How To Make Dried Orange Peel

Using a vegetable peeler, remove the orange color along with a bit of the white pith of the orange. 

Stack the peels on top of each other and slice into strips.

Cut in the opposite direction to dice the peels.

Sprinkle on a parchment paper lined baking pan.

Bake at 250 in 15 minute increments until dried.

Cool completely before storing in an air tight container.

Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted.

Stir 2 cups sugar and 1/4 cup &lt;u&gt;each&lt;/u&gt; instant coffee and orange juice into chocolate mixture until blended. Mix in 4 eggs. Stir in 1 cup flour until blended. Spread into foil-lined 13x9-inch pan sprayed with cooking spray.

Beat cream cheese, remaining sugar, 1 egg, 1/4 cup &lt;u&gt;each&lt;/u&gt; flour and instant coffee and remaining orange juice and zest in same bowl with whisk until blended. Spoon mixture over brownie batter. Swirl with knife to marbleize.

Bake 40 min. or until toothpick inserted in center comes out with fudgy crumbs. DO NOT OVERBAKE. Cool in pan.

Cut carrots lengthwise, then crosswise in half; place in large bowl. Add parsnips.

Mix dressing, orange zest and red pepper until blended. Drizzle over vegetables; toss to evenly coat. Spread onto rimmed baking sheet sprayed with cooking spray.

Add apples and cheese to baking sheet; stir to combine. Bake 15 to 20 min. or until vegetables and apples are tender.

Bring 1 cup milk, cinnamon stick and zest to boil in saucepan. Remove from heat. Let stand 5 min. Discard cinnamon stick. Cool milk mixture 10 min.

Beat pudding mixes and remaining milk in medium bowl with whisk 2 min. Stir in flavored milk. Whisk in sour cream and ground cinnamon until blended.

Pour into 8 (1/2-cup) ovenproof individual bowls or ramekins. Refrigerate 30 min.

Heat broiler. Place bowls or ramekins in 13x9 inch pan; fill pan with ice. Sprinkle sugar over dessert, about 1 tsp. each. Broil, 6 inches from heat, 5 to 8 min. or until sugar is caramelized, rotating pan after 3 min. Cool in pan; remove dessert from pan. Let dessert stand at room temperature 10 min. Store leftovers in refrigerator.

Mix flour, baking powder and zest in medium bowl. Beat butter and sugar in large bowl with mixer until blended. Add eggs and vanilla; mix well. Gradually beat in flour mixture until blended. Stir in nuts and chocolate.

Place dough on lightly floured surface; divide in half. Roll each half into 14-inch log; place, 2 inches apart, on baking sheet sprayed with cooking spray.

Bake 30 min. or until lightly browned. Transfer to cutting board; cool 10 min. Use serrated knife to diagonally cut each log into 18 slices, each about 3/4-inch thick. Place, cut-sides down, on baking sheets. Bake 25 to 30 min., turning over after 15 min. Remove to wire racks; cool completely.

Mash potatoes in large bowl. Add dressing, 1/4 cup sugar, ginger and zest; mix well.

Spoon into 1-1/2-qt. casserole. Combine nuts, remaining sugar, butter and cinnamon; sprinkle over potato mixture.

neutral grain spirit (such as Everclear; can substitute with high-proof vodka)

dandelion root

licorice root

German chamomile (dried flowers)

In a 1-liter glass container that can be easily sealed, combine the alcohol and water.

Grind the remaining desired ingredients together in a mortar and pestle and add to the alcohol/water base.

Seal the container and allow the ingredients to infuse, preferably in a dark place that's not too cold, for about 5 weeks.

After the maceration period, combine water and your desired sweetener in a pot and heat until the sugar is totally dissolved. Allow to cool completely.

Add small amounts of syrup and water to your maceration, and start tasting once the container is about two-thirds full, then fill the remaining volume with water or syrup to the desired sweetness. This will produce an amaro of about 34 percent ABV.

Filter immediately through clean untreated muslin or several layers of cheesecloth, or let the final mixture rest for a few more days before filtering (this will allow for better integration).

The amaro will be best if allowed to sit for several more weeks once finished, but it's ready to taste once filtered.
