Serve for breakfast, brunch or Pancake Day – or, show how much you care with a surprise breakfast in bed on Valentine&#8217;s Day or Mother&#8217;s Day. Ricotta pancakes with spiced pear and bacon butter

self-raising flour

¼ tsp baking powder

ground cinnamon

medium free-range eggs, separated

butter, melted, plus extra for frying

milliliters low-fat natural yogurt

ricotta

vanilla bean paste

For the spiced pear and bacon butter

unsalted butter, plus extra to taste

pear,

smoked free-range streaky bacon rashers

star anise

cinnamon

Tabasco sauce

Maple syrup

Stir the flour, baking powder, cinnamon and a pinch of salt in a large bowl. In a jug, whisk the egg yolks, melted butter and yogurt. Make a well in the centre of the dry ingredients, then pour in the egg mixture and whisk briefly to combine.

In a separate bowl, whisk the egg whites to soft peaks. Using a large metal spoon or spatula, fold the whites into the pancake batter, then mix in the ricotta and vanilla.

Melt a small knob of butter in a frying pan, add 2-3 dessertspoonfuls of batter per pancake and fry, in batches, for 3-4 minutes on each side. Transfer the cooked pancakes to a plate, cover with foil and keep warm, then continue with the remaining batter (see Make Ahead).

For the spiced pear and bacon butter, heat 25g of the butter in a separate frying pan and fry the pear wedges until just golden. Remove from the pan and keep warm with the pancakes. Add the bacon and star anise to the pan, increase the heat and fry until the bacon is crisp. Add a little extra butter, if needed, then stir in the cinnamon. Add Tabasco to taste.

Stack the warm pancakes on 2 plates, add the bacon and pears, then pour over the spiced butter from the pan and drizzle with maple syrup, if you like.

You'll get out on the right side of bed if you know that you're having these pancakes for breakfast or brunch.

What do you like to put in your pancakes?

I altered the recipe based on the comments, I used the multigrain setting, I used low pressure but I added some vanilla and cinnamon because of those complaining of taste. It was still a no go. After nearly an hour of not coming to pressure I pulled it out and had a doughy top and burnt on bottom. This recipe might work for some people, but it wasn't a winner for me.

So I got the burn warning three times, ended up cooking it with no pressure at 225°  Because it had already somewhat cooked. My husband loved the crispy burnt bottom!   I will try it again.

Followed the instructions to a tee. Poured batter into the instant pot and set the time. The instant pot didn't even come up to pressure before I got a burn warning. Now, I'm scrapping half cooked pancake batter out of my instant pot and scrubbing burnt mixture off the bottom. If I could give this a zero, I would.

It did not come to pressure and was undercooked on the top. I added 10 min at high pressure, it was done on the bottom but not on the top. The recipe itself could use some butter for flavor.

Followed this recipe but had burnt bottom, uncooked top and middle pancake

Was pretty disappointed... I was excited by the idea of a giant pancake and with the ease of my Instant Pot, but this was completely burned on the bottom and not done at all on top. I ended up having to scrape the remnants out and made a bread pudding out of them, but it felt like a waste of materials and time. (I also followed all the recommendations in the reviews section as well)

Instant burn notice. I want my time and ingredients back.

Also burned, never got it to work on a 3qt Ultra Mini.

I have a 6qt lux and it never came to pressure.  It cooked the pancake and it tasted fine. It was browned on the bottom and cake like on the top. My 13 year old son loved it.

These corn pancakes are fun, delicious, and filling. The unique cornmeal texture is perfectly paired with the decadent bourbon-agave maple syrup.

Corn Pancakes with Bourbon Agave Maple Syrup

whole wheat flour

cornmeal

tsp baking powder

water (+ 2 tbsp)

tbsp oil

maple syrup (+ 1 tbsp)

agave syrup (+ 1 tbsp)

½ tbsp bourbon

pine nuts

Combine all the ingredients for the pancakes. Let this sit for about 10 minutes before cooking. (Do not skip letting the batter rest!)

Lightly oil a pan and bring it to just above a medium heat. Pour one quarter of the batter onto the pan. The batter will be fairly thick, so use a spoon to spread it around into a 4- to 5-inch disk. Sauté for 3 minutes and flip the pancake. Sauté for another 3 minutes and then remove it from the pan. Repeat with the remainder of the batter.

Mix the maple, agave, and bourbon together. Pour this over the pancakes. Top with pine nuts.

Fluffy, buttery, and delicious, these are the most perfect Buttermilk Pancakes.

Buttermilk Pancakes

eggs, (room temperature)

butter, (melted)

vanilla extract

all-purpose flour, (OR whole wheat pastry flour)

baking soda

vegetable oil,

In your mixer's bowl beat eggs on medium speed until frothy.

Add buttermilk, melted butter and vanilla; continue to beat until just blended. Set aside.

In a separate bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt; whisk until thoroughly incorporated.

Add the flour mixture to the buttermilk mixture and, using a wooden spoon or a rubber spatula, mix just enough to combine; batter should be creamy, but lumpy. DO NOT OVERMIX.

Allow the batter to rest for 5 minutes.

Heat a heavy-bottomed skillet or griddle over high heat.

Lightly grease the skillet with vegetable oil or nonstick cooking spray.

Lower the heat to medium-high and pour about 1/4 cup of batter into the skillet for each pancake - make sure there is enough space between the pancakes because they will expand during cooking.

Cook pancakes for about 2 minutes, or until batter is set and bubbles cover the top while the bottom is golden brown. If the pancakes are cooking too fast on the outside but still doughy on the inside, lower the heat to medium.

Flip the pancakes and continue to cook for 1 minute or until golden brown on the bottom.

Repeat with remaining batter, adding more oil to pan as necessary.

Serve immediately.
