<p>Treat your friends or family to these chicken bites, delicious with mango chutney and rice - and good cold the next day too</p>

Coconut-crusted lime chicken

skinless, boneless chicken thighs

tsp medium curry powderor garam masala

tsp chilli powder(optional)

<p>Heat oven to 200C/180C fan/gas 6. Put the chicken in a large bowl with the lime zest and juice, curry powder, chilli powder, if using, and seasoning. Mix well, then toss in the coconut. Place chicken on a rack sitting in a roasting tin, drizzle with the oil, then bake for 25 mins until cooked through and tender. Serve with mango chutney, lime wedges for squeezing over and rice, if you like.</p>

Yummy and easy to make these no bake chewy choc chip muesli bars are perfect for the lunchbox and super kid friendly! Better than bought ones.

No bake chewy choc chip muesli bars

coconut sugar

vanilla

quick oats

rice rice

quinoa flakes

linseeds (flaxseeds)

In a sauce pan, melt the butter with the honey and the coconut sugar.

Bring to the boil, then allow to simmer for about 5 minutes, it will be thick and gloopy.

Remove from the heat and stir through the vanilla.

Add the oats, puffed rice, quinoa flakes, desiccated coconut, flax seeds to the hot mixture and mix well.

Line a baking dish (mine was about 22cms by 33cms) with either: a double layer of baking paper or a silicone mat.

Press the mixture down well into the baking dish.

Top with the chocolate chips, pressing them into the mixture.

Refrigerate for 2 hours.

Remove from the fridge and the baking dish and slice into bars. I got 20 yumbox sized ones from this batch.

Store in the fridge in a sealed container with baking paper in between the layers.

Firstly blanch or steam the broccoli florets. Then chop the broccoli finely. You can also chop using the food processor.

Take wheat flour, salt, and oil in a bowl and mix well.

Add water and knead together to make a soft dough. Now apply oil over the dough and let it rest for at least 15 mins.

Meanwhile, for the Broccoli paneer filling, mix all the ingredients listed for making the filling in a bowl.

Divide the dough into equal portions—dust and roll the dough ball to make a 4-inch circle.

Keep 2-3 tbsp of filling in the circle&#39;s center and then bring the ends together.

Dust and roll gently to make a 6-8 inch diameter paratha.

Heat a griddle/tawa. Transfer the paratha to the hot griddle. Cook until brown spots appear on both sides.

Apple oil or ghee and cook until nicely browned.

Serve stuffed broccoli paneer paratha hot with raita and pickle.

Heat oven to 200C/180C fan/gas 6. Cut peppers and squash into bite-size pieces (leave skin on the squash). Tip all the veg into a baking tray, add garlic, 2 tbsp oil and seasoning, then mix and roast for 20 mins. Add onion, cumin, harissa and almonds. Roast for another 20 mins, then cool.

Put couscous into a large bowl, pour over the stock, cover, then set aside for 10 mins. Fluff up with a fork.

In a bowl, mix zest, juice and remaining oil. Squeeze garlic pulp from skins into the bowl, mash well and fold in the mint. Pour over the veg, then toss with the couscous.
