This 5-Ingredient Easy Meatloaf recipe may be short on ingredients, but it is loaded with flavor.&nbsp; The lack of breadcrumbs means you don't have them soaking up the juices, so the meat stays moist - and it's gluten free too!&nbsp; Parmesan cheese, onion, egg, ketchup, salt, and pepper are all that go into this yummy loaf of goodness!

5-Ingredient Easy Meatloaf

oz 90% Lean Grass-Fed Ground Beef

Parmesan Cheese, grated

Onion, diced

Large Egg

Ketchup for mixing with beef (see my recipe

Salt

Preheat

Preheat oven to 350 degrees F.  Line a loaf pan with aluminum foil for easy removal of the meatloaf after it is cooked.

Dice Onion

Mix all ingredients (except the 1/3 cup Ketchup reserved for the top) together in a large bowl with a fork or with hands: beef, parmesan cheese, onion, egg, ketchup, salt, pepper.&nbsp;

Bake

Form a loaf in the loaf pan.  Spread the remaining 1/3 cup Ketchup over the top of the meatloaf.  Bake in the oven for 1 hour (60 minutes).

Serve

Remove from the oven and let sit for 5 minutes.&nbsp; Remove from the pan, cut and serve with roast or mashed potatoes or salad.&nbsp; Enjoy!

Italian-Style Keto Meatballs without Breadcrumbs

Preheat oven to 425ºF. Line a large rimmed baking sheet with parchment paper or foil (for easy clean up), and set in the wire rack.

In a large mixing bowl, combine the almond flour and chicken stock. Stir and set aside while it absorbs the liquid.

Heat a medium size skillet over medium heat. Add olive oil, onions, garlic and a pinch of salt &amp; pepper. Cook, stirring occasionally, until the onions are soft and turning golden brown, about 8-10 minutes.

In the same large mixing bowl that has the almond flour and chicken stock, add the cooked onions &amp; garlic, ground beef, ground pork, 2 eggs, parsley, salt, pepper and Italian seasonings. Use a spatula or hands to mix until completely combined.

Use a large cookie scoop (or measure out 3 tablespoons) to scoop out meatballs. Place meatballs on wire baking sheet. Will make 23-24 meatballs.

Bake the Whole30 meatballs in the oven for 25-30 minutes, or until golden brown.

How to Air Fry Lamb Ribs Recipe

Lamb Ribs

tsp Seasoning (see notes)

If your air fryer requires pre-heating, start this setting now.

Thoroughly dry roughly 800g Lamb Ribs. If they&#39;re not already cut into single ribs, use a sharp knife to cut between the bones now.

Drizzle over 1 tbsp Oil and 1½ tsp Seasoning and toss to thoroughly coat the lamb.

Place the ribs into the air fryer basket. Leave a little space between each so the air can circulate if possible.

Cook for 15 minutes at 200c/390f.

The ribs will be part cooked and will need turning, especially if your fryer is quite packed like mine. If you have lots of room, you could skip this step.

Use tongs to turn the ribs.

Cook for a further 15 minutes at 200c/390f.

Allow to rest for at least 3 to 4 minutes before tucking in. Spoon over juices that have collected in the bottom of the air fryer for extra flavour.

Cook for a total of 30 minutes at 200c/390f. Turn midway through cooking.

To Cook From Frozen

Lamb ribs is not a cut of meat I often buy but these looked so delicious I had to try them.  I wasn't disapponted, so tender and juicy and so easy to make.

With all your air fryer recipes, my poor air fryer is struggling to keep up with making them all.

I cooked these lamb ribs, adding some ground cumin and chilli powder to the spice mix. They were full of flavour and so easy to cook. A great change from my usual pork ribs.

If you are using a basket type fryer and are able to raise the cooking grid to be nearer the top, do this now. I use a small pyrex bowl. This helps to maximise the amount that the scallops will colour. If you have a choice of position in a different type of air fryer, choose the option nearest the element, eg. the top shelf.

If your air fryer requires pre-heating, Start this setting going.

Melt 1 tbsp Salted Butter in a small bowl. I do this in the microwave but you could use a small heatproof bowl in the air fryer if you like. The preheat setting will likely do the trick.

Thoroughly dry 6 Scallops. Trim any bits of connective tissue if needed.

Use a pastry brush to coat the scallops on all sides with the melted butter.

Sprinkle over roughly ¼ tsp Sea Salt Flakes. Crush them between your fingers as your sprinkle for a thinner even coverage.

Place the scallops into the air fryer. Leave a little space between them so the air can circulate. Be careful not to catch your hands on the side of the hot basket.

Cook for 6 minutes at 200c/390f. Turn then cook for a further 3 minutes.

Be careful removing the scallops from the fryer as they will be delicate. Serve hot straight away.

To Air Fry From Frozen

Incredible flavour. Perfect cooking time. Super recipe!

Well, this worked a treat! Had to cook them in two batches, which was perfect really as we could enjoy them nice and hot.

So simple! I love how magic air fryers are. You can cook everything in them.

Perfectly flaky and flavorful Baked Garlic Parmesan Fish Sticks for a healthy dinner in under 30 minutes. These parmesan crusted fish sticks have an almond flour coating and also make for an easy keto, low carb and gluten free party appetizer!

Baked Garlic Parmesan Fish Sticks

1½ lbs Tilapia

Tbsp Shredded Parmesan Cheese

Almond Flour

1½ tsp Italian Seasoning/Dried Oregano

1½ tsp Garlic Powder

tsp Onion Powder

Pepper

tsp Olive Oil

Preheat the oven to 400°F and line a baking sheet with parchment paper (or foil greased with cooking spray/oil).

Slice fish fillets into even 1” thick strips and pat dry with paper towels.

In a large shallow bowl or plate stir together shredded parmesan, almond flour, Italian Seasoning, garlic powder, onion powder, salt and pepper.

Brush all sides of fish with melted olive oil, or use finger tips to smear.

Place fish sticks in parmesan coating and use hands to coat all sides. The parmesan will not stick much to the strips.

Transfer to prepared baking sheet, and repeat with all sticks.

Sprinkle on remaining shredded parmesan.

Bake for 12 minutes or until fish flakes when tested with a fork.

Egg Roll Chicken Meatballs with Sweet Chili Sauce

lb Chicken Breast (Ground

Shredded Cabbage (140 grams)

Carrots (Chopped, 64 grams)

White Onion (Chopped, 40 grams)

Green Onion (Chopped, about 25 grams)

1½ Tbsp Minced Garlic (about 4-5 cloves)

Tbsp Minced Ginger (about 6 grams)

1½ Tbsp Coconut Aminos (or Low Sodium Soy Sauce)

½ tsp Black Pepper

Almond Flour (40 grams, see notes for sub)

Water

Rice Vinegar (or White Wine Vinegar)

tsp Chicken Broth

tsp Coconut Aminos (or Low Sodium Soy Sauce)

1½ tsp Crushed Red Chili Pepper Flakes

1½ tsp Minced Garlic (1-2 cloves)

tsp Minced Ginger

Stevia Sweetener (¼ cup sugar worth (Use your brand's Conversion Chart))

¼ tsp Xanthan Gum (see notes for sub)

Preheat oven to 350°F and lightly grease a baking sheet.

If using whole chicken breast, cut into large chunks and place in a food processor.

Pulse (do not process, use the pulse option, or the chicken will form mush) about 10-15 times until it turns into a ground chicken. Set aside.Work in batches if needed.

Place cabbage, carrots, white onion and green onion in food processor and pulse until finely chopped.

Prepare Chicken and Vegetables:

In a large bowl combine chicken, chopped vegetables, coconut aminos/soy sauce, garlic, ginger, salt, pepper and, almond flour, and stir until uniform.

Spoon out a heaping 1-2 tablespoons worth of the mix, toss between hands to shape into meatballs (about 20) and transfer to baking sheet. Use clean hands!

Bake for 23 minutes.

Make Meatballs:

While meatballs cook, heat a small pot over medium and combine vinegar, water, broth, coconut aminos or soy sauce, chili flakes, garlic, ginger and stevia sweetener. Bring to a simmer. Simmer for 3-4 minutes until it starts to thicken.

Add in xanthan gum, whisking until it starts to thicken. Set aside.

Sauce will thicken more when cooled. Add more water if too thin.

Cook Sauce:

Transfer meatballs to a serving dish, top with sauce and garnish with more cilantro.

Serve with your choice of side. Rice or Cauliflower Rice go well!

I absolutely love this recipe! I tried it out once, then went shopping for more ground chicken that same week to make two more batches. It's great that so many veggies sneak their way into a savory chicken dish. It actually tastes like an egg roll!
