Spicy Tuna Poke Bowls

tuna

scallions

soy sauce or gluten-free tamari

sesame oil

mayonnaise

cooked short grain brown rice or sushi white rice

cucumbers ((from 2 Persian) peeled and diced 1/2-inch cubes)

Hass avocado ((3 ounces) sliced)

scallions (sliced for garnish)

In a small bowl combine the mayonnaise and sriracha, thin with a little water to drizzle.

In a medium bowl, combine tuna with scallions, soy sauce, sesame oil and sriracha. Gently toss to combine and set aside while you prepare the bowls.

In 2 bowls, layer 1/2 the rice, 1/2 the tuna, avocado, cucumber and scallions.

Drizzle with spicy mayo and sesame seeds and serve with extra soy sauce on the side, if desired.

Spicy Salmon Poke Bowls

salmon

soy sauce (low sodium, or tamari)

rice wine vinegar (or apple cider vinegar)

sriracha (or chili paste)

cucumbers (thinly sliced)

rice wine vinegar (Kikkoman)

water

honey

salt

red chili flakes (dried)

plain greek yogurt (or light mayonnaise)

In a medium-sized bowl combine diced salmon, soy sauce, vinegar, sriracha, and sesame oil. Cover and refrigerate.

Combine vinegar, water, honey, salt and chili flakes in a medium-sized saucepan and bring to a boil over high heat.

Once boiling turn off the heat, add cucumber slices and stir.

Let rest 10 minutes, then transfer cucumber to a container, cover and refrigerate until ready to use.

In a small bowl whisk together 2 tablespoons sriracha and 2 tablespoons yogurt or mayonnaise.

To serve, add any additional desired ingredients to the bowl (like rice or salad) for the base. Top with ½ cup salmon poke, pickled cucumbers, and other toppings. Drizzle with sriracha sauce.

Here's how to make a poke bowl! Try this easy healthy dinner recipe with rice, ahi tuna marinated in a flavorful sauce, and lots of veggie topping ideas.

Best Homemade Poke Bowl Recipe

ahi tuna, sushi

sweet yellow onion

green onions, thinly sliced

soy sauce

sesame oil (not toasted)

garlic clove, grated

ginger, grated

dry short grain white rice or brown rice

red cabbage

watermelon radish radishes

English cucumber

edamame (thawed)

Rice vinegar and kosher salt,

For the garnish: Sesame seeds, microgreens or sprouts

Mayo

Make the rice: 

Make the rice on the stovetop or in an Instant Pot. When it&#8217;s done, give it a few shakes of rice vinegar and stir in salt to taste. (Or, make the rice in advance and reheat it on the stovetop with a splash of water.)

For the poke

Slice the tuna into 1-inch cubes. Mince the onion. Thinly slice the green onions. Mix them in a bowl with the soy sauce, sesame oil, garlic, ginger, kosher salt and Sriracha. 

Serve immediately, but for most authentic flavor marinate in refrigerator for 15 minutes to 1 hour. Taste and add a sprinkle of salt before serving.* (Get this in the fridge while the rice boils and you prep the veggies, and you can eat when it&#8217;s all done.)

Prepare the vegetables

Thinly slice the red cabbage. Place it in a small bowl and add a few shakes of rice vinegar and a few pinches salt. Thinly slice the cucumber and radishes, and salt them with a few pinches of salt. 

Assemble the poke bowls

Place the rice in the bowl and top with the poke and vegetables. Garnish with sesame seeds and greens. 

Recipe video above. The Dressing is what makes or breaks a Poke Bowl. This Ginger-Sesame one MAKES it!!! Mirin is the secret ingredient - it adds complexity and flavour that&#x27;s missing from usual Poke Bowl Dressings. It looks like a long list of ingredients and there are quite a few bits and pieces, but it&#x27;s actually a very leisurely recipe to make. (PS Dicing fish is great flavour carrier technique) GREAT HOT WEATHER FOOD!

Tuna Poke Bowl

(400 grams) sushi rice (, rinsed (Note 1))

(625 ml) water

(60 ml) rice vinegar ((Note 2))

tsp sugar (, white)

tsp salt

tsp dark soy ((Note 3))

2.5 tbsp toasted sesame oil ((Note 4))

mirin ((Note 5))

tbsp rice vinegar ((Note 2))

2.5 tsp chilli paste

1.5 tsp grated ginger (, fresh)

carrot (, finely julienned)

cucumber (, deseeded and finely diced (Note 7))

avocado

red radish (, finely sliced)

green onion (, finely sliced on the diagonal)

Black sesame seeds

Place water and rice in a large saucepan over medium high heat, no lid.

As soon as it comes to a boil (see video), lower heat to medium low, place lid on and leave for 18 - 20 minutes or until water is completely absorbed). DO NOT stir, DO NOT remove lid!

Remove from stove with lid still on and leave undisturbed for 15 minutes.

Sushi Rice:

Mix Sushi Seasoning ingredients until sugar dissolves.

Spread rice out into large pan (23 x 33cm / 9 x 13&quot;), drizzle half Seasoning all over.

Using a rice paddle OR rubber spatula, cut through the rice and gently fold the rice over (see video!) to mix the Seasoning through.

After 1 minute of mixing, drizzle remaining Seasoning then cut/fold for 1 minute. Will look wet but will absorb in next step.

Leave rice to cool to warm or room temp (if you can stick it in front of a fan, that&#x27;s even better!) - about 20 minutes.

Sushi Rice Seasoning:

Dressing: Mix ingredients in a bowl.

Divide rice between bowls. Top with radish, carrot, edamame and avocado.

Place tuna in Dressing and toss (no need to marinate), then immediately transfer onto rice.

Sprinkle cucumber over the top (mainly on tuna), then green onion and sesame seeds.

Drizzle over remaining Dressing then serve!

Poke Bowls - made with your choice of ahi tuna or TOFU! Served over brown rice, soba or kelp noodles, with avocado, cucumber, radish and Citrus Ponzu Sauce! Vegan and Grain-free Adaptable!

How to Make a Poke Bowl! (Vegan Adaptable!)

brown rice

soba noodles

kelp noodles salad

cucumber or zucchini noodles

baby spinach greens

Shredded cabbage and carrots

ahi tuna

scallions, sliced thinly at a diagonal

cilantro

garlic clove, finely minced garlic

ginger paste

hijiki seaweed (optional)

garlic chili paste, or chili flakes.

rice wine vinegar

mirin

orange juice (half an orange)

lime juice

If cooking rice or noodles,start and cook according to directions on the stove.

Cut fish (or tofu- blotting extra well first) into ½- ¾ inch cubes. Place in a bowl. Add scallions, garlic,  ginger and sesame seeds.

Mix sesame oil, soy sauce and honey in a small bowl, then very gently mix with ahi to coat evenly. (If using tofu, you may need to add more soy and sesame oil -in equal portions- because tofu tends to soak the liquid up like a sponge.)

Make the quick ponzu sauce, combining ingredients in a small bowl.

Assemble bowls &#8211; Divide rice (or other base) among two bowls. Pile poke salad high in the center, and surround with your additional toppings (avocado, cucumber, radish, sprouts, etc)

Spoon the fresh ponzu sauce over the veggies and sprinkle with sesame seeds and chili threads (or flakes).
