These Mexican wedding cookies are so simple and take only 5 ingredients to make! The perfect bite-sized cookie recipe that will literally melt in your mouth. 

Mexican Wedding Cookies

salted butter ((2 sticks))

Tablespoon pure vanilla extract

Preheat

Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.

Beat

Beat the butter on medium speed for 1 minute. You don&#x27;t want the butter to be too soft. I usually just set it out for 10 minutes beforehand. Then mix in 3/4 cup powdered sugar and beat until smooth and creamy.

Then mix in the vanilla. Scrape down the sides. Add the flour and mix on low speed just until combined. Then add the chopped pecans and mix until combined.

Scoop

Scoop dough using a small cookie scoop or Tablespoon and roll into balls. You can fit 24 per sheet. Bake for 13-15 minutes, or until the bottoms are lightly brown. Allow to cool on pan for 5 minutes.

Roll

Place the remaining 3/4 cup powdered sugar in a bowl. Then roll the cookies while they are still warm into the powdered sugar. Then place on a cooling rack and allow to cool completely. Once cooled, roll again or use a sifter to sift the remainder of the powdered sugar over top.

Store

Store in an air tight container for up to 3 days or freeze up to 2 months.

Preheat oven to 400 degrees. Cream together the butter, sugar and vanilla. Slowly add the flour and salt and mix just until combined. Stir in the nuts.

(230 grams) unsalted butter, softened

2 and ¼ cups (280 grams) all-purpose flour

Preheat the oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats and set aside.

In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using an electric mixer, cream together the butter, ½ cup (60 grams) of powdered sugar (set the remaining 1 cup aside to roll the cookies in), and vanilla extract for 1 to 2 minutes or until well combined. Mix in the flour and salt until fully combined, stopping to scrape down the sides of the bowl as needed. With the mixer on low speed, mix in the chopped pecans until fully incorporated into the cookie dough.

Using a 1-tablespoon cookie scoop (or measuring tablespoon) scoop out the cookie dough, roll into balls, and place on the prepared baking sheets.

Bake for 13 to 15 minutes or until the cookies are set and the bottoms are lightly browned.

Allow cookies to cool slightly for about 5 minutes, then roll each cookie in the remaining 1 cup (120 grams) of powdered sugar while they're still warm. Allow to cool completely and roll all of the cookies one more time in the powdered sugar.

Using an electric mixer, beat together butter and powdered sugar until creamy.

Add the salt and vanilla (or almond) extract, and beat until incorporated, scraping down the sides of the bowl as needed.

Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper.

In a large bowl using a hand electric mixer or stand mixer with paddle attachment cream the butter. Add 1/2 cup of the powdered sugar and mix until it is light and fluffy (3-5 minutes).

Add the flour, vanilla extract, salt and pecans. Beat until a dough forms, scraping the sides of the bowl.

Use a 1-tablespoon cookie scoop to scoop dough balls and place on the prepared baking sheet. NOTE: they don&#39;t need much space between them because the cookies do not spread or rise when baked.

Bake for 11-12 minutes until the bottoms just start to turn golden. Do not overbake. NOTE: the cookies will not turn color when baked. If they are golden they are over baked.

Remove from the oven and leave them on the baking sheet for 5 minutes.

If you want them really white, roll them in the sugar for a second coating once they are completely cool.

Add the remaining 1/2 cup powdered sugar to a small bowl. One by one, place a cookie on a fork and lower into the powdered sugar. Sprinkle some on top to coat. Gently shake any excess sugar back into the bowl. Place on a cooling wire rack. Repeat for the remaining cookies.

When the cookies are fully cooled, roll them in the powdered sugar for a second coating.

Preheat the oven to 325 degrees and line a baking sheet with parchment paper. Set aside.

Beat butter and powdered sugar together until light and fluffy, about 30 seconds or so.

Add in vanilla and almond extract, mixing until combined.

Mix in salt, flour and pecans, until combined.

Roll dough into 1” balls and place on the baking sheet about 1” apart (these cookies do not spread much).

Bake for 12-14 minutes, or until the bottoms of the cookies are very light brown (these can over bake quickly).

Allow to cool about 5-6 minutes, or until they are still warm but cool enough to touch. Roll each in powdered sugar and allow to cool entirely on parchment paper. Re-roll in powdered sugar.

These super-easy, melt in your mouth cookies made with lots of almond meal and rolled in powdered sugar are a global favorite! Almost every culture has a variation and all are delicious!
