Marinated Fried Chicken

env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix, divided

Place chicken in shallow dish. Sprinkle with hot sauce and 1 Tbsp. of the dressing mix. Refrigerate 2 hours.

Combine flour and remaining dressing mix in medium bowl. Add chicken, 1 piece at a time; turn to evenly coat both sides of each chicken piece with flour mixture.

Heat oil in large deep skillet on medium-high heat. Add chicken; cook 5 min. on each side or until evenly browned on both sides. Cover; cook on medium heat 30 min. or until chicken is done (165°F), turning occasionally. Drain on paper towels.

HEINZ Apple Cider Vinegar

Mix VELVEETA, chicken and pepper sauce in large microwaveable bowl. Microwave on HIGH 5 min. or until VELVEETA is completely melted, stirring after 3 min.

Caribbean Pepper Sauce

or more peppers (Habanero, scotch bonnet pepper)

onion

fruit

garlic

¼ teaspoon cumin spice

vinegar (I used mixture of lime and vinegar)

mustard

brown sugar (optional)

Salt and white pepper

Herbs (parsley, cilantro, basil, thyme optional)

Blend scotch bonnet pepper, garlic, fruit and onions in a food processor or blender. Add vinegar to facilitate blending. Then mix in cumin, mustard, white pepper, and brown sugar. Adjust for salt and seasoning. Refrigerate and use when ready.

Method 1

Add about a table of preferred cooking oil to a medium saucepan followed scotch bonnet pepper, garlic, and onions. Sauté for about 1-2 minutes. Let it cool, place in a blender or food processor together with other ingredients and blend to desired consistency.

You may return to sauce pan, add about more oil as needed bring to a boil and simmer for about 15 minutes or more

Adjust for seasoning and salt. Refrigerate and use when ready.

Method 2

Hot sauce is a must have in our home and most Caribbean homes. Even better is home made hot sauce, we either have our own home made hot sauce or hot sauce from another family member because no two hot sauce is alike. Atleast I have never tasted two hot sauce that taste the same. 

This is my mom’s secret recipe that we have devoured over the years. It goes on everything and anything. It’s a feel good, burn your mouth, make you teary eyed good.

Mummy's Hot Sauce

½ lb red hot peppers (habanero, scotch bonnet, cherry pepper, wiri wiri pepper)

carrot (small)

tbs yellow mustard

culantro (bandhania)

vinegar (or enough to cover)

Chop pepper and carrot into chunks large enough for the blender.

Add all the ingredients to the blender and pulse until smooth. Add more salt if required.

This Habanero Hot Sauce Recipe has heat with a touch of sweetness. Hot has never tasted so good. Easy to make and great to give as a gift to all of your hot sauce lovers. 

Light My Fire Flaming Habanero Hot Sauce Recipe

tsp liquid smoke

white vinegar

tbsp black pepper

tbsp cumin

tsp coriander

tsp ground ginger

tsp allspice

Be sure to use rubber/latex gloves when handling habanero peppers. The seeds in the peppers contain a lot of the heat. You can use less peppers and seed all of the habaneros for a milder sauce.

Place the prepared peppers in a blender or food processor. Add the peaches, molasses, brown sugar, mustard, garlic, liquid smoke, vinegar and spices. Process until the mixture is liquid and smooth.

Pour the habanero sauce into a pan and over medium-high heat bring to a boil. Once it boils, lower the temperature so that the sauce simmers for 10 minutes.

Let cool and pour into clean jars. Refrigerate overnight before using. Store in refrigerator.

Classic pepper sauce is great for serving with steak and vegetables.

African pepper sauce

-10 Habanero peppers

tomatoes

parsley

ginger root

tsp bouillon powder

salt

Olive oil

Place the peppers, tomatoes, onion, parsley, ginger, and garlic in a blender. Blend all the ingredients till smooth.

Add the oil, blended mixture, salt, and bouillon powder in a large saucepan. Mix well and cover.

Cook the sauce for about 20 to 25 minutes, stirring occasionally. Adjust the seasoning to your taste.

Allow the mixture to cool down entirely and fill in your airtight glass containers.

Seal and store in the fridge. It will last about two weeks in the refrigerator.
