Mix coconut milk and basil seeds in medium bowl. Cover. Refrigerate overnight.

Stir guava nectar and honey in small bowl with a wire whisk until well mixed and honey is completely dissolved.

They can be purchased from specialty and natural food stores as well from many online retailers• Basil seeds will re-hydrate in as little as 20 minutes. To enjoy the same day instead of prepping for an overnight dish, allow seeds to soak in coconut milk at least 20 minutes in the refrigerator before serving.

This easy Almond Joy Overnight Chia Pudding recipe is inspired by my love for candy bar,  Almond Joy! This chia pudding tastes just like the sweet treat as it’s made with chocolate, coconut milk, and almonds.

Almond Joy Overnight Chia Pudding

maple syrup (or more to taste)

vanilla

cocoa powder

almonds

coconut shavings

dark chocolate chips

Mix chia seeds, maple syrup, vanilla, and coconut milk in a bowl. Cover the bowl with plastic food wrap and leave at room temperature to thicken, for about 15-20 minutes.

Once it has thickened, stir together again, and add a little bit more milk if desired. Add cocoa powder and stir again.

Top with coconut shavings, sliced almonds and mini chocolate chips.

Store chia pudding refrigerated in an airtight container or in a bowl covered with plastic wrap. Store without toppings for about 1 week. If stored with toppings consume over 2 days.

To make layering effect of chocolate and plain pudding simply divide the pudding in two portions once it has thickened. Add cocoa to one half and leave the other half plain. Place in a jar by layering with nuts, almonds, chocolate chia layer and plain chia layers.

Chia Pudding Recipe

milk ((almond milk, cashew milk, whole milk, coconut milk, etc.))

tsp pure vanilla extract

fine sea salt

In a large bowl, whisk together milk, honey vanilla and sea salt until combined (it’s easier to incorporate honey if the milk is room temperature).

Add chia seeds and whisk to combine.

Place the large bowl in the refrigerator to chill for 30 minutes, stirring once halfway through.

Transfer mixture into 2-4 glass jars with lids.

Chill overnight in the refrigerator, or for at least 8 hours.

Once chilled, serve plain or with desired toppings.

To make in one bowl:

Put all of the ingredients in the order listed into the container of a Vitamix (or other high-powered blender).

Blend starting on low speed and gradually increasing to high, until the mixture is smooth.

Transfer mixture to jars and chill overnight, or for at least 8 hours. Serve.

Prepare All Ingredients

Grind Chia Seeds

Add the Chia seeds into a magic bullet or food processor and grind.

Once your chia seeds are blended into a powder, add a nut milk to the same container and sugar sweetener. Close the lid and remix it. 

Pour into the Glass

Prepare Dalgona Coffee Topping

Place instant coffee, sugar sweetener, and boiling water in equal parts into the food processor and start mixing it. It will take approximately 3 to 4 minutes until the foam begins forming.

I have been a little hesitant to jump on the Chia Seed Pudding trend but honestly, this is delicious! I used coconut almond milk to add some more flavor. It satisfies my sweet tooth in a very healthy way and it helps me stay full longer. Seriously, if you are on the fence, just make it! Easy and delicious!

Yum! East, delicious, and healthy. Had it with frozen raspberries on top. Next time I will probably stir the protein powder in with the milk first so I don’t get clumps.
