Nectarine & raspberry gratin

Heat the grill to medium. Place the nectarines cut-side up in 4 individual gratin dishes and pile the raspberries in the centre of each half. Drizzle cream over the fruit, sprinkle with sugar, then grill for 8-10 mins until bubbling and golden. Dust with cocoa and serve.

These nectarines with ricotta and honey taste so good, it is hard to believe that this is a low-fat dessert.

Sparkling White Sangria

(2 tablespoons) brandy

(2 tablespoons) orange liqueur,

sugar (see note)

orange, halved

limes

apple,

nectarine, chopped

chilled sparkling wine,

lemon-lime soda,

grapes

In a large pitcher, combine the brandy, orange liqueur and sugar. Squeeze juice from one lime and one orange half into the pitcher. Stir until the sugar dissolves. Slice the remaining orange half into thin slices and add to pitcher, then add chopped apples and nectarines. Add the sparkling wine, lemon-lime soda and a large bunch of frozen grapes. Place ice cubes in glasses (do not put them in the pitcher or they’ll water the drink down) along with small bunches of frozen grapes and pour sangria over top. Spoon chopped fruit into glasses, garnish with lime slices if desired and serve.

Note: Superfine sugar dissolves much faster than regular sugar. It is available at most supermarkets. This recipe makes a fairly sweet sangria; if you prefer it dry, use less sugar.

Preheat oven to 350 degrees and spray a baking dish with non-stick cooking spray.

Place the nectarine halves in your baking dish cut side up. Whisk the honey, cinnamon and vanilla together in a small bowl. Pour the sauce over your nectarines. (Make sure to fill the center and let the sauce drip down the sides.)

Bake for 25-30 minutes.

Serve immediately with vanilla ice cream or yogurt and any extra cinnamon honey sauce!

Preheat your oven to 325 degrees F (162 degrees C) and melt butter in your pie pan or 9 x 9 baking dish. Coat all sides of the baking dish with melted butter.

Wash and slice nectarines, then add (optional) sugar and/or orange zest.Combine the dry ingredients: flour, baking powder and sugar. Add milk and vanilla extract, then mix until batter is smooth.

transfer to baking dish

Pour batter into melted butter in your baking dish. Add fruit on the top, but do not stir into the batter.

bake

Bake for one hour at 325 degrees F (162 degrees C) or until golden brown and an inserted toothpick or knife comes out clean.

cool and serve

Remove from the oven and allow to cool slightly on a wire cooling rack before serving. Serve with ice cream of whipped cream.

Massaged kale is topped with fresh nectarines, tomatoes, corn and smoked almonds for a light and refreshing salad that&#x27;s perfect for entertaining or prepping for lunches!

Summer Kale Salad

bundles lacinato kale (stems removed and chopped)

nectarines (pitted and diced)

corn kernels (fresh or frozen and defrosted)

cherry tomatoes (halved)

smoked almonds (chopped (see notes))

vegan feta (optional)

tahini

lemon juice

basil leaves (finely chopped)

In a small bowl, whisk together the ingredients for the dressing until smooth. Add salt to taste and water as need to thin. I end up using about 4-5 tablespoons water.

Place the chopped kale in a large bowl then pour the dressing over top. Using your hands, massage the dressing into the kale leaves until the kale starts to slightly wilt and is completely coated with dressing.

Top kale with nectarines, corn, tomatoes, feta and almonds. Serve immediately or store sealed in the refrigerator for up to 2 days.

Step 1

Preheat oven to 450°F. Grease a baking sheet.

Step 2

Combine biscuit mix and sugar. Stir in buttermilk. Fold in fruit.

Step 3

Using a large spoon, drop about 1/4 cup of batter per biscuit onto baking sheet. Bake 10 – 12 minutes or until lightly browned. Let cool for 1 minute before removing to cooling rack.

Step 4

Combine icing ingredients. Mix well. Pipe or spread over biscuits.

Almond crêpes with avocado & nectarines

Beat one egg and 1 1 /2 tbsp of the almonds in a small bowl with 1 tbsp water. Heat 1 tsp oil in a large non-stick frying pan over a medium heat and pour in the egg mixture, swirling the pan to evenly cover the base. Cook until the mixture sets and turns golden on the underside, about 2 mins. (There is no need to flip it over.) Turn it out onto a plate and make another one with 1 tbsp water, the remaining egg, oil and almonds.

Top each crêpe with the avocado, nectarines and pomegranate, and squeeze over the lime at the table.
