles. Prepare garlic and scallions and separate pale green and green parts.

Prepare carrots, shiitake, and snow peas. Set them aside in one large plate.

Dice bok choy stems to about ½ inch sections and leaves to about 2-inch in sections. Set them aside in one large bowl.

Combine the lo mein sauce in a bowl. Mix and stir-well.

In a well-heated  wok or large skillet, add 1 tbsp of oil. Brown the chicken over medium-high heat and season with salt, onion, garlic, and white pepper.  Use a wooden spoon to break up the meat. Cook until the meat is cooked through, about 3-4 minutes. There should be little to no liquid in the skillet. Set it aside.

Use the same wok, add 2 tbsp of oil. Saute garlic and pale green scallion parts with a pinch of salt for about 5-8 seconds. Add carrots and shiitake. Season with 2 pinches of salt. Saute over medium-high heat for about 1 minute.

Add bok choy stems and leaves. Season with 2 pinches of salt. Saute for about 30 seconds.
