Mexican Black Beans in Instant Pot

Onions (diced)

tbsp Garlic (minced)

Bay leaf ((optional))

Red bell pepper (diced)

Dry black beans (7 ounces. rinsed)

Water

tbsp Ground Cumin (Jeera powder)

tbsp Oregano

Paprika

Salt

Lime juice

Cilantro (chopped)

Set your pressure cooker to saute mode, and add oil to the inner pot.

Add the onions, bell pepper, and garlic to the pot, and saute for about 3 minutes.

Add the bay leaf and spices.

Add the black beans and water, stirring to deglaze and incorporate the flavorful veggie bits from the bottom of the pot into the beans.

Cancel saute mode, then close the lid, making sure the vent is set to sealing.

Set the pot to manual or pressure cook mode on high pressure and increase the cook time to 35 minutes.

When the cook time is finished, let the pressure release naturally.

When the pressure has fully released, remove the lid of the pressure cooker, then gently stir the beans.

Add lime juice and garnish with cilantro. Enjoy!

Slow Cooker Mexican Beans

dry pinto beans (rinsed and picked through)

Pace Picante Sauce (or other salsa)

garlic (2-3 cloves)

bacon (diced and cooked)

jalapenos

diced onion ((half of 1 small onion))

Caldo de Tomate

water ((enough beans

Stir all ingredients together in the slow cooker. Add about 5-6 cups of water or as much is needed to fully immerse the beans.

Cover and set slow cooker to low. Cook for 12 hours, or until beans are nice and soft. Since slow cookers vary, cook times can vary as well.

Garnish with sliced jalapenos and cilantro if desired

Heat the oil in a deep frying pan and fry the onions and peppers for a few mins until softened. Stir in the chipotle paste for a minute, followed by the tomatoes. Add up to a tomato can-full of water to cover the chicken and bring to a gentle simmer. Add the chicken breasts and gently simmer, turning the chicken occasionally, for 20 mins until the chicken is cooked through.

Bring a large saucepan of water to the boil with the stock cubes. Add the quinoa and cook for 15 mins until tender, adding the beans for the final min. Drain well and stir in the coriander and lime juice, then check for seasoning before covering to keep warm.

Lift the chicken out onto a board and shred each breast using two forks. Stir back into the tomato sauce with the sugar and season. Serve with the quinoa, scattering the stew with some coriander leaves just before dishing up and eating with a dollop of yogurt on the side.

These Mexican charro beans are incredibly flavorful and tender! Charros Bean Recipe (Mexican Pinto Beans)

Mexican

Yellow Onion (– small dice (about 1 ½ cups))

Jalapenos (– seeded, ribbed & small dice (about ½ cup))

Garlic (– minced)

½ tsp EACH: Ground Cumin & Dark Brown Sugar

(15 ounce) cans reduced-sodium Pinto Beans

(15 ounce) can Fire Roasted Tomatoes (– do NOT drain)

½ Cups No-Sodium Chicken

Kosher Salt

Optional topping: Pico de Gallo

Cook Bacon

Cook bacon: Heat a large pot or Dutch oven over medium heat. Add the bacon (add a splash of neutral oil if you are using lean bacon) and cook, stirring occasionally, until the bacon is cooked and crispy, about 6-8 minutes. Use a slotted spoon and remove the bacon to a paper towel-lined plate. Turn off heat and drain or blot all but 2 tablespoons of bacon grease (fat) from the pot.

Cook Chorizo

Cook the chorizo: Increase heat to medium-high and add the chorizo to the pot. Cook undisturbed for 1 ½ minutes. Flip and cook another 1 minute undisturbed. Stir and continue to cook, using the back of a wooden spoon to break the chorizo up into small pieces, until browned, about 1 more minute. Use a slotted spoon and remove the chorizo to a SEPARATE paper towel-lined plate. Turn off heat and drain or blot all but 1 tablespoon of grease from the pot.

Sauté Vegetables

Sauté vegetables + seasonings: Decrease heat to medium and add the onions and jalapenos. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, cumin, sugar, chili powder, oregano and paprika. Season with ½ teaspoon salt. Cook, stirring, until fragrant, about 1 minute.

Add Remaining Ingredients

Add remaining ingredients: Add in the beans and liquid, tomatoes, broth (or beef if using) and the reserved chorizo to the pot. Stir well to combine. Increase heat to medium-high and bring to a rapid simmer. Immediately reduce the heat to maintain a gentle simmer.

Simmer Beans

Simmer: Simmer, stirring occasionally, for 25-30 minutes, or until slightly thickened. (NOTE: For soupier, more stew-like beans, cover the pot and simmer for the first 15 minutes, then remove the cover and simmer an additional 10 minutes.)

Add Bacon

Add bacon, cilantro &amp; adjust for seasoning: Turn off the heat and add the bacon and half the cilantro. Stir to combine. Taste and adjust for seasoning with salt and pepper.

Serve Charro Beans

Serve: Garnish with remaining cilantro, along with fresh tomatoes or Pico de Gallo and jalapenos if using. Serve and enjoy!

These beans are delicious!  Such a crowd favorite, I'm making a double batch to freeze and serve at my birthday dinner along with homemade pulled pork enchiladas.

I made these after having them in Mexico.. been craving them since then. I was out of cilantro and I added a bit of Tajin for seasoning. It turned out great!! Easy recipe to follow, unbelievably flavorful!
