One of the easiest candy recipes ever! No candy thermometer, just a few basic ingredients and a slow cooker needed! My version of these peanut clusters or &quot;crockpot candy&quot; uses chocolate, nuts, and marshmallows!

Rocky Road Peanut Clusters (Crockpot Candy)

lb lightly salted dry roasted peanuts (about 4 cups (450 grams))

vanilla almond bark (broken into pieces (910 grams))

oz semisweet chocolate chips (340 grams)

chocolate

oz mini marshmallows (about 4-5 cups (280 grams))

Sprinkles (optional)

Layer peanuts evenly into the bottom of your crockpot. Add almond bark, chocolate chips, and dark chocolate bar on top.

Cover with lid and cook on low heat for one hour.

Remove lid and stir well. If all of the chocolate isn't completely melted, continue to cook uncovered on low heat, stirring occasionally, for another 15-30 minutes (or as long as is needed until chocolate is melted).

Turn off heat and allow to cool for 5 minutes. Add mini marshmallows and stir briefly, just until marshmallows are coated in chocolate and combined (if you stir too much you will melt your marshmallows, you want them to pretty much maintain their shape).

Immediately use a 1 1/2 Tablespoon sized cookie scoop (or two large spoons) and scoop candy by heaping 1 1/2 Tablespoon onto a wax paper lined cookie sheet (you'll need several, this makes a lot of candy).

Top with sprinkles, if desired, then allow candy to set before enjoying (about 30-60 minutes).

Store candy in an airtight container at room temperature.

How to Make Crockpot Candy

You only need 2 ingredients to make these chocolate covered peanut clusters!  My peanut to chocolate ratio is the only key to make this delicious and easy recipe.

Chocolate Peanut Clusters

(1 and 1/3 cup) peanuts, (roasted*)

(8.8 oz) semi-sweet chocolate**, (roughly chopped)

Line baking sheet with parchment paper and set aside.

Melt the chocolate over bain marie:  Place the chopped chocolate into a heatproof bowl that sits over a pan of simmering water, stir often.

Remove the melted chocolate from the heat and add the peanuts, stir with a spoon until all the peanuts are covered with chocolate.

Using a small cookie scoop or teaspoon/s or a tablespoon(depending on how big you want the clusters), place the mixture onto the parchment paper.  Let them set in the fridge for almost 45 minutes.

Peanut clusters don&#39;t get simpler than this easy Christmas Crockpot Candy recipe where you just dump everything in the slow cooker and let it do its magic! You&#39;ll end up with perfectly smooth, creamy chocolate that is loaded with roasted peanuts in every bite!

Christmas Peanut Clusters Crockpot Candy

peanuts

(12-ounce) bag semisweet chocolate chips ((about 2 cups))

peanut butter chips

almond bark ((two 24-ounce packages))

Add the peanuts to the bottom of a large slow cooker. Sprinkle the chocolate chips, chopped German chocolate baking bar, and peanut butter chips on top. Break up the almond break and add that on top of everything, then cover with the lid.

Cook on LOW heat for 2 hours without stirring.

Remove the lid and stir well until everything is smooth.

Drop by rounded spoonfuls onto baking sheets lined with parchment paper. Decorate with sprinkles, if using, before the chocolate has a chance to harden. Let cool until completely set up and firm before storing.

Peanut clusters are a no-bake dessert that is perfect for holiday cookie trays.

Place the lid on a slow cooker. Cook on LOW for about 1.5 hours. This timing will depend on your slow cooker. STIR OFTEN. This will burn if left too long since it&#039;s real chocolate.

Turn off the slow cooker after the chocolate has completely melted. Remove the insert out of the base onto pot holders.

Line 3 baking sheets with parchment or wax paper. Scoop the mixture onto cookie sheets on the lined baking sheets. I use a medium-sized cookie scoop, though you can use 2 tablespoons, use one to scoop and one to scrape the mixture onto the pans. Flatten the mixture into a flat cookie shape.

Add sprinkles if desired.

Place the sheet pans of clusters in the fridge to set up. This takes about 3 hours.

lb White Chocolate Almond Bark

oz Dry Roasted Peanuts or Salted Peanuts

Easter Holiday M&M's Plain (10 oz bag)

Holiday Easter Sprinkles

Add 2 Cups water to Instant Pot / Pressure cooker

Set to Saute and wait until it reads &quot;Hot&quot;

Place a large bowl on top of Pressure Cook to act as a Double BoilerRough Chop Almond Bark and add to glass bowl

As bowl gets hot, almond bark will begin to melt. Carefully stir until smooth

Add Peanuts and StirAdd 1/2 bag of M&amp;M to Peanut Mixture and StirUsing a Medium Cookie Scoop, scoop onto parchment paper
