Put the noodles in a bowl, pour over boiled water from a kettle to cover and set aside for 5 mins. Drain and rinse under cold running water, then place in a large bowl.

Mix the soy, fish sauce, sesame oil, lime juice and chilli to make a dressing. Pour over the noodles and stir to coat. Add the spring onions, carrots, mint, prawns and nuts. Mix again and divide between 2 bowls to serve, with lime wedges on the side.

Pre-heat oven to 175°C (350°F).

In a medium bowl, whisk the egg until fluffy. Then whisk in the yogurt, milk and vanilla extract.

Fold in the flour, cocoa powder, stevia and baking powder until smooth and lump free.

Fold in the chocolate chips then pour the batter into a prepared 7.5 by 7.5 inch baking tin.

Bake for around 15 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownies to cool before slicing and enjoy!

tbsp plain/all-purpose flour*

tbsp unsweetened cocoa powder

tbsp stevia

¼ tsp baking powder

olive oil

tbsp unsweetened almond milk* (+1 tbsp for topping (optional))

In a small mug, mix together the dry ingredients.

Add in the oil and milk and mix until we’ll combined.Top with a few chocolate chips and microwave for 50-60 seconds. (For reference, my microwave is 700W and it took 55 seconds).

Allow the mug cake 1-2 minutes to cool before enjoying.

Gosh this was good - I accidentally undercooked it and created a molten middle pudding! Really hit the chocolate spot, thanks for the recipe!

This recipe is absolutely amazing, I sadly am out of both Stevia and Almond Milk so I had to replace those with regular granulated sugar and 2% Milk. Which brought the calories up to around 160 instead of 99, which is still pretty good as some recipes out there are 300+ ! So this is way easier to fit into my calorie deficit. This cake satisfied my cravings and sweet tooth, I recommend trying this!! I think It would also taste great with some ice cream on top, definitely going to make this again, especially once I buy more ice cream, would prob taste amazing with the caramel halo top.

g frozen berries

Lemon juice

g plain or all-purpose flour

g oats

cinnamon

Pre-heat oven to 190°C (375°F).

In a small bowl, toss together the berries, lemon juice and stevia until the berries are evenly coated. Transfer to a ramekin dish.

In a small bowl, mix together the flour, oats, stevia, cinnamon and applesauce until you have a crumbly mixture.
