Easy Nachos

Standard Size Bag Of Tortilla Chips

Shredded Beef (Pork

Black beans beans

Tomatoes (jalapenos

Corn (black olives, avocados)

Preheat oven to 350 degrees F.

Line a baking sheet with a silicone baking mat or foil.

Spread chips over cookie sheet.

Sprinkle half of the grated cheese over the chips.

Sprinkle toppings over the chips and cheese.

Sprinkle on remaining cheese.

Bake for approximately 10 minutes, or until cheese is good and melty.

Serve warm with sides such as guacamole, sour cream or salsa.

<p>Peel and stone avocados and put in a bowl. Mash using a fork until fairly smooth, but with a little texture. In a small bowl, mix together lemon juice, Tabasco sauce, chilli, coriander, onion, olive oil and salt. Fold this through the avocado. Make it just before serving and don’t put it in the fridge.</p>

These classic Tex-Mex nachos are loaded to the MAX! Avoid soggy nachos by briefly baking them before topping with cheese, seasoned beef, refried beans, guacamole, and salsa. They're a great snack, party appetizer, or even casual weeknight dinner.

"I took a little different approach this time. I laid one layer of chips, added some refried beans, ground beef mixture and some grated cheese. Baked in a 380 degree oven (on convection) until the cheese was well melted and the chips were starting to brown. Then I added another layer of chips, meat and cheese and baked again until the cheese melted and the chips were browed. Removed from oven and added jalapeno slices, chopped tomato, chopped black olives, chopped onion and chopped cilantro. Best ever for me.  Cheese melted throughout and all chips crispy to the bottom."

Make the taco spice blend: Combine all of the spices (chili powder through cayenne) together in a small bowl.

Make the beef and bean topping: Heat the vegetable oil on medium high heat until it begins to shimmer. Add the ground beef to the pan and season it with all of the taco spice blend. As the meat cooks, use a spoon to break the meat up into crumbles.
Cook for about 8 minutes until the meat has browned and drain the fat using a colander.
Return the meat to the pan and add the refried beans and the water. Heat the mixture until the beans are smooth and warmed through. Reduce the heat to low and keep the beef-bean mixture warm while you prepare the chips.

Toast the chips: On a 13x18-inch oven-safe platter or sheet pan, arrange the tortilla chips in a single layer, overlapping them slightly. Toast the chips in the preheated oven for 5 minutes, or just until you begin to smell their aroma.

Assemble and bake the nachos: Carefully remove the pan from the oven and top with one half of the shredded cheeses. Allow the heat from the chips to melt the cheese slightly before topping the chips with the beef and bean mixture.
Sprinkle the remaining cheese over the beef and return the pan to the oven for 5 minutes, or until the cheese has fully melted.

Top and serve: Top the nachos with the pico de gallo, chopped cilantro, jalapeño slices, or any of your preferred toppings. Serve hot.

Preheat grill and prep ingredients: Preheat your grill for high direct heat. While the grill is heating, prep the ingredients.

BBQ sauce with chicken: Mix the cooked chicken with the BBQ sauce and set aside.

Make sour cream BBQ sauce: Mix the sour cream with BBQ sauce and set aside.

foil boats: Take the sheets of aluminum foil and crimp the sides so that you have "boats".

nachos: Arrange a layer of tortilla chips over the bottom of the foil. It's okay if some of the chips overlap, but all chips should have some exposure at the top. Sprinkle with most of the cheese (reserve some to go on top of the chicken).
 
Sprinkle the BBQ sauce coated cooked chopped chicken over the chips. Sprinkle with remaining cheese.

Grill: Place nacho boats on pre-heated grill, cover and cook for 5 to 10 minutes, until the cheese is melted and the chips are lightly browned at the edges.

If your grill doesn't have a cover (as in a campfire), either make a large foil packet to put the nachos in, or tent the foil boats with another piece of foil. Some of the nachos prepared this way may not be as crispy, but they'll still be great.

Serve: To serve, drizzle with sour cream BBQ sauce and sprinkle with extras such as chopped tomato, red onion, jalapeño, and/or cilantro.

Sweet Potato And Black Bean Nachos With Green Chile Salsa.

Old El Paso Taco Seasoning

black beans (drained + rinsed, 14)

sharp cheddar cheese (shredded (or a mix of cheddar and pepper jack))

guacamole + plain greek yogurt (for serving)

tomatillos

jalapeño

can Old El Paso Chopped Green Chilies (4)

juice of 1 lime

Sweet Potato and Black Bean Nachos with Green Chile Salsa.

Preheat the oven to 425 degrees F.

Place the sweet potatoes wedges and cauliflower florets in a large bowl and drizzle with olive oil. Add the taco seasoning and gently toss with your hands or two spatulas to evenly coat. Spread the wedges and florets out onto one or two baking sheets in an even layer. Bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes to be tender, but crisp.

Remove from the oven and top with the black beans, leaving out 1/2 cup of black beans to add at the end. Add the cheese in an even layer. Return the pan or pans to the oven and bake for another 5-10 minutes or until the cheese is melted and bubbly.

Top with the remaining black beans, Green Chile Salsa (recipe below), guacamole, cilantro, green onions and greek yogurt. DIG IN!

Preheat the broiler to high

Place the tomatillos, jalapeño and garlic on a sheet pan, leaving the skins on the tomatillos and garlic. Broil for about 5 minutes or until charred all over. Remove and allow to cool.

Once cool enough to handle, remove the skins from the tomatillos and garlic, then discard. Halve the jalapeño and remove the seeds or leave some in for more heat! Add the tomatillos, garlic, jalapeño, Old El Paso Chopped Green Chiles, cilantro, juice from one lime and 1 teaspoon salt to a blender. Blend until smooth and combined. Pour into a bowl and place in the fridge for one hour to let the flavors mend. Taste and add more salt if desired. SERVE!

Loaded Sweet Potato Nachos

taco seasoning (try our Homemade Taco Seasoning)

Pinch of dried chipotle or ancho pepper powder (optional)

Salt and black pepper

Line 2 large rimmed baking sheets with parchment paper. Toss the sweet potato slices with oil. Place slices in a single layer on the baking sheet taking care not to crowd them then sprinkle with salt.

Place baking sheets in the oven and bake for 10-12 minutes, rotating the sheets halfway through cooking time, or until slices are lightly browned and crisp on the edges.

Remove chips to a wire cooling rack to rest while you repeat with the remaining sweet potato slices.

To Make the Sweet Potato Chips:

Layer ½ of the sweet potato chips (homemade or store-bought) onto a baking sheet or in a glass baking dish. 

Top with ½ of the chicken or taco meat, beans or corn if using, and cheese. 

Repeat with this layer, ending with cheese on top. Place baking sheet or dish into the oven and bake 5-10 minutes or until cheese is melted.

While the nachos are baking, combine all of the dressing ingredients in a small bowl and whisk to combine.

Remove pan from oven, add salsa, diced tomatoes, sliced or diced onions, chopped cilantro, avocado or guacamole, etc.

Drizzle Southwest Ranch Dressing over nachos and serve with lime wedges, if desired.
